Mine is equal measures of buttermilk and mayo, and then double of Greek yogurt, half the juice of one lemon, two tbsp of dried Parmesan, a teaspoon of dill, garlic granules, Maldon seat salt, onion powder, and cracked black pepper.

Makes that amazing ranch dressing you get on the side of fried shit in America and is great for pizza crusts but you can also make kids eat ANYTHING dipped in it.

I’ve watched my kids enthusiastically eat celery, radishes and green peppers which aren’t normally things they will eat raw.

I always heat an onion, a carrot and a stick of celery in the milk before I make a cheese or mushroom sauce and it makes it lovely and tasty.

This is the best thread I've ever read on Mumsnet! Already made the ice cream mentioned on page 1 or 2 and was delicious.

My offering is bonus bread... When I'm baking bread I sometimes pull off a lemon sized chunk and make either of the two below. It's a nice way to make a quick treat snack using just the dough you've made for your bread, and small enough not to affect the size of the loaves you're baking!

  1. Chocolate frying pan bread: knead some dark chocolate chips through dough. Roll out to 5mm thick in shape and size of your smallest frying pan. Leave to rise for 10 mins or so. Heat frying pan to medium hot. Add bread, cook until bubbles appear then flip over and cook on other side for a couple of minutes. Spread with melted butter and a sprinkling of caster sugar and eat immediately.
  1. Mini cinnamon rolls: cream together some butter and sugar and cinnamon. Roll dough out into rectangle. Spread the butter and sugar mixture over it. Roll up tightly and cut into mini slices. Arrange in mini tin, cut side up, and bake until done. About 20 minutes at 200.

Simple one - marmite bread - mix butter with marmite to taste, then cut slits into a part baked baguette, fill with the marmite butter, use your knife to spread any extra over the top of the baguette and then bake on gas mark 6 for about 25 minutes wrapped in foil.

Coconut rundown chicken - no idea if this is a traditional recipe, I had it in a restaurant once and used the ingredients listed on the menu as the starting point. Soften a chopped onion in coconut oil, add 3 crushed garlic cloves and a grated thumb sized piece of fresh ginger, cook for a few minutes then add chicken strips/cubes, and brown. Add in a sliced red pepper, sliced mushrooms, a tablespoon of all purpose seasoning, a teaspoon of lazy chillies, cook for a few minutes. Add a tin of cherry tomatoes and a tin of coconut milk, and reduce until thickened.

I serve it with coconut rice (basmati rice, tin of coconut milk, 2 tins water, tablespoon of granulated sweetener, half teaspoon of salt).

Most supermarkets sell buttermilk. It is the liquid left over from butter making. It is like double cream but tangier. Brilliant for baking/cooking with.

Medium or large tomatoes:

Slice thickly (maybe 4 to 5 slices per tomato). Spread out on a baking tray. Sprinkle with salt and pepper. Drizzle over olive oil. Then about a tablespoon of balsamic vinegar.

Roast in the oven at not more than 160 deg. After 40ish minutes, sprinkle over some dried oregano. Carry on cooking for another 10 minutes.

Lovely antipasto, or a topping for pasta and pesto, or to have alongside more or less any savoury dish.

If you fry up toaster crumbs (or fresh crumbs if you're all fancy) until crispy and stir in some ready dried onions that you can buy in vast bags in Turkish stores and some parmesan, otherwise fussy kids will eat any soup or any pasta as long as they can sprinkle some of this on, and adults will think you're a culinary genius Grin
I have it on good authority that frying the crumbs in oil left over after frying chorizo or bacon works particularly well if you're a meat eater.

My "Spanish" chicken. I never measure as I'm a Nigel Slater type cook. Fry up some chorizo until it browns and the surface browns, add onion then garlic. I then add the chicken,usually thighs, and brown. Then add a tin of tomatoes, a tin of white or borlotti beans. Stew for around 40 minutes.

Easy chicken satays

4 chicken breasts cut to large cubes
2 large tblsp peanut butter
Big slosh of oil
Same amount soy sauce
(Optional: chopped spring onion, dollop of honey, chopped up ginger, sesame seeds)

Mix to a runny paste, add the chicken to marinade (anytime from 10 mins to 4 hours)

Put chicken on skewers and grill 10 mins each side

Adding in a teaspoon of marmite to a spag bol/ chilli makes it taste amazing. People who I know HATE Marmite can't get enough of my chilli and always ask what makes it taste so lovely! 😂

Oh, another from me is a super easy chicken satay curry. I cook this for two people, to do two meals, so adjust quantities up to suit.

Chop three large chicken breasts and brown in olive oil
Add a cropped red onion, two minced garlic cloves, and a chopped red pepper
Chuck in half a jar of red Thai curry paste and some torn up coriander and leave it for about five minutes
Add two heaped tablespoons of crunchy peanut butter, and a can of coconut milk
Stir it all up until it’s smooth, then cook on at a low heat for about 20 minutes.

I portion it off into two at this point, then we have it with rice and naan breads, and usually Indian starter type things from M&S.

I made cupcakes recently, the topping was butter cream and I mixed in a large tablespoon of strawberry jam. The topping was less sweet and turned a beautiful pink colour. no need for food colouring

Xmas stuffing balls...

One loaf of mcvities jamaican ginger cake crumbled (prefer left overnight so hard)
One packet of sausage meat of choice

Mix together and form into balls then roast in oven.
Eat many.

Lemon brioche pudding always gets compliments and is incredibly easy.

Slice brioche loaf thickly and spread with lemon curd.
Arrange slices in serving dish
Cover with creme fraiche
Sprinkle with sugar
Bake for about 20 minutes

We generally use basmati but easily pleased with Lidl/Sainsburys variety - we don't know any better!

Haggis lasagne. Simply replace the minced beef with haggis. Takes but a few mere minutes and has bags of flavour.

Can also use veggie haggis.
