Week 6 - Christmas Low Carb Bootcamp

Evening all!

Starting next week's thread now as I"m off to bed shortly.

Here's the SoF

Last week's thread - after the trolling - ended up a little quiet, so I hope people weren't scared off. It's always good advice to ignore the trolls! But also, if you have been lurking, please come out from the shadows and tell us how you're getting on!

This week is the last where we're doing a hybrid (you are, aren't you?), so Bootcamp during the week and Bootcamp Light, if you want, at the weekend.

I realise that as we get nearer to Christmas, and there is more and more stuff in the media about Christmas cooking, that it is more challenging. But hold fast, and you will only benefit!

Good luck to us all Flowers

Thanks BIWI.

BIWI · 21/11/2021 23:34

And here's this weeks' recipe:

Idiot Proof Diet - Spanish Chicken

serves 6-8

olive oil for frying
1 small onion, sliced
6 best quality pork sausages
8 boneless, skinless chicken thighs
225g chorizo sausage
1 tinned pimento or 1 red pepper
1 tablespoon paprika
400g tin chopped tomatoes
25g fresh parsley, chopped

  • Pre-heat the oven to 170/GM3
  • Heat the oil in a large ovenproof saute pan or cast-iron casserole dish and fry the onion until golden. Add the sausages and brown on all sides, then do the same with the chicken thighs
  • Chop the chorizo into bite-sized chunks and add to the pan along with the pimento or pepper, the paprika and the tin of tomatoes
  • Put the lid on the pan and bung it all in the oven for about 2 hours or until the chicken is tender. Check halfway through, and if it looks a bit dry add a very little chicken stock or water
  • Stir in the parsley before serving

When I made this I did it slightly differently. I used 4 skinless chicken breasts, sliced up, and I added some garlic (3 cloves) and used smoked paprika instead of ordinary. It takes a lot less than 2 hours to cook if you use breast meat - I reckon it was probably cooked after 45 minutes. Don't overcook it as the meat does go very dry

But it was yummy. DH had his with rice, and I did braised fennel to go with it

Placemarking by saying that I love the way that everyone - without any formal communication about it - has instinctively moved on from the drama without mentioning the name of any particular poster involved Grin

I luffs you all Smile

The way to make new friends is to not just to be welcoming but to contribute constructively - not just specific advice or questions (depending on where we are on our LCHF journey Wink) but also sharing snippets of our lives Thanks

After all, a friend in many cases was a stranger until you got to know them Shock. Over the years I have made many new friends - both real and virtual - via MN. Some of my FB friends I "met" via MN but I can no longer remember their MN name Confused And not a hairy trucker amongst them Grin

prettybird · 21/11/2021 23:44

There you are with the peppers again @BIWI HmmGrin

BIWI · 21/11/2021 23:46
Grin

It's a conspiracy, sure it is.

ZiggZagg · 22/11/2021 02:14

Hi 👋

I missed all the drama!

Never mind, back on it after a crazy few weeks at work and home - feeling mentally ready for it but physically haven't been able to Sad

Anyway, onwards and downwards Grin

FungalLurkins · 22/11/2021 06:55

Hello! Sorry, I slipped back into my lurky ways but have been here throughout. I have been enjoying this bootcamp a lot. I needed the reset. I haven't and won't post about the specifics of what I eat as while it is all basically within the rules, I don't focus just on LCHF but give as much thought to making things planet friendly and gut friendly. Which means I tend to eat things that a lot of people would find boring/pointless/just a little bit outside of the rules. Currently going through a mini crisis of conscience as I went back to eating (v good quality local organic) eggs for this bootcamp and have just listened to something on R4 telling me that actually good eggs are worse for the environment than bad eggs. Bah!

It's basically a totally pointless endeavour trying to do the right thing. I don't recommend it.

Aderyn21 · 22/11/2021 07:01

Good morning all and good luck for weigh ins today.
I’m down 0.8 of a lb! So I’m thinking this must be my stalling week since I did lose during the notorious weeks 3 & 4. Also due a period which may not help.
Am slightly ‘grrr’ at dh, who has been doing this woe with me but has still had the odd slice of bread/bit of sugar and the weight seems to be dropping off him!
We are both staying away from all alcohol until Christmas though.

ditavonteesed · 22/11/2021 07:02

Morning everyone.

I got up way to early today. Heading to the mall for Christmas shopping this morning. I have bought everything for friends and family but nothing yet for dds. No idea where to even start they have everything they want.

I was trying to look for a pretty dress for party season last week but ended up ordering 2 boiler suits. Whilst I love them they aren't exactly formal wear 😂.

Having for the first time in my life achieved my New Years resolutions last year I am starting to think about what they might be for next year.

I will weigh in shortly. I avoided last week as I had put on but actually it's important to record that too. Help to get my head in maintenance mode.

Also I can't decide what to do with my hair. I shaved it all off at the start of first lockdown as I was paranoid about germs getting on my hair (I know 🙄), have had it in a pixie cut since but might grow it out as I hate hairdressers. Looks awful at the moment. I've bought a wig for Christmas parties till I decide.

What's everyone else up to?

MercedesBenz · 22/11/2021 07:35

I missed last week due to various reasons
And wow what a week to miss , but I read the thread to catch up
Not been great this week and did the two up, two down all week.
Will draw a line under last week and will post todays weight

mrshoho · 22/11/2021 07:51

Good morning everyone. Thank you for the Spanish Chicken recipe BIWI. I like the sound of idiot proof 😁.

