Week 3 - Pre-Christmas Low Carb Bootcamp

BIWI · 31/10/2021 22:54

Well, doesn't time fly?!

We've already completed the two, hardest weeks of Bootcamp.

So now, things get a bit different.

During the next 3 weeks, you'll be doing strict Bootcamp during the week, but at weekends, you can relax into Bootcamp Light. This means that you can introduce some fruit - in the form of berries - and some nuts/seeds, albeit occasionally and in moderation, and some alcohol - again, in moderation - and restricted to clear spirits with zero calorie mixers, and/or dry wines

As ever, here is the Spreadsheet of Fabulousness

I sense that you're all coping really well, although it's also evident that there a lot of practical and (particularly) emotional challenges that are rearing their heads.

Stand tall and stay tough!

This WOE is not a very forgiving one, so it's important that you stick to the rules as much as you possibly, possibly can. I know that real life gets in the way sometimes, but the more you can resist all those obstacles and challenges, the better.

Here's to another successful week!

HOWEVER

I do need to warn you, if you're new to low carbing/Bootcamp, that weeks 3 & 4 are very, very challenging. Your body is in the process of transitioning from burning carbs to burning fat; you have lost a lot of water weight, emptied your glycogen stores and have started burning fat. The next two weeks you need to see as consolidation weeks - you may not see much movement on the scales while this is happening.

DON'T PANIC!

You know that it works, because you've lost the weight in the first fortnight - so just KOKO (keep on keeping on), and all will be fine.

This is, though, the reason why - on this Bootcamp - we're aiming to stay strictly Bootcamp during the week. To give us the best chance of losing as we can.

Very good luck to all of us Flowers

This week's recipe is a fish one - seeing as how we've had a meat one and a veggie one!

Baked Marinated Salmon

One salmon steak per person

Marinade:

1 inch fresh ginger, peeled and finely chopped
2 large cloves garlic, peeled and finely chopped
2 tbsps sesame oil
2 tbsps light soy sauce
juice of a lemon or lime
black pepper
sprinkling of dried oregano
sprinkling of dried chilli flakes (optional)

Mix together.

Put salmon pieces into a (non-metal) dish, pour marinade ingredients over them
Leave to marinade for at least 30 minutes
Wrap pieces in foil and bake in a hot oven for 15 minutes

This is lovely served with stir-fried veg - so typically I'd do finely shredded cabbage, baby sweetcorn, mangetout, pak choi. I sometimes also serve it with Bare Naked Noodles

I’ve been told this morning that I shouldn’t exercise (thank you!) because I had a microneedling skin treatment.

I realise how first world this is but delighted to drink water and give my poor old muscles a rest.

Sorry about your COVID, prettybird, hoping you get through it well. Flowers

How is everyone else with COVID households doing?

mrshoho · 04/11/2021 19:32

Evening all, day 4 here and after a hellish shakey and shivery day yesterday (carb withdrawal?) I woke today to a clear head and a ton of energy. My carb intake had reached crazy levels so I think my body went into shock Shock Lunches have been chicken ceasar, dinners have been our usual but without the carb portion for me eg lettuce leaves instead of taco boats and burger with no bun and haloumi fries. I'm going to try and plan some nicer meals at the weekend when I have more time. It's only day 4 but my jeans were definitely more comfortable today! The water is going down well too!

prettybird · 04/11/2021 19:38

Official PCR result through. Booked at 12.22 for a drive through between 1 and 1.30. Result arrived at 18:50 (although dh's still hasn't come through Confused) Positive Sad but I didn't expect it not to be

So I'm now stuck indoors until the 12th. Hmm

I'd only just bought a pair of tickets for Murrayfield for Sunday Shock And ds is coming down from Aberdeen to go to the match - he goes with my dad but the fact that we had tickets means that we could've driven them over (neither my dad nor ds are happy about driving on the motorway in the dark - it's why ds was desperate to pass his test).

