Mealtimes can be a challenge, from ensuring we’re getting all the nutritious goodness from foods to making a dish suitable for the whole family. It means that most of us have to get creative in the kitchen with ingredients and recipes.
One of the foods we often use in cooking are mushrooms, as high in antioxidants and packed with various vitamins and minerals*.

The UK and Ireland Mushroom Producers want to find out your favourite recipes that include mushrooms, so other families can be inspired and get their much needed vit-hit.

Here’s what they had to say: “Following the latest NHS advice** around vitamin D, Nutritionist and best-selling cookery writer, Madeleine Shaw, unveils that you can achieve your daily dose by simply eating eight medium-sized vitamin D enriched mushrooms.

Our favourite mushroom recipes are:
Mushroom bourginon with lentils (children not keen), Diane sauce with steak (not offered to the children unless no brandy!), mushroom red wine sauce:
Fry mushrooms (and leeks if wanted) withna bit of salt and pepper. When soft add a red wine stock pot and boiling water.
Or noodles with spring onions, fried mushrooms and a dash of rice vinegar and soy. Tastes like it's from a restaurant.

Fave mushrooms: whatever looks nice when I'm in the shops!

The children hated mushrooms. I used to too so I didn't push them to eat them. Served the mushroom red wine sauce with chicken and despite chunky mushrooms, the children couldn't get enough of it. I don't tend to hide food for them.

I use mushrooms as an alternative to meat. Because they're high in folic acid and as a change so that we have a varied diet. Also they're a good thing to add texture to a sauce and make it more interesting.

We love mushrooms in this house!

Our most used recipe is mushroom stock from Leiths Vegetable Bible.

We use it for everything; pies, casseroles, risotto, soups, pasta sauces, stir fry sauces, veggie shepherds pie and loads more

I make up a big batch once a month and freeze it

Mushroom salad.......Chestnut mushrooms, sliced and mixed with grated garlic. Mix olive oil, lemon zest, lemon juice, chopped flat leaf parsley through them. Leave to marinade though for a few hours. It's far more delicious than it sounds.

Garlic mushrooms on toasted french stick are just a treat to eat - with grated Parmesan on top !

My children don't really like mushrooms, but me and my OH do, and I am hoping to convert them - it's not the taste -just the texture.

They did try my home made mushroom soup once.

I always have a bag of button mushrooms - but am not confident in cooking the larger ones - so loved reading the recipes the lovely mumsnetters have shared .

large open cap mushrooms filled with

45% wholemeal breadcrumbs
45& grated cheddar
10% chopped black olives (from a jar is fine)
a handful of fresh thyme leaves
pepper
a little olive oil to bind it together

Pack the filling into the mushroom cups and cook under a medium hot grill for 10 mins.

Quick, easy, a perfect starter Smile

Oooh. Mushrooms, my absolute favourite. Can’t go a day without a mushroom fix! Two recipes spring to mind.

Mushroom pate
400g mushrooms can be chestnut, portebellini or mixed, washed and rough chopped
3 cloves garlic crushed and fried in 2tbls oil or butter/marge.
Glass of wine or sherry or brandy
250g blue cheese
2 tbls cornflour
Add chopped mushrooms to oil/garlic mix. Sauté gently. Once cooked through pop in blender and whizz around. Then add wine to cornflour, mix til smooth. Put in pan and gently heat until it starts to thicken. Crumble in blue cheese. Stir until melted then add the mushrooms. STir around and pop into a bowl and let it chill. Slather on toast...

Mushroom and vegetable oat brunch per person
100g mushrooms, wiped clean and quartered
4 sticks celery cleaned and sliced roughly
1 small carrot cleaned and sliced
1 small courgette cleaned and sliced
Chilli powder and garlic powder to taste (or spices of your choice)
Olive oil
Pinch of Salt and pepper
Soy sauce

Pop the oats into an oven proof dish and gently roast for 25-30 mins on 160 centigrade
Meanwhile
Saute the mushrooms and celery in the oil and spices as they soften add the carrot/courgette and a dash of soy sauce
When the oats are nicely toasted after about 20 mins in oven add a drop of oil, the salt and pepper stir well and pop back in the warm oven to finish. Remove and stir into mushroom mix and serve in bowls. Lovely topped with poached egg or avocado or a dollop of mayo.

Mushrooms are just THE best, am definitely in the lover camp. My daughter is yet to share the love, so I chop them up minutely so she can’t detect them in a chicken carbonara made with mushrooms, pancetta onion, garlic, eggs and cream...delish!