I'm down 2.2 and feeling good. The four of us went to a show together for the first time since covid appeared and it was amazing. Bonus being that we were bumped to the front row. I've never been that close to the stage at a theatre so was an amazing experience. Food wise I'm doing ok but feel like I'm having more meat than I should. I'm enjoying it but think I need to have more vegetable only dishes so will work on that. Having a chicken ceasar for lunch and a stir fry for tonight.

Countdown to Christmas now we've had the birthdays. I don't really know where to start!

Glenthebattleostrich · 22/11/2021 07:52

Morning!

2lb off this week.

Tired today, woke at 3:30 with my period starting and by the time the pain killers kicked in it was getting up time. Had an exhausting weekend too, so roll on Friday for a long lie in.

Today I'm having eggs for breakfast, manchego wrapped in serano with crudités for lunch and Spanish Pork for tea. It's basically the recipe above but I add a pinch of tumeric in there too and do half ordinary and half smoked paprika.

BIWI, come clean. The peppers industry habe been speaking to the celeriac growers and are now paying you to push their products. You can tell us 😁

Jollyholibobs · 22/11/2021 07:53

Progress here with a 1.4lb loss. Have some travelling for work at the end of the week. Will need to plan food to take with me.

All this talk of Xmas shopping….sticks head back in the sand.

MotherBuckets · 22/11/2021 08:14

Gah, typed big de-lurking post and lost it...
On a freezing platform waiting for my train to Leeds, fingers going numb so will just report -2.7lb and 12lb overall. Still a long way to go but feeling v positive about it today Smile

prettybird · 22/11/2021 08:17

Welcome @MotherBuckets Thanks - and congratulations on your loss, both in the week and overall Smile

MercedesBenz · 22/11/2021 08:23

As expected stayed the same , no loss but tbh not surprising
Loving the chicken recipe, will try that thanks

H1Drangea · 22/11/2021 08:24

Been a self sabotage idiot all weekend , so have posted last weeks weight as an incentive to be more aware ( and not eat the biscuits )

Frenchpoodle · 22/11/2021 08:33

Morning all. Stayed the same this week (I’m on notorious week 4, so not letting it get to me). 9lbs down all together. Going to drink all the water and go to the gym a few times this week and fingers crossed for a woosh!

Had a Nigel Slater partridge recipe last night, pot roasted with celeriac, which was then mushed with cream into a delicious sauce! Served with cabbage and leek. Starting to feel a bit festive.

Good luck everyone with the weigh in. Brilliant loss @MotherBuckets

BestIsWest · 22/11/2021 08:34

Morning. Measuring not weighing but sts. Bit under the weather yesterday and today - absolutely exhausted to be honest and just want my bed.

Dellabob123 · 22/11/2021 08:55

Thanks for the thread and recipe @BIWI
I have used idiot proof for years now and that dish is delicious!

I am nearing the end of my 5 mo the on LC now and still losing either lbs slowly or inches. Another lb down this morning and clothes are so much smoother and more comfortable.

I did a couple of kettlebell reps yesterday to focus on The tummy wobble bit. Slowly slowly.

Have fab weeks everyone.

HillsBesideTheSea · 22/11/2021 09:20

I am going to be honest, I went quiet because I just cannot keep up with the thread.

I have a quick question. I did not manage to weigh last week, and it is throwing my numbers out. Would it be worth entering the weight from the previous week to settle the calculations out? It currently looks like i lost 200lbs in a week, which is a bonkers number.

pinknsparkly · 22/11/2021 09:29

I had a lovely weekend with my sister coming to stay, but definitely didn't stay on track and am 2.3lb up as a result. Frustratingly, I'm a slow loser and that's a little under 3 weeks worth of weight loss regained in a single week Sad it's a good learning point for me though, and I think long term I might try to weigh in weekly (give or take) as realising I've gained this week has really sparked my motivation to make sure I lose again next Monday!

KeyLimePies · 22/11/2021 09:57

Morning everyone. I'm reporting a 1lb loss this week, so about 5lb loss overall so far - it's quite slow and steady, but it is happening. I'm looking forward to getting below 160lb though, which hopefully might be next week.

off to have breakfast of scrambled egg and sausage as it's one of my wfh days (it's much easier to keep on track when I'm at home)

Hope you manage to rest and feel better soon @BestIsWest.

@Glenthebattleostrich, the Mirena coil sorted out all my period related problems (v painful and v heavy) - is that an option for you?

Learningtofeminist · 22/11/2021 10:08

Hello everyone,

Just want to say a big thank you to @BIWI for doing these threads. When I stumbled on the coming out of lockdown one back in 2020 it was the first time in my life I actually felt in control of my weight - although I had to go back to carbs for a while. Now I've lost 9lb in 3 weeks and wore some pre-pregnancy jeans yesterday! It wasn't quite a comfortable fit Grin but I'm looking forward to packing all the maternity trousers away!

I'm just starting week 4 so it's been a huge help last week to know that weeks 3 and 4 are hard for everyone - had small losses in weeks 2 and 3 but hey, every little counts! I'm now just 1lb away from my weight before pregnancy no.2 (about 7lb away from pre-fertility treatment weight, and 12lb away from the weight I was before the first fertility treatment 5 years ago that resulted in child no.1 - but celebrating each milestone as I reach it! It is a bit annoying though isn't it, that even if it's the father who has the fertility issues it's the mother who has to go through all the treatment - damn biology Grin )

I also can't keep up with the threads but I did scroll all the way through last week's to find out what the 'drama' was (bit of a letdown to be honest, next person who wants to kick off can you make it more scandalous please?) Grin

Learningtofeminist · 22/11/2021 10:10

@HillsBesideTheSea, in your position yes I would definitely enter the previous week's weight. I entered my starting weight on weeks 1 & 2, because I got on this bootcamp a couple of weeks late.