TrueGrit54 · 04/11/2021 20:51

prettybird really sorry to hear that. Hope you don’t get a bad dose, fingers crossed. Shame about the rugby.

Pleaseandthankyou · 04/11/2021 21:09

@prettybird hope you are ok. DH and I have been ill all week but tested negative . I have been dreading a positive test. I made soup with whatever was in the fridge and chucked in plenty of ginger, garlic and chilli.

NotwatchingSpooks · 04/11/2021 21:27

@prettybird 💐 hope you feel better soon.

I went out for an afternoon tea today, at an RHS garden, but I just had a coffee whilst my dds chomped their way through it 😀 . It was a lovely trip out and I was so pleased to be able to enjoy it without eating any of it.

I’m nearly 2lbs off since Monday and I’m determined to keep it off and get back to my pre COVID weight. As others have said I feel so much better than at the start of bootcamp that it feels worth it.

prettybird · 04/11/2021 21:28

I felt worse with the mega-cold doing the rounds a few weeks ago. Just sneezing a lot now! Had a temperature yesterday morning but seems to have gone now. Taking regular paracetamol as I have a bit of a headache - but in fact the headache was worse during the mega-cold. Confused

Rayna37 · 04/11/2021 21:56

COVID hitting my household too though less directly. This weekend is DHs birthday with lots of plans to compensate for a big birthday last year in lockdown. However his good friend now can't come to stay after testing positive. Meanwhile I was going to my parents who were looking after DS while I went to a gig with a friend, a twice postponed Xmas 2019 gift which unfortunately now clashes with the birthday, but now my DF has Covid too! So I'll just go for one night on my own leaving DS with DH hampering his night out (unless DSD gets back from uni in time to step in). Either way we have a nice meal for the four of us booked for Sunday. Best laid plans!

In food news, loved my new tamarind sprouts recipe, and have a portion leftover for lunch.

Shallwegoforawalk · 04/11/2021 21:57

I'm still here too and wanted to say thank you for the support for the DH issue. We have had a couple of chats and he's got a better idea of what low carb actually means now (not NO carb!) Although the idea that fruit and veg have carbs was new to him ConfusedGrin

Tried kale "crisps" tonight as a snack for us all. Just roasted some bagged kale in oven with salt, oil and chilli flakes. We polished off the lot and DC has asked for more tomorrow night! So that's a win.

Rayna37 · 04/11/2021 22:06

Silver lining for me is less time away from home, more control over my food, and getting to stay at my friend's place for a proper catch up. Also time to listen to podcasts on the journey not Funkids bloody Junior...Trying with some success to wean DS off this horror and onto Classic FM! He's pretty sad not to see Granny though.

prettybird · 04/11/2021 22:24

We've opened a bottle of Cava. Purely to test that we can still smell and taste it Wink

Rshard · 05/11/2021 06:26

Sorry to hear about your positive covid result prettybird, the cold and headache sounds exactly like my dd’s experience of it the other week. Amazingly neither dh nor I got it. Hope you feel better soon and that the taste/smell test went well!

NotwatchingSpooks · 05/11/2021 09:26

Morning all, for the first time this week we have a blue sky here which always raises the spirits . This week is going well and the scales are very encouraging, however we have lunch at the in laws tomorrow which may be tricky as I’m just not sure what will be on offer.
I’m planning to pop to the shops today and to take something that I can eat to add to the lunch spread 😉. I will also make double the dinner tonight so that there is something ready in the fridge for when I get home.
Have the same issue on Monday, but that’s much easier as I’ve already said that I will take something 😀

If I can get through this weekend without gaining , I will be nearly half a stone off, so I am determined not to undo my hard work.

Any tips or good buffet dishes welcome

BIWI · 05/11/2021 09:32

@NotwatchingSpooks there's a lovely recipe on one of the recipe threads for a shallot and gruyère tart, which uses almonds for the pastry base. There are two different versions of the recipe, one with bacon/lardons and the other without.

