Not much new here...........kinda boring really.
Ladies...........need some new inspiration for every day easy meals. Feel I keep churning out the same old stuff, roast on Sund, fish n chips frid, pasta, rice dish etc. Mine are terrible about eating much veg, really getting fed up as I don`t seem to be able to cook one ingle meal that everyone likes. Ideas on a p/c please:o

Well, I'm Vegetarian so all our meals are meat free. I make burritos (well put out stuff and you fill your own) which you could also add meat.

I made dad these Chicken Goujons and he loves. Healthy because you know what it's made off. I know they're not quick but jacket potatos are good, I can pop them in ans forget about them for an hour. Other than that I'm clueless haha.

Hmm quick and easy meals? I did spaghetti last night, one of my quickest meals to make - melt butter in a pan, fry some garlic, a green chilli or two, a squirt of lime, handful of chopped coriander, and a shot of tequilia Grin I then stir through chopped crab, and add drained spaghetti. It is YUM!

I do pizzas a fair bit, and roast off a huge tray of mediterranean veg to top them with. I make the bases in advance so it's quick come tea time, load up and chuck in.

Do they like stir frys? Good quick way of getting veg into them.

Gnocchi as an alternative to pasta? I do a kind of bake with peppers, tomato, coriander, chilli, onions, coriander, grated cheese on top.

You can add veg to the rice in your rice dishes. I do a lovely mexican rice with peas, tiny diced carrots, and tomatoes - lot lower in calories and carbs than rice on it's own, and tastes good too! I stick peppers in just about everything - they are even nice in toad in the hole Grin If I do meatballs and pasta, I add onions, peppers, mushrooms.

Pork and beans in the slow cooker this recipe is heavenly, and very much a chuck it in and leave it. I serve it with jacket potatoes. (And it is nicer with a stock cube/pot rather than the beer)

Grilled halloumi skewers, or chicken skewers, wraps or naans, and a big salad, or something like quinoa or couscous with veg.

I alternate really with faffy meals - making loads of curries or a posh meal with stuff that is quick to make - burgers, or hot dogs. (M&S have started stocking brioche rolls for those) I make double portions of things like stew or curry so it means the effort covers two days.

Trips, I like Lorraine Pascall's meals. There's a great sweet and sour pork meatballs with crunchy peanut rice. Very easy to do - biggest faff is the meatballs really - and you can cook it all in one pan too so not so much washing up. I'll post the recipe later but essentially you make meatballs out of sausages, brown them, add a chopped pepper, some honey, tomato sauce, pineapple in syrup and lime juice then cook off. Cook some rice and when it's done add a blob of butter and some bashed up salted roasted peanuts. Very, very tasty. And it really doesn't take long once you've made the meatballs, which you could in theory make in advance or get the kids to make. I've not seen pork meatballs in our supermarkets but you may get them from a butcher.

Mama. I hope little Apollo is resting and fighting his poorly off. I also hope your in laws are still behaving better after the last time innings weren't so good. Are you getting plenty of rest yourself? It can't be easy and I'm sure there are constantly 101 thoughts running through your head.

Tonight we celebrated st George's day at rainbows, made some fab dragon shields. The girls put so much effort into them we very nearly ran over our hour! Then we celebrated two of our girls going up to brownies. Will have been a long day for them as they did the hour for rainbows and then the hr and a half for brownies straight after. But we are trying to build good links with the girls.

James has been truly awful. Yet sobbed his heart out and clung to me when I left him at nanny and grandad's. We had lovely cuddles when I got home and put him to bed. It's those moments that make all those hard ones drift away.

Just waiting for dh to come home now - he went to a friends when I got back - then we can have tea.

Hi Trips -meals with hidden veg, I am a master at that, as J is a real pain to get veg into, where as M loves his veg. - tuna pasta bake, I add loads of sweetcorn and peas, chilli- veg hidden, spag bol, I also make homemade salmon fishcakes, a bit faffy, but I make big batches and freeze, curry, again, big batches and freeze, Cumberland pie is a big favourite, hide veg in that as well, as Chops said, home made pizza, if you don't want to bother making bases, you can buy them ready made and just add your own toppings - the boys love these as the make their own. I also do things like risotto, stirfry (usually add noodles so it is more like a chow mein) also do couscous, and paella.
Mama- glad Artie is improving, hope Apollo improves too.
Soks- sounds like fun tonight. Mind you, in this county therevis a big campaign to reinstate St Edmund as the English patron saintGrin
Chops - I got an egg from my boys, I bought DH 2, one from the boys and one from me, he got me Mary Berrys cook book!
Shabs- how are you surviving with Lew, your mum and Tom to cope with?
M didn't want to go to school today, he had French and German as 2 of his 3 lessons( they do 3 x 1.5hr lessons a day at their school, on a 2 week rota system.) Anyway, he loathes his language teacher, and really hates yellow week Thursdays, managed to pursuade him to go in the end tho.
I was invited to go to their old primary school this afternoon, as they were doing the official opening of the new adventure playground and outdoor classroom we started fundraising for 3 yrs ago when I was chair of the PTFA, It's taken that long to raise the £20,000 needed to build it, it all looks lovely, pity my 2 are too old to have use of itBlush
My hand is now going from black to a nice greenish red, I've got fracture clinic next Wednesday.
I have also been doing some AdHoc occ health work this morning, the firm asked for me, so I am fitting in 5 days for them over the next 4 weeks, at least it keeps me in practice. Busy, busy busy, I'm going to meet myself coming backwards soon!

