Mealtimes can be a challenge, from ensuring we’re getting all the nutritious goodness from foods to making a dish suitable for the whole family. It means that most of us have to get creative in the kitchen with ingredients and recipes.
One of the foods we often use in cooking are mushrooms, as high in antioxidants and packed with various vitamins and minerals*.

The UK and Ireland Mushroom Producers want to find out your favourite recipes that include mushrooms, so other families can be inspired and get their much needed vit-hit.

Here’s what they had to say: “Following the latest NHS advice** around vitamin D, Nutritionist and best-selling cookery writer, Madeleine Shaw, unveils that you can achieve your daily dose by simply eating eight medium-sized vitamin D enriched mushrooms.
Mushrooms are an affordable, easily accessible and versatile ingredient to use in cooking across breakfast, lunch and dinner. Mushroom stroganoff - I LOVE IT. I love all mushroom dishes really, but this is my favourite. Made with plenty of smoked paprika and served with pasta. Possibly not utterly authentic.

I've read that thing about mushrooms sitting in sunlight getting loads more vitamin D, but I've not done it.

It's a mushroom rice dish with raisins and pine nuts. Really satisfying and tasty!

I am not a great mushroom fan. Ate too many magic ones with too much mud at a young age! But I do love a big flat one baked in foil with a dash of olive oil and a lot of garlic.

I once had the most amazing garlic mushrooms at a v traditional italian in Glasgow when I was a kid. Every now and then I try and recreate and fail miserably.
I make pretty good stuffed mushrooms. I whizz up breadcrumbs olive oil garlic and parmesan and bake in the oven. Also love some cooked mushrooms with a full fry up. I normally just chop up mushrooms scatter a few knobs of butter and then whack in the oven.

We love creamy garlic button mushrooms and mushroom and spinach lasagne. We eat mainly button mushrooms, or just cheap closed cup ones. My daughters hated them growing up - which was fine - more for me! But as they hit teenage years both decided they liked them and I sadly had to share. We just buy them at Tesco or Morrison’s- wherever we are shopping, get at least one punnet a week.

We love Mushrooms! Well DH and I do and so does DD (5) - my 3 sons tolerate them in something else but are getting more keen.

We're trying to shed the pounds occurred during lockdown and one of our favourites that is so low in calories but is also delicious is a Mushroom 'stroganoff'

Sauté a sliced onion (red or White) & Mushrooms (whatever you have, we get them in the veg box) about 300g In a pan with a tiny bit of oil.

Add in paprika, salt and pepper and some garlic if you wish.

Sauté for around 10 mins until
everything has softened, then add 100ml stock (any is fine)

Simmer for 10 mins again until everything is thick and saucy, then take off the heat and stir though a large spoonful of plain yogurt and fresh parsley.

Serve when rice, on bread, with veggies.

We are lucky that she have quite a lot of green space around here and the local form shops usually sell mixed wild mushrooms so you can go and fill up a basket. Smile

Use mushrooms all the time - great option to add some ‘meatiness’ to veggie/vegan dishes. Usually buy chestnut mushrooms as I think they have more flavour or buy a pack of mixed mushrooms/shiitake mushrooms if I’m doing a particular dish. Favourite recipe has got to be a mushroom ‘bolognese’ dish I had in a restaurant years ago and have tried to recreate ever since - chop the mushrooms really small, bit of onion too, loads of garlic, bit of soy sauce for delicious salty flavour, some herbs (tends to vary each time I do it tbh!), tiny bit of paprika for warmth, stir in some cream or even milk, plenty of pepper, serve with small pasta (macaroni size but can buy fancier shapes if desired!) and drizzle with a decent amount of truffle oil. Yum!

I like mushrooms, however my son and husband say they don't like them. What they don't know is they are in nearly everything, but I just chop them up so small they are unrecognisable as mushrooms. I get them into lasagne, spag bol, sauteed veg side dishes as well as any pasta sauces.

Mushroom risotto!

DH enjoys fried mushrooms on toast too.

The DC are not massive fans but I can chop them up finely and sneak them in pasta sauce without them noticing.

Love mushrooms, always have them in the house! I usually buy the chestnut ones as they seem to stay fresher for longer.

My favourite weekend breakfast is a fake Starbucks cheese and mushroom croissant.

Chop 3 or 4 mushrooms and zap them in the microwave for a minute with a pinch of garlic powder, salt and pepper.

Halve a croissant and warm it in the micro for 10-20 seconds. Pile in the mushrooms, withouth their juice, and slap a slice of cheese on top. Plastic cheese slice works well, or grate some cheddar. Fold over and squish. Eat with plenty of kitchen roll to hand.

