Week 4 (or 5!) Jan '25 Low Carb Bootcamp

BIWI · 27/01/2025 08:27

Morning all.

Spreadsheet, as ever

Although we're coming to the end of this particular Bootcamp, you'll see that @FinallyHere has added enough columns to the spreadsheet so that you can keep going, should you wish.

We'll also keep this thread going too, past the end of the week, for general low carb/Bootcamp chat and support - although I won't be starting a weigh-in thread each Monday after this one.

I know it's only been a short one this time, but looking at the spreadsheet, it looks like there have been some great results, even before today's weigh-in. Flowers

@LCagain well I tried the bread. It didn't rise very well so it's not going to make a sandwich but it tastes quite nice, like rye bread I'd say.

Possibly I need a smaller loaf tin for next time.

LCagain · 11/03/2025 16:05

@CleanQueen123 the things that have worked for me in case helpful - not expecting it to taste or look like bread (may be the most important!), adding more baking powder, more almond and less flax, additional flavouring eg rosemary/seeds. Mine doesn't rise massively either but it's so dense you don't need much to fill up... a couple of small slices with a topping seems plenty for me

Thanks for the tips. I made a sort of open chicken sandwich with it for lunch and it was delicious. Bready enough to feel like a sandwich and as you say, it's dense enough that two small slices was more than enough.

Yay down 5.75 lbs this morning!
Have been back to LC this month.
Trying to remember to drink more water still!

Tooth extraction today. Guess I will be fasting for the next couple of days too 🙄

Almahart · 12/03/2025 09:32

Fell off the wagon at the weekend, but I knew I would as had a big family event. Back on it and am 1.5 pounds away from where I was last week. Planning to stick with this now until I have lost a stone

The last few times I made it, I added an extra egg and it is a little lighter and softer with a better rise.

Whoop! Am very happy to be able to report a loss this morning! Down from 14st6lbs to 13st13lbs this month.

There's something really encouraging about seeing the next stone down 🎉

I'm going away in a month to a beachy holiday so aiming to shift another 2lbs each week before then.

I love this area of Mumsnet. Thank you to everyone who supports and encourages each other here 💛🌺

KittenPause · 13/03/2025 12:10

Fantastic @NoCarbsForMethat’s a great loss

KittenPause · 13/03/2025 12:11

I don’t mind the MN updated site but for the annoying fact on my iPhone app I can no longer press the ⬆️ ⬇️ arrows to get straight to the last posts. So I have to scroll through hundreds to get to the end. Very annoying

KittenPause · 13/03/2025 17:02

Oh I’m wrong it actually does send me to the end but leaves the OP original post which confused me

Excellent. I'll give that a try next time. Thank you!

Brilliant news, that's a real boost!

Thank you.
I know the first 1/2 stone is probably water weight and I stalled around here before xmas, when I put loads back on. Will try not to this time!

Appalonia · 13/03/2025 19:06

I had an idea today, do you think it would work to simmer leeks, celeriac and cauliflower in chicken stock, drain it and then make fritters with it? Am struggling to make carb substitutes, but thought this might be interesting...

Appalonia · 13/03/2025 19:12

Also I had steak in a lovely mushroom and cream sauce tonight The sauce was lovely, but the steak turned out to be mainly gristle! I'm really bad at knowing what is a good steak to buy ( is not a stewing steak ). Does anyone know which supermarkets steak is the best one to get?

KittenPause · 14/03/2025 00:32

@Appaloniaif you salt the steaks overnight or at least an hour before cooking on a high heat they turn out better.

prettybird · 14/03/2025 00:43

I get good steaks from Lidl: their deluxe sirloin steaks are good and if I’m feeling flush - or have 10% off - I’ll get their extra thick grass fed 30 day aged fillet steaks.

KittenPause · 14/03/2025 02:04

I have to say I agree with @prettybird in that some of Lidl's steaks are delicious. I find it hard to find a decent steak but I've had some great Lidl ones. I'm really into Pork chops though at the moment.

CleanQueen123 · 14/03/2025 07:18

Another vote for Lidl steaks, especially the thick cut grass fed ones!

It would probably work out better if you just grated the veg raw, then bind it with something like some ground almonds and egg yolk. Then slowly pan fry till it’s cooked through, raising the heat when they’re tender, so that they brown and crisp up a little. That’s what I’d try anyway!

OP posts:
BIWI · 14/03/2025 10:46

… or alternatively, make a mash with the cauliflower, and then mix that with grated leek and celeriac - so the mash is the binder. I’d think that if you cooked all the veg in stock first, it would be too sloppy to make a fritter.

But worth an experiment!

Thanks. I'm a ' super taster', so things like cauliflower etc taste horribly bitter to me, and I'm always trying to find ways to get them to taste nicer!

Thanks for the tips about Lidl for steaks, I never normally go there, but will get try it out.

I made a delicious mushroom sauce for my steak tonight. I chopped up mushrooms, fried them in butter with garlic, added mushroom stock, cream cheese and cream. Yum!😁

Appalonia · 14/03/2025 19:03

Also, I've been on these threads before, but right now I'm just trying to lose 7lbs for my 6 week trip to Thailand. I've not been away since before Covid so I'm super excited about it!😁

If you make a mash from the cauliflower, that should reduce the bitterness, I would have thought.

somanylights · 15/03/2025 04:52

@Appalonia do you ever roast cauliflower, if you find it bitter? I'm loving it roasted with turmeric atm (plus oil and salt and pepper).

With the steak chat, I slow cook cheaper steak cuts a lot these days, because it never disappoints; nothing worse than a less-than-ideal expensive steak! I've also started slow cooking chicken breasts in coconut milk and lime (rub in S&P, turmeric, garlic and fresh ginger first), then 3h at 140. I shred it and freeze for lunches.
