Mealtimes can be a challenge, from ensuring we’re getting all the nutritious goodness from foods to making a dish suitable for the whole family. It means that most of us have to get creative in the kitchen with ingredients and recipes.
One of the foods we often use in cooking are mushrooms, as high in antioxidants and packed with various vitamins and minerals*.

The UK and Ireland Mushroom Producers want to find out your favourite recipes that include mushrooms, so other families can be inspired and get their much needed vit-hit.

Here’s what they had to say: “Following the latest NHS advice** around vitamin D, Nutritionist and best-selling cookery writer, Madeleine Shaw, unveils that you can achieve your daily dose by simply eating eight medium-sized vitamin D enriched mushrooms.
Mushrooms are an affordable, easily accessible and versatile ingredient to use in cooking across breakfast, lunch and dinner. Now and in the future, it is important to protect and maintain a healthy immune system, seeking out new ways to achieve that much needed vitamin D hit for you and your family. Despite my user name, they're not a food I will eat in meals. However, I do love them raw. I'll make them for other people and a favourite in my house is a grilled large flat portobello or similar with a little garlic and cheese.

I would happily put mushrooms in everything and always choose them if they're on the menu when we eat out. I don't like the taste of chicken so a halloumi and mushroom wrap is my go-to at Nando's, for example.

I'm the only person in my house who likes them so quite often I only get to have them if I'm cooking for one. Mushrooms with a bit of black garlic or dried seaweed flakes, fried in butter and served with toast, or an omelette, or whipped up into a stroganoff or curry or stirfry or lasagne or taco or anything really. Yum! This thread is making me hungry!

Mushrooms on toast (fried in butter with creme fraiche), and mushroom risotto, especially with 'fancy' dried mushrooms.

Large flat mushrooms covered cheddar with a little fresh garlic and chilli. On the BBQ till the cheddar melts. Literally the best food in the world

Definitely mushroom risotto!
Gently fry an onion in butter and then stir in a clove of garlic and a punnet of chestnut mushrooms (sliced of course). Add a family sized portion of arborio rice. Stir for a moment and then add a glug if white wine. Boil off quickly and then slowly add a pint of stock until all the liquid has dissolved. Finally add 4 tablespoons of grated Parmesan and serve with a rocket salad. Yummy! This is a family favourite of ours Smile

Whilst dh and I love mushrooms, preferring Chestnut mushrooms, baked or sauted with steak, I have to hide them for DD, chopping them finely in stews and casseroles.

Tagliatelle with porcini mushrooms - absolute perfection!!

As a family our favourite mushrooms are chestnut however we are a little split on liking mushrooms at all. 2 adults and 2 kids (1 is a baby!) love them and 3 kids don't.

I use them in alot of meals regardless, just tend to chop them smaller 😉

There’s a really easy garlic mushrooms recipe in one of the Mumsnet cookbooks which is literally just mushrooms and garlic and herb cream cheese. It is beyond easy and is absolutely delicious.

Sprinkle de-stalked mushrooms with lemon zest, chopped red chilli and garlic. Then finely chop whatever herbs need using up and mix with a little grated cheese. Sprinkle over the top and whack them under the grill. Delicious served with sourdough toast! Yum.

Mushrooms and polenta! Make some quick cook polenta and top with mixed mushrooms which have been fried in butter with rosemary and thyme, add some gruyere or tallegio cheese on top and put the whole lot under the grill until the cheese has melted. Grin

We love mushrooms risotto and use chestnut mushrooms along with dried porcini for that delicious flavour punch. My 3
and nearly 1 year old love it and mushrooms in general but my 6 year old doesn’t like them! Our breakfast favourite is fried in butter on toast
with herbs like oregano and thyme.

My four love a good burger (and so do I!) but we do always try to have something healthy and tasty with them, and spices & mushrooms ground in with the mince to make a big juicy burger are just delicious!

  1. Fettucine with mushroom and parsley. Chicken breast with mushroom cream.
  2. Porcini mushroom but I cannot find them Jere on the UK
  3. my baby still has not tasted any mushrooms

Chopped mushrooms, garlic and bacon in an omelette. It’s not very healthy but it tastes amazing.

I usually use button mushrooms but sometimes I get a mixed pack of fancy oriental mushrooms for a change in texture.

The DC aren’t keen on mushrooms but I put them in things like Bolognese sauce and they don’t notice.

I like mushrooms because they absorb flavours so well and give an extra bit of interest to a dish.

To be honest my kids are not keen on mushrooms so I tend not to cook them for the kids as otherwise it goes to waste.
However me and husband love mushrooms! We cook chicken and mushroom risotto, chicken casserole heavy on the mushrooms, spaghetti with bacon, mushrooms and spinach, and I like raw mushrooms in salad also!

My Daughter and I love stuffed mushrooms. It's a great healthy meal, that she can help me make. I peel and chop, and she mixes and stuffs. We're both vegetarian, and having her help me make a healthy meal teaches her about good nutrition, and if she's 'made' them, there is usually less fussing at meal times. They also make a great starter for when I have my Mum (pescatarian), and her partner round (vegetarian).

We love chestnut mushrooms the best we put them on pizza and in pastas but our favourite is to make Chinese chicken and mushroom (I’m half Chinese so learned through my mum and dad)

Fry some garlic in a wok with some chicken and mushrooms until cooked add some soy sauce, oyster sauce, sesame oil and boiling water to make the sauce then thicken with corn flour. This is my 2 year olds favourite dinner

Mushrooms go in most dishes here. We’re vegetarian and they have a great extra texture and flavour.

Best recipes are chill and garlic mushrooms with scrambled eggs on toast, mushroom carbonara with eggs, a little milk/yoghurt/crepe fraiche and Parmesan with pasta, mushrooms stuffed with garlic butter breadcrumbs and chargrilled peppers, and a mushroom and bean spaghetti bolognase!

I love mushrooms and so does my other half, our son is not the biggest fan!
Love a mushroom risotto or mushrooms in most things if I can! Stuffed mushrooms are lovely and a chicken ham and mushroom homemade pie is lovely (my son just picks them out!) Haha
I like trying all new kinds, have recently seen the mixed packs which are fun to try!