HaggisTheGreat · 05/11/2021 09:35

Ooh, @Rayna37, could you please share your tamarind sprout recipe? I was just wondering what to do with the pack that’s lurking at the bottom of my fridge…
I’ve found it a bit hard to get back into the Bootcamp mindset this time, especially with half term etc, but hopefully am now in the zone. Enjoying the water and lots of herbal teas.
Also second the recommendation upthread for Cheesies as a good crunchy snack - currently on 3 for £3 in ocado, so not as cheap as chips crisps, but nice for a treat.

BIWI · 05/11/2021 09:40

Here's the recipe, @NotwatchingSpooks:

Bacon, Shallot and Gruyere Tart

serves 6

225g ground almonds
55g butter, diced
1/2 teaspoon salt
1 egg white

for the filling:

25g butter and a splash of oil (this stops the butter burning)
100g smoked lardons (or diced smoked streaky bacon)
2 cloves of garlic, finely chopped (or use a garlic crusher)
150g shallots, thinly sliced (this will be 3-4 echalion shallots)
2 eggs + 2 egg yolks (the white from one of these is used in the base)
dried oregano
100g Gruyere cheese, grated
300ml double cream
salt and freshly ground black pepper

Preheat the oven to 180C/350F/GM4

To make the pastry, mix the almonds, butter, egg white and salt until it forms a dough. This is easiest done in a food processor. Keep processing it until it starts to come together into a ball.

Press the dough with your hand/fingers into a 20cm flan tin or dish. Push the pastry up the sides of the tin as well. There is quite a lot of filling, so it's important to get the pastry as far up the sides as you can.

Prick the base of the flan all over and bake in the oven for 20 minutes or until set and golden brown. (It's better if it's cooked longer, as it hardens up a little more - just keep an eye on it and make sure it doesn't burn)

While the dough is cooking, saute the shallots, garlic and lardons/bacon in the butter and oil, till soft. Season with salt and pepper and about a teaspoon of dried oregano. Leave to cool.

Next, whisk the eggs and yolks, and then gradually add whisk in the cream. Add black pepper and whisk again.

Tip the shallots and bacon into the flan case and add the cheese, then pour over the egg and cream mixture. (It's a good idea to put the flan tin onto a baking tray, as it is likely to be very full, and this makes it easier to get into the oven without spilling anything)

Bake for 25-30 minutes, or until golden brown and just set. Serve warm or cold.

27.35g carbs for the whole lot. If you serve 6 people, this will be 4.6g per person.

Hi everyone. Sorry I have been absent last few days, DS had to go back to hospital. We are hoping to go home at some point today. KOKO everyone, I’ll have a proper catch up with you all later xx

BIWI · 05/11/2021 09:46

Sorry to hear that @ListenLinda - hope he's OK and you're home soon.

OP posts:
NotwatchingSpooks · 05/11/2021 10:03

Thank you @biwi I will make that 😀 just need to get the ingredients, I have everything except the cheese, quick look in the fridge we only have cheddar or mozzarella
@listenlinda thanks for update, hope he is home soon

TrueGrit54 · 05/11/2021 10:04

That’s tough ListenLinda hope you get home today.

I feel in the swing of things again after an iffy half term. Have decided Sunday is my trickiest day, we are a traditional Sunday roast lot and the gravy/potatoes/root veg wink at me. I just need to fill my plate with all the green veg and the meat. Have a good day everyone.

Tried itsu crispy seaweed thins (on offer) as a crisp alternative, nearly threw up! DH thinks he can eat them.

prettybird · 05/11/2021 10:24

I don't like the seaweed thins: I find they're too thin to be "crispy" Confused

Rayna37 · 05/11/2021 10:45

I really do not like the seaweed thins either! Grin

I've added in my weight from the beginning of this week, hopefully I haven't messed anything up as it showing I have a 100% weight loss. 🤔
It's been about 5lbs I think