What are your favourite family recipes that include mushrooms as the main or one of the ingredients?
Portobellos stuffed with whatever cheese we have on hand and garlic.
Mushroom rice with thyme and parmesan.
Roasted with garlic and roughly smashed, spread onto toast.
Fried and mixed with any herby, creamy dip or salad dressing, and piled onto jacket potatoes.

Do you and your family have a favourite type of mushrooms and where do you usually find them?
Our default is chestnut mushrooms because they're flavourful and easy to find in most supermarkets.

Do your children love mushrooms, or do you have to hide them in their meals, so they eat them?
DS is only 6 months so just started solids but we made a sort of mushroom pate that he liked, so fingers crossed..!

What makes you include mushrooms in your family’s diet - taste, nutrients, or something else?
Taste, flexibility, price, availability... there aren't really any downsides!

I just love mushrooms on toast with advocado. Lightly fry the mushrooms with a little garlic. Then put them on some lightly buttered toast and cover with skinned advocado slices.

My favourite salad is raw mushrooms with an olive oil/balsamic vinegar dressing. Yum yum.

We're a family of 2 vegans, 1 vegetarian and 1 carnivore and we all love mushrooms. They're a brilliant source of vitamins in a vegan diet and low calorie. Some of our favourite ways to eat them are:
Mushroom ramen using mixed mushrooms but mainly shiitake;
Mushroom and asparagus risotto;
Mushrooms sautéed in garlic and vegan cream with pasta;
Baked in the oven with some olive oil, salt and pepper with Sunday breakfast

We use mushrooms a lot and I particularly like to flavour them worth garlic. Deep fried garlic mushrooms are my favourite recipe -although they're not very good for you as a treat they're fine. I make them vegan by not using any egg dip to get the batter to stick. I use ice cold water to make the batter with flour, dried garlic, and dried parsley plus a bit of salt. Dip the mushrooms, roll in panko and fry, then serve with a drizzle of melted flora mixed with minced garlic.

Stuffed mushrooms- flat cap mushrooms, removed the stem, chop up the stem, pop into a bowl with breadcrumbs, red onions chopped finely, crumbled Stilton cheese and sundried tomatoes. Mix together with olive oil, stuff flat capped mushrooms with the mix and pop on a baking tray. Pop in the oven for about 20 minutes.

I love breaded garlic mushrooms. I don't mind button mushrooms on a fry up but I don't like them raw. My son loves raw ones he'll bite into it like it's an apple Shock

I lover mushroom risotto and pasta with a creamy mushroom sauce.

However, nothing beat some nice fresh mushrooms cooked with butter and garlic. Best lunch ever with eggs and toast.

I love mushrooms every way possible!! One of our regulars though is big flat mushrooms with the stalk taken out & chopped up then put back in the cup & topped with Stilton (or Brie & bacon) then oven roasted for about 20mins. Amazing with a bbq or burger!

Only way the children will knowingly eat mushrooms is on pizza, but I also hide them in sauces quite frequently.

I love them for their flavour, and they're a good "filler" to bulk out vegetarian dishes.

Vegan mushroom stroganoff, baked mushroom risotto, sliced mushrooms with garlic and olive oil wrapped in foil, baked and stirred into pasta.

Mushroom carbonara is great.
Sauté down lots of mushrooms, red onion, and garlic with salt, pepper, and Italian herbs. Make a cheese sauce in the same pan with egg, cream, cheese and stir until thick. Mix in cooked pasta.

I know it's not a real carbonara because of the egg and cream but it tastes so good!
We also use fresh pasta, cooks in 4 minutes and we don't get as bloated with it! I would recommend it for all pasta meals.

Pesto mushrooms

White mushrooms, thickly sliced
Butter
Green pesto

All the above, quantities to suit. Put all three in a saucepan and cook gently until the water from the mushrooms has evaporated. Stir occasionally. The sauce is now a rich, thick mixture and some of it has soaked into the mushrooms. For this recipe (wot I invented!) older mushrooms are better than very fresh. The really fresh ones don't cook down and then soak up the juices so well. The big boxes of mushrooms that are cheaper than the regular ones work very well.

For a lunch, supper or just because, spoon out and serve with doorsteps of soft but crusty bread and lots of butter - yes, more butter!

As a dinner party starter, serve the mushrooms in individual ramekins with butter pats and either slightly more daintily sliced crusty bread or freshly baked part-baked rolls.
