British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

If there are any leftovers we turn it into a yummy turkey curry for 27th....

I think turkey is as versatile as chicken - we make a turkey and ham pie , turkey and veg soup and the best one - Turkey lettuce and homemade mayonnaise rolls.

We use any leftover meat for sandwiches, as pie fillings with other meat, we make turkey curry, and we use the carcass for stock, and if there is still anything left, the cats have a pick as well! :)

They tend to just get eaten as cold cuts with pickles etc. We have curried them in the past though and I saw a Paul Hollywood recipe for baking them into buns with cranberry sauce and stuffing which I might try.

turkey and stuffing sandwiches xmas day night, boxing day buffet - sliced turkey with fresh breadcakes, day after boxing day turkey curry and the day after that we are stuffed and turning into turkeys!!!!

We always have a turkey for Christmas (for some reason it's the only time we do) and I love the turkey sandwiches we have as left overs the following few days.

my husband eats it for breakfast and i freeze the rest - i'm veggie and as a result don't cook meat as much as my other half would like!

I prefer the leg meat (My DP and DS prefer the breast so more for me!) and I love to make a turkey sandwich with the leftovers. Has to be on crusty farmhouse bread though, mmm.

I use the leftovers mixed with some creme fraiche and mushrooms as a pasta sauce.

family not a great fan of turkey so try to get enough to feed five and if any left make a turkey curry

I don't regard it as left overs. Now only two of us we still have a large turkey. We freeze 4 extra portions of Christmas dinner, have cold meat in the fridge for sandwiches as well as a meal with chips and peas. Also freeze slices for supper snacks at a later date. Turkey bones makes the most delicious stock for several portions of soup and I also strip every bit of meat from the carcasse to add to the stock :)

We buy a whole turkey. For leftovers we have loads of Turkey, stuffing and chipolata sandwiches, soup, curry and a turkey, ham and leek pie.

I make up a few plates of roast dinner for one and pop them in the freezer. I work and so it is always handy to have some easy meals to hand for kids after school for the babysitter to prepare and it is a nice treat for kids after school to come home and have a roast dinner on a cold January evening.

Leftovers? What leftovers? My lot are gannets when it comes to the Turkey. We usually have lots of stuffing and a few sprouts left though.

What the family likes, is a good stir-fry, with bean sprouts, and soy sauce.
And some times, if there is any left, we add the stuffing!

Lovely stock for all sorts of soup (lately, Vietnamese style)

Thai curry with the meaty left overs.

And of course, sandwich fillings and picking from the fridge while passing through Grin

Turn them into a curry of course. Start off with a splash of oil, sprinkle of cumin seeds, 200 grams to 400 grams of blended tomatoes , the usual spices of turmeric, ground coriander, red chilli, salt, crushed garlic and ginger, cardamom pods and bay leaves. Each up to a teaspoon each depending on preference. Let it thicken and darken and then add the left over turkey. Add some chopped potatoes if you wish and a couple of cups of water (or coconut milk). Let it simmer and you will have a delicious turkey curry. Serve with a squirt of fresh lemon juice and flatbread.

Most defiantly a Turkey Curry. We purposefully buy a larger turkey (As big as the oven will allow us) to have some left over for curries. Always make the best curries i find Smile
