Mealtimes can be a challenge, from ensuring we’re getting all the nutritious goodness from foods to making a dish suitable for the whole family. It means that most of us have to get creative in the kitchen with ingredients and recipes.
One of the foods we often use in cooking are mushrooms, as high in antioxidants and packed with various vitamins and minerals*.

The UK and Ireland Mushroom Producers want to find out your favourite recipes that include mushrooms, so other families can be inspired and get their much needed vit-hit.

What are your favourite family recipes that include mushrooms as the main or one of the ingredients?

Mushroom Tonkotsu Ramen Soup

Sliced Mushrooms - Oyster, Chestnut, small Portabello or classic small button mushrooms - a rough handful
Dried or fresh Tonkotsu Ramen (instant ramen also works or dried fine noodles)
1 fresh egg - must be as fresh as possible!
Tablespoon (or more if desired) of grated cheese (mature cheddar or other flavoursome type that melts well)
Half a teaspoon of curry powder
Half a teaspoon of Chinese five spice
Half a teaspoon of turmeric
Half a teaspoon of chilli powder or fresh chopped chillies
Half a teaspoon of crushed garlic
1 Teaspoon of butter
Finely sliced spring onions
Small handful of sliced cabbage or spring greens (optional)
Splash or two of dark soy sauce

Put mushrooms on to boil in small-medium saucepan with around 250-300ml water. After a few seconds, add noodles.
Add spices & garlic. Once noodles have become soft enough to stir, add 1 egg into the noodles (do not stir!) then gently cover the egg with a few noodles. Immediately add the cabbage ensuring it's all coated with the hot water. Add butter.
Into a pasta bowl or large serving bowl, sprinkle the grated cheese.
Splash the soy sauce into the pan of mushrooms & noodles.
Gently pour contents of pan into bowl.
Sprinkle the spring onions on top

If timed right, the egg will be perfectly poached and when bursted, runs all over the lovely mushrooms & noodles!
The cheese in the bowl & the added butter sounds a bit odd, but trust me! Along with the juices from the mushrooms, it 'emulsifies' the broth and makes it immensely creamy!! You don't actually end up with any cheesy noodles.

This is my absolute favourite lunch! Great on a rainy day!

I also adore mushrooms in any kind of ragu, garlic mushrooms, mushroom korma and mushroom Pakoras!

  • Do you and your family have a favourite type of mushrooms and where do you usually find them?
Oyster Mushrooms! Or Portabello. We get them from the local Greengrocers. I then keep some out fresh to grab and then chop and slice the rest into Tupperware and freeze for adding to recipes.

My daughter LOVES Mushrooms. She calls them Toadstools! She will have them raw or cooked in a meal or simply sautéed on the side of pretty much anything!
  • What makes you include mushrooms in your family’s diet?
For me, it's the taste, the lovely texture, the amazing, meaty and warming flavour and the added nutritional value. My daughter loves the texture. She has Autism and texture for her is everything. She loves them!

Prawn, peppers and mushroom jalfrezi curry.

Tend to stick mushroom in to minced lamb when making things like Bolognese or Shepards pie to bold up the meatiness.

Mushroom and chicken crepes!

I also have dried mushrooms as a pantry staple, to add to soups, stews, or just to make a quick sauce with to put on potatoes.

It's got to be mushroom soup! Mushrooms are a staple for us as my daughter is on the ketogenic diet for epilepsy. It is a very strict diet and is low carb. Mushrooms are super low in carbs and so are pretty much the only 'free' food she can have. She eats them raw as a a snack!

I love mushrooms, as do my husband and eldest daughter; my youngest will eat them if they're part of a sauce, but doesn't really like them on their own as she doesn't enjoy the texture.

What are your favourite family recipes that include mushrooms as the main or one of the ingredients?

We have several, but our top two favourites are:

● mushrooms on toasted sourdough.

I don't really follow an exact recipe but I saute sliced mushrooms, diced garlic, paprika, parsley and diced onions in butter until golden brown and then remove from the heat and stir through some creme fraiche, or just butter and a little lemon juice. Served over toasted, buttered sourdough bread (as in the photo from last week's lunch).

●Stuffed mushrooms:

Large portobello or field mushrooms stuffed with cheese, bacon, herbs/spices and breadcrumbs then baked in the oven and served with a simple salad. I vary the filling depending in what we've got in, which makes it very versatile.

Mushroom strogonoff would come a close 3rd.

Do you and your family have a favourite type of mushrooms and where do you usually find them?

We love pretty much all mushrooms, but chestnut mushrooms, field mushrooms and the portobello ones are probably our favourites as they're certainly the ones we eat the most.

