NI Protestants are famed for their tray bakes but which is the best traybake of all?

I’m thinking something crunchy and chocolatey, a tiffin like thing. But are there unchocolatey traybakes that I just haven’t been exposed to? Are they keeping all the best recipes to themselves, strictly to be eaten behind closed doors?

And does it get a bit competitive? Does Annie cast aspersions on Doris’ traybaking abilities?

For us potato bead is purdy bread. On the raspberry ruffle chat, raspberry ruffle cheesecake anyone? Raspberry yoghurt stirred into the philly mixture, and raspberry ruffles crumbled all over the top.

My FIL makes the most amazing apple fadge. You take the fadge dough, roll it out, fill with stewed apples, fold over, bake in the oven. And serve with whipped cream.

@superloudpoppingaction I can help you here - I am from Belfast and my husband is originally from Airdrie. We share a lot of the same dialect words (wean, skelp). Glasgow and Belfast share Victorian architecture and poor weather but Glasgow is so much more hilly! But yes, we have a lot in common. I didn’t know before I met him that sectarianism was also a thing in Scotland!

Holy God, you’ve not lived, you poor critter! The wee ice cream parlour on the Andersonstown Road in Belfast where I grew up did raspberry ruffle ice cream.

My next trip up north (before the end of March Wink) I'll have to try the raspberry ruffles. Never heard of them.
But a raspberry Bounty sounds lush.
(they'll have to go in the press til Easter, though #Lent)

Like most others I opened this thread with a WTF factor!

However its been an enlightening experience. For what its worth I've never known a RC church to hold a coffee morning or a sale of work.

Totally agree with the baking by taste my granny did amazing rock cakes but couldn't give me a recipe other than "a wee bit this and a bit of that"Confused

My mum had a great recipe for treacle scones that I used when I still stayed at home. Recently I went asking her for it and she'd binned the book as it had got into a state.Sad

Has anybody got a really good recipe for treacle scones???

Right I have been now tried a Mars bar and apple sandwich!
I can confirm that they are indeed rather good. Thick slices of Mars bar and thick slices of apple taste best with white bread and a bit of flora. The granny smith apple gives colour and a bit of crunch.

In the interests of religion, we had it post Mass. And the DC liked it too.

On the subject of hot cross buns my upbringing was mixed, my dad (CofE) always ate them on Good Friday whilst the rest of us had to fast... Envy

Off to the shops for more Mars Bars for a traybake after lunch.

I made a Mary Berry apple tray bake earlier, but being English and Catholic I halved the amounts and made it in a round cake tin.

I, too, thought this was a fun typo! I used to live in NI, and in hindsight, there were some traybakes involved. They haven't really stuck with me because I didn't really like them... Shock I seem to remember sticky sweetness with random jelly babies?

I do come from Protestant stock, but not the traybakey kind. All my ancestors were Lutherans. I don't think Lutherans bake? Maybe bark bread or a plain cake occasionally...

NI in-theory-Catholic DH denies all knowledge of traybakes.

Peirre I only know of two garages that sell Maine Bakery Grin They don't supply to all that many shops...

The Maine Bakery baps are the bees knees. And the treacle soda bread is the stuff of legend. And the snowballs. And the big toffee muffins with toffee sauce on top. And...all of it actually!
