Mine is equal measures of buttermilk and mayo, and then double of Greek yogurt, half the juice of one lemon, two tbsp of dried Parmesan, a teaspoon of dill, garlic granules, Maldon seat salt, onion powder, and cracked black pepper.

Makes that amazing ranch dressing you get on the side of fried shit in America and is great for pizza crusts but you can also make kids eat ANYTHING dipped in it.

I’ve watched my kids enthusiastically eat celery, radishes and green peppers which aren’t normally things they will eat raw.

Tinned potatoes are pretty useful. I like to use them when making Cornish pasties. My dH loves them chopped up in a bowl of tomato soup.

This is my recipe recreating the hummus we had in Egypt - much smoother and runnier than the standard stuff we get here. Still fine for a dip, or makes a great Middle Eastern salad dressing or sauce for grilled lamb. You do need a proper smoothie style blender, and use the green smoothie setting.

INGREDIENTS
1 tin chickpeas (drain the water and measure it in)
8 tbs water from can
3 tbs tahini
6 tbs good olive oil
3 tbs lemon juice
1 clove garlic (or three roasted)
Salt

DIRECTIONS
Pulse then blend.
Season to taste.

For the best ever mint sauce, use muscovado sugar.

INGREDIENTS
200ml water
200g dark muscovado sugar
200ml malt vinegar
1 small bunch mint, chopped

DIRECTIONS
Bring water to the boil in a small pan. Stir in the sugar to dissolve, boil 5 minutes. Leave to cool completely before adding the vinegar and mint.

I have cut and pasted all my favourites from thsi thread, and when I meal planned for this week, I have included 2 of them, and a pudding.

So we are having the chilli and garlic fried salmon, (because dh and I will love that one) and the pigwheels, (because kids will love that one) and the cheat's creme brulee. (because if kids don't like it, I will eat it all...)

I'm alreayd lining up what we will have next week!

I have made the Turkish Chicken Tray Bake from near the top of the thread: delicious. There were lots of vegetables left, so I roughly blended them and they made a tasty soup.

I love everything about this thread apart from the impact it will have on my waistline! Grin

I can't add much apart from making potato bread with my leftover mash:

Add flour to mash until a dough forms.
Roll out until approx 1cm thick
Cook on a griddle pan for a couple of minutes each side.
Serve with butter.

Butter = everything amazing.

Picnic loaf. Large sourdough loaf, cut into slices but not all the way through. So you end up with an intact loaf still. Fry onion till caramelized put to one side, fried fresh tomatoes put to one side, boiled potatoes sliced, bacon chopped and fried put to one side. Grated cheese. Two large eggs whisked with splash of cream. Place loaf on tin foil lined baking tray. Stuff mixture in between slices evenly ensuring you get some in each slice, keep a little cheese for top. Carefully pour egg mixture down each slice and sprinkle remaining cheese on top. Make a bag with foil and bake till egg cooked. Open bag and let the top brown.

@ColleagueFromMars I do the condensed milk ice cream with a (very big) dash of Cointreau. Keeps it very smooth and a bit softer delicious - melts quickly though.

Someone put a condensed milk key lime pie recipe upthread. I do similar, but with zest and juice of a couple of lemons.

Finally, in our family we always have zabaglione sauce with Christmas pudding - frankly no-one cares about the pudding, it’s all about the zabaglione!

I’ve been screenshotting lots of the suggestions on my phone, but I plan on copying & pasting into a Word doc on the laptop when I have time (& energy)!

I'm definitely going to give Tina's stuffing (TM) a go.

Christmas dinner is something we look forward to all year. We have Christmas dinner pie on Shrove Tuesday.

Ready rolled puff pastry

Sausage gravy (soften very finely chopped onion,brown sausage meat, add flour, milk, salt, lots of pepper and cook out)

Mix in left over turkey, ham, pigs in blankets and stuffing (half sausage meat and paxo mix)

Lightly mix meat into gravy, top with pastry, brush with an egg and serve family style.

We have it with mash and vegetables.

We have turkey sandwiches with PIBs, mango chutney and mayonnaise on sourdough. We save all the leftovers for the pie.

I had a breakfast brunch earlier which I make if we have lots of people over.

Bacon cooked in the oven

French toast made with crumpets

Baby plum tomatoes slices in half, cooked on a very low heat in lots of butter. I cook slice down at first and then flip over.

It all goes into the oven on serving plates or bowls.

If we have people over we have real coffee from the perculator with cream.

We also have shop bought mini Danish pastries or muffnuts.

Muffnuts or duffins
125ml Milk.
85ml Veg Oil
1 Egg
Half tsp Vanilla Extract.
200g SR Flour
100g Caster Sugar

Filling - I like crunchy peanut butter and jam.

Topping
60g Melted Butter
60g Caster Sugar

Special Chicken (family name)

2 x tins condensed mushroom soup
1 onion
1 cooking apple
Paprika
4 chicken breast fillets, sliced fairly thinly
2 x tbsps medium curry powder
100ml single cream

Fry finely diced apple and onion in a knob of butter. Add curry powder, soup, and cream and mix.

Coat chicken pieces in paprika, lay in baking dish and cover in sauce. Bake at 180c for approx 40 mins, until chicken is cooked.

Chicken wings recipe

I jar char siu sauce
3 tbps hoisin sauce
1/2 - 1 dried chili, crushed
1-2 cloves garlic, crushed
1 pack wings (enough for 4)

Mix sauce ingredients together. Bake wings in oven at 180c until nearly done, then drain juices. Add sauce to wings and finish cooking until sauce is thickened.
