British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Turkey is a great versatile meat as it carries flavours really well, and what’s more, the breast meat is a really healthy choice as it is high in protein and lower in fat than any other mainstream meat so eating turkey makes perfect sense at family mealtimes and for those watching their weight. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

Love having turkey barm cakes in front of the television on Christmas Day evening. We have the full Christmas Day dinner again with it on Boxing Day and a cold buffet with it in the evening. Oh, and if we are staying at my parents' for Christmas the turkey legs are eaten after midnight Christmas Eve as we cook it the night before to save time the next day! There isn't usually much of it left after Boxing Day but if there is my mum makes turkey broth using up all the leftover veggies.

Love a turkey sandwich! On Boxing Day we always have cold cuts with fried potatoes and pickles lovely!!

what we dont use in turkey sandwiches in the late evening, we always having a buffet on boxing day which family members come to and everyone always brings leftovers and if there is any left usualy a nice turkey curry with the very final bits which is very rare frozen

We love turkey and try to buy a whole Turkey, usually bigger than we need, so we have enough for sandwiches, use some with pasta and use the carcass and some of the meat to make a huge batch of soup for freezing

I don't buy a turkey anymore as I find dealing with the leftovers quite stressful, So I buy a chicken big enough for one day then we have a beef joint the following day. No waste here in this house.

Use it all over again for another roast reheat with a bit of gravy and serve inside a Yorkshire pud. Quick meal but just as good as the first. Especially as we usually take turns working over christmas

We do eat a lot of turkey on christmas day but there always seems tonnes left over. Boxing day we have turkey sandwiches usually though we add a bit of lemon juice and some mayonaise to it to lift it a bit and it makes a fab filling. After that we make turkey curry - usually a korma or something similiar which I make up from scratch. This is good because you can freeze the curry too. Another option is a turkey pie with a puff pastry top - my rule is by day 3 the turkey has to be well covered with sauce to make it work and for everyone to eat it not feeling like its the same thing over and over.

we dont have turkey on christmas because we are veggie we have nutroast instead, any leftovers our left for boxing day, just reheated in the microwave!

I can't help but smile when I remember having a turkey roll thrust in my hand at my Nans a few hours after dinner. Cheap roll, lashings of butter, turkey and loads of salt. It tasted amazing.

So simple, yet I have never been able to recreate it myself.

We always, without fail, make a turkey curry. Depending on how much turkey is left over, we sometimes have it as lunch during the week after Christmas - plate of cheese, cold meats, pickles, chunks of bread followed by a mince pie. Lovely!

we don't have a huge turkey so our leftovers are used to make turkey, bacon and stuffing sandwiches on boxing day. we prefer it this way rather than eating turkey for days on end!

Have bought a turkey crown the last few years. Usually have turkey and stuffing sandwiches in the evening and cold turkey and chips the following day. Never have enough left to do anything else with it.

We dont buy a turkey at Christmas becuase there is just too much wastage involved if we did, i prefer instead to buy a small turkey breast mini roast so we can still enjoy the benefits of turkey without wasting food (which i hate). It's a shame turkeys don't come chicken sized! It would be far more practical :-)

We go to family for Christmas Day but we still buy a full turkey and cook it up "for the freezer"

We have some of the breast meat sliced for roast dinner style meals. The legs get made into curry, turkey and ham pie, and used in a jambalaya.
With the rest of the meat we have sandwiches and some chunks are reserved to be used in stir frys with loads of fresh veggies, ginger, garlic and soya sauce all topped off with gorgeous toasted sesame seeds

Generally, these days we go for a smaller bird, and not even always turkey (sorry, you probably don't want to hear that!)

I make pasties up with some leftover turkey, cranberry sauce, stuffing and veggies. They freeze well and work as school lunches or weekend sports snacks if they last the holidays.

I used to make creamy things but with one daughter now dairy free (and another who hates any hint of spice) I tend to go for risotto and pasta bake, as well as the usual sandwiches.

Get a decent quality turkey , the best we can afford. The trimmings we go for bargains cheaper alternatives etc
Massive roast on the day. Turkey sandwich tea with various homemade stuffings , pickles etc
Cold meat Boxing Day
Curry
Turkey and ham pie / pasties
Have been known to make a Christmas dinner turkey and trimming toasted sandwich (awesome)
can't get enough of the turkey! !

I always buy a whole turkey.. last year I used the left overs to make wahaca recipe Spicy bird tacos.. they were a massive hit.. i froze half and we had half for dinner.. lovely.. will be doing the same this year
