Week 4 - Low Carb Bootcamp - how much chatting?!

BIWI · 07/02/2021 21:30

So much chatting, I've had to start a new thread.

here's the Spreadsheet of Absolute Fabulousness

Remember, this week (like week 3) is notorious for seeing little or no weight gain, so please don't panic if the scales aren't moving for you - always assuming, of course, that you have been following the rules 100%!

Also, the Very Amazing @StuntNun has started a thread about fasting. Fasting isn't a regular part of Bootcamp, but it's a tool that you can use in your weight loss 'journey' (sorry for the cliché!)

have a look here, and think about if it's something you might want to incorporate into Bootcamp

I hope very much that things are going well for you, and that you're into the swing of things low carb by now; but as ever, post any questions/issue here and let's see if we can help.

Thanks to all for the tips for my birthday. I do adore a peanut butter and chocolate combination so I might try setting them together.
@BIWI
Thanks for your words of wisdom. I had 15g of air fried plaintain chips- they are more like crisps tbh because I was making them for my little one and he didn't like them, but I relished the salty crunch.
I have found some roasted seeds with a negative carb balance at Tesco which I shall use henceforth.
The cake was for my little one and family. He gets excited about these things. I wanted to make it low carb because my husband and mil both need low carb foods as well, they are diabetic. But you are right. We shall all have dark chocolate tipped strawberries and cream. And play in the snow- yay!

Ninkanink · 09/02/2021 09:43

You could make a chocolate mousse and serve it with cream and berries, or top it with chopped nuts!

BIWI · 09/02/2021 10:11

@Underthebludgeoningsofchance

What does this mean?!

I have found some roasted seeds with a negative carb balance

No such thing as a negative carb balance, as far as I'm aware!

Jollyholibobs definitely stick around so that we can chat about how maintenance works. There are a few different approaches to weight loss maintenance on a low carb way of eating.

Lyrata I did make the steamed eggs but the stock wasn't mixed properly and the electric steamer dripped on them so they didn't come out with a nice smooth top. It's got me wondering about making a low carb egg custard from eggs, cream and vanilla.

Ninkanink that sounds like a cue to share my favourite low carb chocolate mousse recipe again.

Ninkanink · 09/02/2021 10:28

@StuntNun I’m going to make that mousse for our Valentine’s Day pudding! I’ve got rose petals to scatter over the top, and I think I’ll add a tiny bit of rosewater too, for a hint of Turkish Delight.

Underthebludgeoningsofchance · 09/02/2021 10:28

@BIWI
I mean the total carb count minus the total fibre count as the fibre prevents the carbs reaching the blood as quickly. Net carbs.

So the seeds have 7g carbs/100g but also 10g/100g fibre. So you have a negative carb balance. I ucannot even eat 25g seeds in one go as they have 45g fat per 100g so figured that it was worth a go when I need the crunch other than from celery.
Pls let me know if it is too much. I have no intention of sabotaging myself. I have chosen to do this and it has worked. My clothes fit better even though it looks like a gain this week.

Underthebludgeoningsofchance · 09/02/2021 10:29

@Ninkanink
Thank you. I will give it a go.

We don't subtract fibre in the UK. That's an American thing. The carb count on the pack is the carb count.

@StuntNun

Thanks for that link! I don't have a sweet tooth, fortunately, but can see reading down the comments that the recipe is originally from the legendary Francoise Bernard. I've just ordered one of her books to find further French inspiration, so thank you Flowers

nowlook · 09/02/2021 10:54

@Underthebludgeoningsofchance If you're looking for crunch, may I recommend the humble radish? Wonderful crunch and flavour. Work well on their own in a salad; with butter and salt as a snack and someone (think it was Lyrata) has roasted them before. Think they were almost potatoey, but you do need a shed load for that as they shrink.

Lyrata · 09/02/2021 10:55

@StuntNun I just tried it with milk + eggs + vanilla and it wasn’t great - just very plain. I poured some double cream on it and that improved it. I should have started with cream.

I don’t know why I’m attaching a photo, you can’t really see much difference.

Lyrata · 09/02/2021 11:04

@Underthebludgeoningsofchance and @nowlook - yes I love a radish.

You can roast them - cut them in half first even if they’re small so water can get out - it takes me maybe 25 minutes on 170-200. But they do shrink by about 50% so you need loads. I’d recommend at least 3 packs (I think that is 600g) for two people and I often do 5 or even 6 packs (but I think under-serving vegetables is a near criminal offence).

They are also delicious pickled but I like them best with toast and butter so my pickled radishes just sit in the fridge now!

Ninkanink · 09/02/2021 11:04

@Underthebludgeoningsofchance I’m sorry if you’re veggie (can’t remember who in the group is and isn’t), but do you like pork scratchings? If you do, that’s my go-to when I need proper crunch. Or maybe get yourself some of the seriously low carb bread to toast til it’s crunchy? Cheese crackers are also good (basically just cheese baked until melted and left to get crispy).

Some days are just crunchy days and you need something that properlj hits the spot. Has anyone managed to make crisps with celeriac? Wonder if it might work in an air fryer...