I like chopped mushrooms sautéed and then mixed with Philadelphia and black pepper on granary toasted bread. Delicious 😋

Use them for so much, its hard to choose...fajitas, stuffed mushrooms, garlic mushrooms, spag bol!

  • Do your children love mushrooms, or do you have to hide them in their meals, so they eat them?
No hiding them in our house

Not my recipe, a vegetarian Mushroom and Pecan Wellington. Combines mushroom, ricotta, beetroot & pecans plus other things in a puff pastry shell. I cooked it first for christmas but it is so tasty I cook it anytime now. The meat eaters at home also love it.

Local farm shop - I would say I buy mire chestnut mushrooms than any other

  • Do your children love mushrooms, or do you have to hide them in their meals, so they eat them?

One loves them, the other won't eat them at all

The taste, they are really versatile, great substitute for meat and Vitamin D

Mushroom and been chilli. With loads of onions and chipotle paste is delicious served with rice or made into enchiladas. We do ours in the slow cooker - house smells amazing all day!

Not really a ‘recipe’ but like so many PP garlic butter mushrooms are our favourite.
Chestnut mushrooms are what we buy most from our usual supermarket but we do the odd shop in our local Asian supermarket and that is the best place for us to get a bigger variety. Our local farmer sells mushroom kits and next time we are flush enough I’ll be buying one, they are for oyster mushrooms.

My son is into foraging now he’s older and enjoys the field to fork ethos so we occasionally have wild mushrooms (carefully identified & double checked)

I’ve not liked to ‘hide’ any food, if my son or his mates didn’t like something I’ve just used something else and generally DS is up for trying anything, maybe as he knew he wouldn’t be ‘made’ to eat anything if he didn’t like it he was never afraid of trying anything new.

The latest mushrooms he’s bought are enochi, they were included in a mixed pack we bought & he liked them so bought a pack to add to his omelettes (his main snack food)

We eat a lot of mushrooms I put them in my spaghetti bolognese, stews etc, but I love them more on their own with a nice Mixed Grill, I always seem to pick button mushrooms more than any other mushrooms,

Croissants halved with one sliced mushroom and some cheese, stuffed inside and on top then in the oven for a few minutes for the cheese to melt - yummy!
Growing mushroooms is fun for the kids and it's exciting when they suddenly appear.

I eat mushrooms several times a week with egg and avocado on buttered cape seed loaf and spinach and tomato. I just fry them in butter. I love the taste, the nutritional benefits are a bonus. My teenager doesn't really like them but will eat them chopped up in a lentil and mushroom ragu.

Basically mushrooms with anything
Though as an indulgent breakfast fried in butter and garlic and finished off with double cream and a touch of tarragon
My kids like the flavour of mushrooms but not the texture . I blitz in the mini chopper

I like leek & mushroom risotto. I don't make it the same every time, although I usually use about 200g mushrooms & half a large leek per person. Stock, garlic, good rice, butter, & either saffron or white wine & tarragon. Plus some parmesan at the end. But no cream! Just cook it gently, & stir often. I'm not fussy what mushrooms I use - often just plain white, but sometimes chestnut, oyster, mixed forest mushrooms. I've used dried mushrooms before, that was different but really good.

It's lovely as leftovers too, just be careful (as with all rice dishes) to cool it quickly, refrigerate, & use within a day. I set the pan into a sink of cold water as soon as I've dished up, it's usually cool within minutes.

Mushrooms, onion and barley - I could live off that! DD won't eat mushrooms unless they're blitzed into tiny pieces she can't tell are there - she has a thing about the texture. I'm vegetarian so include mushrooms as part of a balanced diet, they're also useful for "padding" out meals, DD aside. Whole button mushrooms in a bourginon are favourites.

Fesenjan: an Iranian pomegranate stew, normally made with chicken but we love it made vegetarian by repacing the chicken with buton mushrooms.

Fresh mushrooms. Nobody likes them black and slimy.

One out of three had mushrooms as his favourite food until he realised that no other kids ate them. The other 2 absolutely will not eat them. Fortunately they discreetly pick them out and put them on my plate so I can eat them.

  • What makes you include mushrooms in your family’s diet - taste, nutrients, or something else?

I love them, so taste primarily, but also to encourage the younger members of the family to tolerate things they don’t like. They seem to have the impression that they can go through life eating only the things they like.
