NI Protestants are famed for their tray bakes but which is the best traybake of all?

I’m thinking something crunchy and chocolatey, a tiffin like thing. But are there unchocolatey traybakes that I just haven’t been exposed to? Are they keeping all the best recipes to themselves, strictly to be eaten behind closed doors?

And does it get a bit competitive? Does Annie cast aspersions on Doris’ traybaking abilities?

This isn’t a tray bake, and apparently it originates in Kent, but this thread has reminded me of it (I think we had it at school - it’d be banned now) - Gypsy tart.

Basically it’s a pastry case with a filling made of condensed milk and dark muscovado sugar.

For some reason, I think it will be at home on this thread.

@nerysw: the pastry/strawberry jam/cornflake cake thing which was the best school pudding ever.

It was AMAZING. Probably controversial, but I also loved it with school custard on! Cornflakes all melted into custard and it was just soooooo good.

Cappuccino Squares
Ingredients
4oz butter
4oz caster sugar
1lb White chocolate
2 tablespoons syrup
2teaspoons instant coffee
12oz digestive biscuits crushed
Drinking chocolate
Method
Melt butter, caster sugar, 8oz of the White chocolate and syrup. Dissolve the coffee in half a teaspoon of boiling water & stir in, together with the crushed digestives. Press into the base of a Swiss roll tin. Melt remaining 8oz White chocolate and spread over the top. Dust with drinking chocolate before the chocolate hardens. Cut into squares when set.

Malteser Squares
2oz butter
9oz milk cooking chocolate
3 tablespoons syrup
10 oz digestive biscuits
1 family bag Maltesers (keep 6)
1 block white cooking chocolate

Melt butter, milk cooking chocolate & syrup. Add crushed digestives, leave to cool slightly. Add maltesers & mix well. Spread into Swiss roll tin. Cover with melted whites chocolate, dust with crushed (6) maltesers and leave to set in the fridge. Cut into slices.

Protestants have traybakes so we have something to look forward to at funerals. Catholic’s have alcohol.

My (Presbyterian) mother is a traybake queen. Her lemon squares are legendary. She guards the recipe with her life though so I can’t share it.

Raspberry Ruffles
1 packet raspberry jelly crystals
6oz icing sugar
1 packet desiccated coconut
1 small tin condensed milk
Dark cooking chocolate.

Mix the dry ingredients, add the condensed milk & mix well. Spread into Swiss roll tin & cover with melted chocolate. Leave in fridge to set then cut into squares.

Peanut Bars

6 snicker bars
2 mars bars
4 oz marg
4oz cornflakes
2oz peanuts
1oz toasted coconut
Melt snickers, mars and marg. best to smooth consistency. Add crushed cornflakes & peanuts. Press into Swiss roll tin & cover with the coconut. Leave to set then cut into squares.

@SDTGisAnEvilWolefGenius we totally had Gipsy Tart at the school canteen in 70s Belfast - the fact that the chocolate hundreds & thousands sprinkled over it were dubbed mouse droppings did not put us off Best School Pudding Ever (& that included Pineapple Poll, whatever the holy heavens THAT was...)

This is the shah - not shag - biscuit I had tonight. Bought in our local garage. The bakery is notorious not just for the baking lol!

Never ever heard of it of this and my grandpops tossed the big stick thingy in the local OL too! but then I took after the left footing side of the family.
(My grandad did make a mean cream soda and ice cream though. He even bought the green bottle 😉)

@BlackAmericanoNoSugar I recommend Grounded Expresso Bars in Newry or the Shelbourne bakery and cafe, less than 100m apart. Both do massive scones of various types and the all-important traybakes. Enjoy.

I have just had an idea - could Teresa May and Arlene Foster somehow come to a Brexit deal if we got them together over the subject of traybakes? Serving a selection at the negotiating table?

On a different note , I was in Belfast at the MAC cafe ( with a rather nice selection of slices) .When I tried to log in to WiFi - one option was " ArleneFostersArse"Blush

Scotbloc - does that still exist?
Back in the old days one's tray bake repertoire depended in it ( Pre Cheap chocolate from Lidl/Tesco) . Everything was covered in Scotbloc Cake Covering.

I never knew traybakes were a Protestant thing, I'm definitely making fifteens today.
Traybakes are souch better than cakes! And I've not read the whole thread so not sure if they've been mentioned but had to jump in and say that Amaretti tiffins are the best thing ever Smile

We accidentally forgot to add sugar to treacle scones yesterday and they were still lovely. Would that help?
