Mealtimes can be a challenge, from ensuring we’re getting all the nutritious goodness from foods to making a dish suitable for the whole family. It means that most of us have to get creative in the kitchen with ingredients and recipes.
One of the foods we often use in cooking are mushrooms, as high in antioxidants and packed with various vitamins and minerals*.

The UK and Ireland Mushroom Producers want to find out your favourite recipes that include mushrooms, so other families can be inspired and get their much needed vit-hit.

Here’s what they had to say: “Following the latest NHS advice** around vitamin D, Nutritionist and best-selling cookery writer, Madeleine Shaw, unveils that you can achieve your daily dose by simply eating eight medium-sized vitamin D enriched mushrooms.
Mushrooms are an affordable, easily accessible and versatile ingredient to use in cooking across breakfast, lunch and dinner. Now and in the future, it is important to protect and maintain a healthy immune system, seeking out new ways to achieve that much needed vitamin D hit for you and your family. However, one in four of us aren’t getting our daily recommended vitamin intake.*

  • Do your children love mushrooms, or do you have to hide them in their meals, so they eat them?

We love raw mushrooms in a salad plus i love mushroom korma with lots of bite left in them!

Chestnut mushrooms
Butter
Olive oil
Cumin seeds (1tsp)
Green chilli (optional)
Salt

Wash and slice mushrooms.
Heat butter and oil, when hot add cumin seeds, fry until popping.

Add mushrooms, don't touch, allow to fry on high heat for 2 mins. Add chilli. Salt to taste. Turn mushrooms and fry for another 2 min. Don't stir them!

Turn off heat. Serve with toast/bread.

It's delicious! Even my 10yo 'not keen on spice' child loves this. And my 9yo 'not keen on mushrooms but loves spice' child gave this a go!

Beef wellington with a mushroom duxelle would be the family favourite, along with spag bol, and risotto but I'd choose simple mushrooms on toast.
  • Do you and your family have a favourite type of mushrooms and where do you usually find them?
Enoki are our favourite but it's rare that we find them in supermarkets. We also have chanterelles that grow nearby and love collecting them ourselves.
  • Do your children love mushrooms, or do you have to hide them in their meals, so they eat them?
They will eat mushrooms in a meal- chopped into bolognese or risotto but would refuse mushrooms on toast or breaded mushrooms etc
  • What makes you include mushrooms in your family’s diet - taste, nutrients, or something else? They impart umami flavour and depth, and are fantastically good for you!

Love mushrooms - I tend to add them to loads of meals. My absolute favourite at the moment is the Bosh creamy carbonara - I marinade portobello mushrooms and they are so yummy.

Also, mushroom risotto, mushrooms on sourdough for breakfast, and a field mushroom basted with gia garlic paste on the bbq is amazing.

i hide mushrooms in omlettes mostly.

chestnut ones are the faves here, they're lovely

Lasagne.
No, to be honest we get ours from the supermarket.

  • I hide them in their food unless their are fried in garlic.
  • Meaty texture in food, and I like the kids to have lots of veg.

I fill a Portobello mushroom with Boursin cheese and then bake for a 10 mins. So yummy and a perfect lunch served with crusty bread.

I love all mushrooms as does DD1. DD2 thinks they are food of the devil.

I read somewhere recently if you put mushrooms in the sun for a few hours before use this boots their Vit D content - I'd love to know if this is true?

Mushrooms on toast, mushrooms with eggs, in omlett, in stirfry, giant garlic mushrooms, filling in ravioli etc.

My fav mushroom meal is mushrooms and broccoli, lightly cooked, and served with a sauce made from roquefort, cream, spring onion & black pepper. Even better is it takes minutes to prepare.

I've never really thought about the nutritional value of a mushroom. Going to follow this post for ideas of getting more into the dc. Ds2 will eat anything but ds1 is an expert in picking out the tiniest bit of mushroom, onion or pepper. Generally we're pretty boring here and stick to adding mushrooms to a burger - Swiss style with cheese. Or with steak and chips!
Seriously?! THIS was the winner?! All the effort some posters went to to post their favourite recipes and you chose the one with the least effort made!? Hmm

Little portobello mushrooms, can usually find them in Morrisons

No, my kids are very fussy so I have to chop them up really small to hide them!

I love the taste & it's extra nutrients!

Simple miso mushrooms on toast! It’s a Doctor’s Kitchen recipe and it’s a brilliantly tasty healthy lunch.

I also love mushroom bolognese - my SIL is vegan so it’s perfect for when she’s round, the finely chopped mushrooms give the bolognese a really ‘meaty’ texture.