Razzlefrazzle · 09/02/2021 11:19

Didn't weigh yesterday but today I have STS. Happy with that because the too tight jeans pulled up much more easily today than last week. I feel bad I'm not posting more on the thread but I am reading it all. My low carb bread is on the way which I'm very excited to try and cheeseburger pie is ace!

I am amazed to no longer feel hungry because I am a life long comfort/boredom eater. Life has been very stressful in the last year and I've piled on the weight. I am so happy to find a WOE I enjoy that is working. I'm probably having a bit too much dairy but I need something that feels indulgent to counteract the stress of homeschooling a very reluctant DS10 and trying to look after the mental health of my autistic DS12 who has been school (and home working) refusing since before lockdown 1.

Reading everyone's chat, tips and successes is keeping me focused so thank you.

MadamBuxton · 09/02/2021 11:27

Hi all I hope you don't mind a newbie joining in? I've been lurking and reading up over the last few weeks and I'm really enjoying this thread with all its positivity and advice.

I feel a bit of a fraud because I'm doing not-quite-bootcamp. It's my first ever attempt at a LC WOE and I'm only on week 2 but somehow the scales are telling me I've lost 6lbs already! I only want to lose a stone, so that's huge. I'm following nearly all the BC light rules but where I've deviated is that I haven't cut back on tea and coffee with milk (a few cups a day each with a 'normal' amount of milk in) and I've had a bit of booze (a handful of vodka, lime & soda's over the weekend). I've not measured water intake either so I know I will have fallen short there, although I'm definitely making an effort to have more than I used to and I'll try to improve on that this week.

I'm actually really enjoying the food I'm eating and it's been a revelation to use butter etc. with abandon! I've been using some of the recipes on here and so far the only things I've missed have been a naan bread with my Saturday curry (still had the curry with cauli rice but usually I'd have normal rice and homemade naan) and wine/G&T. My old habit was to have some chocolate or other dessert every evening (not loads, but consistently every day) and I've managed to resist that and am hopefully on the way to breaking the habit - greek yoghurt is my friend.

Can I ask what those of you who are BC veterans do when not bootcamping? Is there a different set of less strict rules you stick to or does anyone do a sort of part-time BC e.g. BC in the week, off-plan at the weekend? I'm trying to plan ahead for when I get to where I want to be and how I'll maintain. I don't think I understand the science well enough to know what would work - I have a slight fear that I'll eat one bowl of porridge and put all the weight back on...

Oneborneverydecade · 09/02/2021 11:31

@Razzlefrazzle you have my sympathies, home schooling here is not much fun but you have added stress. Roll on the weekend!

Ninkanink · 09/02/2021 13:23

Welcome @MadamBuxton! Flowers

Does anyone else get excited when the veg box comes? I feel like it’s Christmas when I unpack the boxes (even though I know what’s going to be in them, barring necessary substitutions)! And this week it really was like Christmas because they sent us a complimentary veg recipe book! 😊😊

MarmaladeTeepee · 09/02/2021 13:23

Am I losing the plot??? There used to be a fish/seafood recipe thread didn't there??? I'm sure there was but now I can't see it! I'm going to do fish pie with a souffle topping (cream, eggs and cheese) and was just looking for white sauce options, can anyone help? Flowers

Ninkanink · 09/02/2021 13:24

Looking forward to having baked fennel at some point!

Week 4 - Low Carb Bootcamp - how much chatting?!
ouchmyfeet · 09/02/2021 13:24

I have been wondering the last few days if we can have too much fat? I keep reading comments from the pros here re making sure we have enough, but it's such a tough mindset to get out of. I've just had my lunch and I consciously added more fat. It was delicious, and i feel full having eaten it (but not overly so, not stuffed).

Does this sound okay?

2 egg omelette stuffed with a mix of chorizo, leeks, courgette and mushrooms (all fried in lots of butter, the omelette itself fried in oil)
Half a plateful of baby spinach (raw)
A whole avocado (partly to add more fat, partly as it was almost past its best)
Drizzle of M&S Caesar dressing (3.9g carbs per 100g)

I know I should make my own dressing but saw this and decided to try as I've failed to make a nice Caesar dressing myself

If there is a suggested fat limit or even target I think I would find it easier to plan my meals.

ouchmyfeet · 09/02/2021 13:25

I love roasted fennel @Ninkanink! It's on my plan soon too

Ninkanink · 09/02/2021 13:29

No, you really can’t have too much fat. Not unless you’re actually drinking vats of it, eating way, way more than you probably could without feeling a bit sick, and putting away a pack of butter a day...There really isn’t any need to worry about that. Listen to your body’s hunger/satiety cues and eat as much fat as you can. There is no limit on fat because you really won’t reach it. You also don’t need a target unless you’re tracking macros for some other reason. Keep things as simple for yourself as you can and just trust the process.

Ninkanink · 09/02/2021 13:31

@MarmaladeTeepee I had a look and couldn’t see it either! I wonder if it’s accidentally been un-stickied and fallen lower in the thread count.

Onelittlepiglet · 09/02/2021 13:42

@MarmaladeTeepee it’s here - just a little further down the page so looks like it has become unstuck!
