OK, I am going to volunteer Friday night recipe number 1, selected taking into account cost, ease (in terms of time complexity), calorie considerations and the all-important "impressive lookingness to effort put in ratio". Am posting now as people doubtless shop for groceries at different points in the week.
You will need (for two adults)
1 single chicken breast per adult, skin removed
about 1/2 cup chopped fresh mint leaves
1/2 cup white vinegar
1 tablespoon sugar
1 cup orange juice (no bits)
1 teaspoon cornflour
1 teaspoon water
1 teaspoon butter
(i) Flatten chicken evenly (i.e. put a bit of glad wrap over it and bash it with a milk bottle or other blunt instrument. Quite a satisfying activity for a Friday evening)
(ii) Spread one side with mint, roll the breast up tightly (like a swiss roll, with the mint on the inside) and secure with a couple of toothpicks or some non-plastic string)
(iii) Place in ovenproof disch in a single layer, bake, covered, in a moderate oven for 25 mins / until tender.
(iv) remove, slice crossways (each breast will yield about five circular slices), serve with sauce artfully drizzled over.
For sauce
(a) Combine vinegar and sugar in small saucepan, stir constantly without boiling until sugar is dissolved.
(b) Bring to the boil, boil rapidly without stirring until mixture turns a light golden brown colour.
(c) Add orange juice, bring to boil, reduce heat, simmer until reduced by half.
(d) Add blended cornflour and water.
(e) Stir until boils and thickens.
(f)Whisk in butter just before serving.
Serve with fav. potatoes (boiled new potatoes are good but piles of mash will assist in staving off "nouvelle cuisine" complaints from hungry DPs) and something green (beans are good with the orange sauce).