I've grown them often in the past using a kit, but I generally tend to buy them from the supermarket.

Do your children love mushrooms, or do you have to hide them in their meals, so they eat them?

My eldest has always loved mushrooms and eats them most days, often just fried up with some garlic and served alongside an egg, but my youngest has a love/hate relationship with them.

She will eat them within a meal, eg, spaghetti bolognese, but she's not keen on the texture so wouldn't eat just mushrooms on toast or just mushroom strogonoff. She loves chicken and mushroom pie though.

I've always put them into lots of meals though and just used to chop them up smaller when the children were younger.

What makes you include mushrooms in your family’s diet - taste, nutrients, or something else?

Mainly, the lovely meaty taste, but they're just so versatile, quick to cook with and great value for money as well as being a great source of B vitamins and low in calories and carbs. What's not to like?

We love garlic mushrooms, or creamy mushrooms as a side dish with almost everything from chicken, steak and a spicy rice

They were dubious at first re the texture - but the taste won over

I love button mushrooms with a cooked breakfast which is rare for me, but I do pop a punnet of button mushrooms in my trolly most weeks and make a mushroom welch rarebit mushrooms fried, add mozzarella and cheddar, add some mustard, and put between some toast, add a poached egg on top - it's the best breakfast ever

My favourite is mushroom risotto made by my DP. My ds5 loves mushrooms so no having to hide them which is good as they're one of my favourites.

By taking mushrooms out of the box they come in and setting them on a sunny window sill they'll absorb vitamin D. They're the only veg that does this Grin

i used to hate mushrooms when i was little but now..ooo they are good.
great in a veggie mix lsagne.
foil wrapped with butter and garlic on the bbq or oven
roasted with veggies

or to be honest i could quite happily put them in a pan for a few minut3s and have on their very own.yum

I like Spaghetti Carbonara with mushrooms and grilled streaky bacon bits with parmesan on top.
I finely chop an onion, fry gently in oil until brown, add a stick of finely chopped celery and half a punnet of mushrooms, fry a few more minutes then 150ml cream and lots of pepper. Whilst I'm doing that I grill the bacon and cook the spaghetti.
I might add a chopped up carrot, half a courgette and half a cup of peas if I'm trying to add extra nutrients and vitamins. I sometimes do this as a pasta bake and add a parmesan bread crumb topping.

I do button mushrooms in a light dressing and serve them raw if they are very fresh. I do large mushrooms with risotto or in soups as they have a much stronger flavour.

I also do button mushrooms in a garlic batter and cook in my air fryer.

I've found it's the texture some children don't like. They seem to prefer finely chopped mushrooms to bigger sliced mushrooms.

Chinese mushroom and tofu stir fry. Even my mushroom-hating husband loves it.

I love straw mushrooms from the Asian supermarket.

Hide! But that's the same for any veg Confused

Peppered Mushroom and Stilton Pies!

Ingredients:
1 onion, sliced
2 carrots, finely chopped
500g shiitake or chestnut mushrooms
1 tbsp tomato puree
1 tbsp soy sauce
1 tbsp green peppercorns
250ml vegetable stock
200g Stilton, crumbled
Shortcrust pastry

Method:

  1. Fry the mushrooms, onion and carrot over a medium heat for 3-4 mins
  2. Add the tomato puree then continue to cook for a further 4-5 mins
  3. Add the soy sauce, peppercorns and stock and bring to the boil and simmer till reduced by half
  4. Divide between 3 ramekins and sprinkle the Stilton over
  5. Brush the edges of each ramekin with egg, lay the pastry over and trim, brush with egg
  6. Bake on 200°c for 18-20 mins

Mushroom pasta - fried mushrooms in butter with lots of garlic, throw in half a glass of white wine, a veg stock cube, let that all reduce down, throw in some cream and serve with pasta. Quick and yummy.

I totally love mushrooms!

The children don't but they eat them without knowing every time we have Bolognese. I chop them up finely to bulk up and blend in with the mince

I like a simple mushroom and pasta dish with cheese, or mushrooms with other roasted veg, or mushrooms and baked beans with a jacket potato or chips.

