Mine is equal measures of buttermilk and mayo, and then double of Greek yogurt, half the juice of one lemon, two tbsp of dried Parmesan, a teaspoon of dill, garlic granules, Maldon seat salt, onion powder, and cracked black pepper.

Makes that amazing ranch dressing you get on the side of fried shit in America and is great for pizza crusts but you can also make kids eat ANYTHING dipped in it.

I’ve watched my kids enthusiastically eat celery, radishes and green peppers which aren’t normally things they will eat raw.

Cheesy shortbready biscuits
8 oz grated mature cheddar...I use 2 makes of cheddar to improve flavour, Tickler and any other.
4 oz butter
6 oz self raising flour
1 teaspoon dry mustard
salt and pepper
Mix grated cheese and butter together, add dry ingredients, Make into a log shape, wrap in cling film and put in the fridge while you heat the oven to 200 deg C. Slice the log into biscuits, bake for 10-15 mins, depending on thickness.

Nut fudge sauce for ice cream
3 tbsp peanut butter
5 tbsp golden syrup
I dessertspoon hot water
Mix together

To serve hot, microwave 30 seconds
Stores well in a jar in fridge,
Useful for secret treat straight from fridge when you've been lumbered with the washing up.

I make chocolate mint shortbread which everyone loves. I git the idea from a Waitrose magazine years ago. You basically grind a packet of extra strong mints and add it to the shortbread mix and top with Aldi dark chocolate with mint. It’s delicious.

Fig, feta and Philly turnovers are a hit - sweet and salty:

Use hot water from kettle to reyhdrate dried figs
Take ready-made puff pastry
Cut into circles
Chop figs fairly small
Mix with crumbled feta and Philly or similar cream cheese to make filling. Could add chopped walnuts too.
Spoon filling onto pastry circles, seal edges with a bit of water and a thumb roll (like with pasties)
Prick tops with a fork
Brush with milk
Bake at 180C until puffy and slightly brown
Watch them disappear...

Thank you, we have a medium sized Morrisons, I'll go and have a look. But there is a much bigger one on the other side of town, so if ours doens't have it, I can pop in to the other one when I am goig that way.

Since Kecap Manis is 76% sugar, how about warming up some brown sugar in a bit of soy sauce to make it syrupy? I've done that before and it was perfectly OK.

I always get compliments for my lasagna. Well really it’s a Jamie one from years ago that I’ve adapted for us but I think the trick is that I don’t make a white sauce - I use creme fraiche topped with Parmesan. It’s tastes so good and is so much easier to make.

I wonder if it is to do with what sells?

I'm sure it does, when I lived in North London my local Tesco had a large kosher section, now I'm in Wolverhampton there are more Indian spices / ingredients and no kosher (well not a separate aisle).

Mine is a total cheat but everyone asks for it at Christmas - Mince pie ice cream.

You basically buy a bog standard tub of vanilla ice cream, let it soften slightly, put it in a blender/processor with a load of mince pies (pastry lids off ideally), blend away and then return to the ice cream tub and freeze.

I do tubs and tubs of this at Christmas, even when I have confessed and told people how easy it is to make. They say they would get it wrong; you literally can't, a monkey could make it!

It also works well with little apple pies as well!

I was only moaning this morning with a mate that I was rotating the same old dinners - not any more!!

Brilliant thread!

My failsafe pud is;

Tub double cream, whipped, mix in lemon curd to marble, add grated zest of 1 lime, crumble in 8 meringues (keep some chunks) then put in a LINED (with clingfilm) bowl and freeze.

Get out 15 mins before serving, unwrap and turn out onto a plate, slice & serve (I sometimes heat up a bit more lemon curd & water to drizzle over) with raspberries on the side.

Pretty much zero effort for a really delish pud that always goes down a treat.

Indian style lamb meatballs - Adjust chilli powder & fresh chillies according to heat preference
500 gram lamb mince, 1 onion, green chilli, 2 tsp ginger & garlic paste
1 tsp chilli powder, 2 tsp ground cumin, 1 tsp garam masala, salt to taste, handful mint, few coriander leaves, 1 large egg, juice of half lemon

Sauce
olive oil, 1 large onion finely chopped, 1 x 400 gram canned tomatoes or 5-6 fresh tomatoes (grated or pureed in a food processor)
2 green chillies, 1 tsp ginger & garlic paste, 2 sprigs curry leaves - optional, 1 tsp chilli powder, 1 tsp garam masala, 1 sprig of thyme
Salt

Instructions
To make the lamb meatballs add onion, green chilli, ginger/garlic paste, chilli powder, cumin, garam masala, salt, mint and coriander to a food processor and process until it resembles a rough paste or smooth if you prefer. Add mince and egg and mix it well. Divide the mixture into equal sized ball. Fry the meatballs in oil and set aside.

Sauce
Heat oil over medium, add onion, chillies, curry leaves and thyme. Sauté until the onion is slightly brown. Add garlic and ginger and fry for a minute. Add the chilli powder, garam masala, tomatoes, season with salt and simmer until the tomatoes are cooked.
Add the lamb kebabs and heat through. Garnish with coriander and serve with roti or fresh crusty bread.

instead of meatballs swap for lamb chops or sausages

Thai Satay Sauce (Easy cheat version)

1 x tin of full fat coconut milk

1/2 - 3/4 of a jar of chunky peanut butter

2 teaspoons of Lazy Garlic

3 tablespoons honey

3 tablespoons soy sauce

2 tablespoons lime juice

2 tablespoons rice wine vinegar

1-2 teaspoon sweet chilli sauce

Mix it all together and bring to simmer until it’s the right thickness.

Divine dipping sauce.

More a trick than a recipe. My butter icing gets rave reviews and requests for the secret.

The secret is to mix up the icing sugar and butter to something like crumble crumbs before adding 1-2 capfuls of milk (literally used the top of the milk bottle for this) and whisking til it's a slightly stiff but still spreadable paste. Saves your whisk on the butter and stops it going gloopy from too much milk. Anything that calls for mixing a recipe before you add anything liquid, I usually do by hand now!

Can't tell you the Chocolate Truffle Brownie secret though.

DMs secret is proper gravy- she buys gravy salts on Amazon. All other gravy is shite compared to DMs.

Chop chicken thighs into decent sized strips (about four per thigh). Get a full fat yogurt (Fage is good), mix in cumin seeds, bit of garam masala, turmeric, garlic paste, salt, pepper, lemon juice and marinate the chicken in it for an hour or ideally longer. Roast in a hot hot oven (220ish) ideally in a skillet, on a skewer, for 20-ish minutes (your oven might be different from mine). Tender and juicy, either ready to put into a curry, or served with salad.