Evening girls, brilliant ideas and recipes, I am going to try some, but just know dd will sit there and manage to pick out all the healthy bits and shove them to the side of her plate, she is a nightmare. Just in from my night out with the girls for book club, really look forward to that ,my only night out every 6/7 weeks!!! Lovely meal, good discussion and lively company! Well another bombshell! Do you remember all the angst we went through last year re school? Head did a runner, failed its Ofsted, went into Special Measures, new team in to turn it around? Then it was closed and merged with a neighbouring school, all our teachers were made redundant, last Sept was a new beginning. Well I go up to the primary school y/day to do my bit and was told that the principal of our school, the one who said the merger would benefit us all, that things would be better when the schools merge etc etc.........well he has gone, just like that. Left during the Easter holidays, and the statement from the school simply says that he resigned and they will not comment further. There is a rumour that the school we merged with where he was head has failed its Ofsted and gone into Special Measures! Another new team have been put in already..................bloody bloody marvellous, back to square one...........with my three due to sit their gcses in 2 weeks time! Its all very worrying, on top of it all poor Becca came home really upset because her Art teacher who doesnt seem to like her told her today she can expect a B if she is lucky for her project she spent months on. I am not just saying it because she is mine but her work was amazing, I am good at art but it was on a different level to anything I could do. The head of the 6th form actually stopped me a few weeks ago and said her work was far superior to anything hed seen by the 6th formers. It isnt fair. Does anyone know who gets to mark the gcses? I feel like phoning up and asking!! Well , I am off to London tomorrow to put Thomas on the train down to Portsmouth, he is off to Army camp for the w/end as part of his assessment. He has never been on a train on his own before so the thought of him going from London down to Hampshire worries me..........its all scary! My stomach is churning a little think I have just eaten something that had cream in it, cant stomach it literally..............please don`t let me be sick, not tonight!! Speak to you tomorrow................xx

Trips - Tom did a Graphics Btec. His course work was assessed by the teacher and then they did an exam that was marked by the official examination board. He thinks though that the course work was also assessed by the same board.....because, as he said, if the teacher liked you they could give you an A or if they didn't they could mark you down. He is sure that it is not down to the teacher alone. He also said that the teachers are under so much pressure that if they marked the course work they would just give every pupil an A to protect their jobs.

Would be worth ringing the school and finding out though.

Just noticed on FBook that Estar needs our thoughts and prayers. Her hubby is very poorly Sad it all sounds so sad but he is, as always, upbeat - not sure that I could be that brave but, there again, I have no belief in God - none whatsoever xxx

I have her hubby on my friends list so maybe thats why I can comment. If you go onto her FBook page and scroll down a little way she has shared her DH's status and I am sure you will be able to comment on that. Such a devoted family - the kind of people who help everybody - they have had enough tragedy losing their precious son. None of it makes any sense to me at all. xxx

Hope Thomas enjoys his weekend too, and the weather is dry if not sunny!

I have good news! It would appear after all the doom and gloom of a 95% chance of bowel cancer, the biopsy has showed dad to be in that grateful 5%. His Diverticulosis has turned to diverticulitis - basically a really, really nasty infection of the diverticula in his intestines. We've all breathed a sigh of relief and now just have to hope that the infection is treated effectively and buggers off.

Hope Thomas had a safe journey.

Not so good news for Apollo, MRI scans showed more damaged and that the swelling has increased instead of going down, so he is to be put on steroids. He has also been put in a medically induced coma and having his body temperature lowered. The battle continues.

Oh my dear Mama! I really wish we were all closer so we could give you a much needed hug, cup of tea/coffee/mngin (delete as applicable), listening ear, trashy magazines...

I know a mum whose baby had cooling treatment and was cooked for 3 days when she was a newborn. Different circumstances I know but you'd never know her little girl had such a tough start. I assume it's the same sort of process for Apollo, wrapping him up in a kind of giant cool pack. Do you know how long he's going to be a lil Eskimo for?

They say 72 hours, and they're using IV and cooling blankets. He's a tough little fighter, very proud and forcing myself to be positive.

I'll have a coffee and a chocolate hobnob if you have one Grin.

Well I wanted to cry buckets when he went through the ticket barrier an boarded the train, I stood there for 15 mins until it pulled out. He txt me at 8pm, it said
18 of us sharing a billet but the foods good!
He will be fine and enjoy it Im sure, but Im missing him already......

Trips- I'm sure Thomas will be fine, and I think you will find its an outside examiner whonmarks the work. Even if it isn't, and the teacher markes her down, you can always ask for the work to be reassessed by an outside examiner.

Good morning, its chucking it down! James has gone off to Cambridgeshire with the ATC flying, me thinks he is going to be disappointed :(
I cannot stop thinking of Estar, I am heart broken for them. I have just pmd the local vicars wife who is young and bubbly and lovely, I thought a few extra prayers would not go amiss. Just want to do something, awful awful time, life is so unfair isn`t it?

Weather in our part of cambs is fine trips - I've got washing out - so hoping your James has managed to get some air time if it wasn't too breezy.

Getting ready for st George's fayre tomorrow here. Have booked a stall to fundraise for our rainbows. Am really looking forward to it :) hoping the weather is dry if nothing else as it's always a great turnout.