Mushrooms on sourdough - Sunday morning brunch

Sauté mushrooms in a James Martin amount of Jersey salted butter

Finely chop half a red onion or a shallot or two, cook gently in more butter until softened, add however many minced cloves of garlic you like, again cook gently so it doesn’t catch

Combine mushrooms and onions/garlic, add a lovely generous slosh of decent white wine and cook off

Add ladle or two of good, homemade chicken stock, let bubble a bit

Add carton of double cream, lower heat and cook very gently until thickened to preferred consistency

Serve on big slabs of toasted sourdough with a good grind of black pepper and a bit of fresh parsley

Crispy pancetta on top optional extra

Love a chicken and mushroom risotto!
We are massively lazy and tend to just buy sliced mushrooms.... anything for an easy life!
I love mushrooms but my children think they are the work of the devil.... we are working on it haha!

I love mushrooms in any dish, and even like to peel them and eat them raw.
We tend to have mushrooms as a side dish as the children won't eat them in any form or flavour.
I like to quickly fry them in soy sauce, sugar, ginger and garlic or in a creamy pepper sauce.

I'm a lifelong vegetarian and when I got my first home on my own, I invited the young couple who lived next door round for dinner.

I wasn't a very experienced cook then and was worried about cooking meat or fish for others, but luckily they were also vegetarian so I was able to do my 'special' - mushroom lasagne.

I used to make it with green - lasagne verde - sheets and loads and loads of mushrooms in a herby cheese sauce. I'd buy a whole basketful. The complete dish was just sheets of lasagne and layers of sliced mushrooms in sauce and extra cheese on top, baked in the oven and that was it.

I served it with home made garlic bread and a bowl of crispy salad and they absolutely loved it. I can remember one of them saying in wonderment ''look at all these mushrooms" as if they were some expensive luxury ingredient, but the truth was I used to be able to buy a whole basket from the village greengrocer for a couple of quid back then.

It went down a treat, and even though I'm a much better cook nowadays, my simple mushroom lasagne remains a firm favourite.

A. When they were younger Yes, but now not a problem - but still prefer raw mushrooms though.

A. Substitute for meat - but depends on the recipe..

CHINESE MUSHROOM PANCAKES & CRISPY KALE SEAWEED

2 spring onions
1/2 cucumber
6 white wraps/pancakes
Chinese 5 spice powder
1 teaspoon smoked paprika
120g shredded kale
Soy Sauce
Plum Sauce
Honey
Hoisin Sauce
400g chestnut/mixed mushrooms
Salt
Brown Sugar
Spray Oil

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Chop mushrooms into small pieces and add to a baking tray, spread them out as much as possible. Spray with a very very coating of oil and a little dusting of Chinese 5 spice powder.

Put the tray in the oven for an initial 10-15 min, until starting to brown and crisp

Meanwhile, add the soy sauce to a bowl with the honey and smoked paprika and stir it all together- this is the mushroom dressing

Add the shredded kale to a baking tray with a generous pinch of salt, 1 tsp [2 tsp] sugar and spray with vegetable oil

Give it all a good mix up and add to the oven for 8-10 min until crispy - this is the crispy 'seaweed'. Keep an eye on this as it can "turn" very very quickly and may need longer or shorter cooking times

Once the mushrooms are starting to brown, remove the tray from the oven and pour over the dressing

Mix it all together and return the tray to the oven for 8+ min until caramelised

While the mushrooms are caramelising, slice the cucumber in half lengthways - remove the seeds and slice into matchsticks

Trim, then slice the spring onions lengthways into batons

Add the pancakes/wraps to a tray and put the tray in the oven for 2-3 min or until warmed through.

Add the hoisin sauce to a bowl along with a good dollop of the plum sauce and mix it all together.

Once the mushrooms have caramelised, divide the mixture evenly between the warmed pancakes. Spoon over some plum sauce, cucumber matchsticks, spring onion batons and garnish with the crispy 'seaweed'.

Cook two punnets of chesnut mushrooms in oil until golden, add one large diced onion and two medium chopped carrots and cook down, add 3 tbsp flour and mix.

Add in 400 ml of stock (veg), garlic and chopped potatoes (skin on). Reduce 15 mins.

Add one cup red wine, 2 tbsp tomato paste and 1-2 tbsp marmite. Plus fresh rosemary and thyme, cook 15 minutes.

Voila vegan 'beef' stew. Serve with roasted Cavolo Nero.

Split garlic bread into slices and layer the bottom of a dish and cook in oven. Meanwhile slice brown cap mushrooms and sauté with butter, seasoning and thyme. Pour over garlic bread including juices. Sprinkle with cheese and bake / grill for a few minutes until cheese has melted. Yummy!

Mushrooms sauteed in good olive oil, with garlic and fresh sage, served with spaghetti or linguine and another glug of oil and some parmesan - really quick easy mid week meal, and absolutely delicious!

I absolutely love mushrooms on toast nice and simple and very yummy!! May have it for breakfast today!!
