Morning all

Here's the Spreadsheet of Fabulousness.

We've reached the half way part now, and I hope you're finding it a bit easier - no more carb flu, and getting used to a different way of eating.

If you've suffered from the week 3, 4 or even 5 stall, I hope that this week you'll see the scales start to move (downwards!) again.

Loving the trifle flashbacks!

Our family had a tradition of "birthday teas" on the nearest Sunday, when we'd either go to my grandmother's or she''d come to ours. Bird's Trifle was always the afters, usually with raspberry but sometimes strawberry flavour jelly. My nan would always have made the jelly and the custard, but it was my job to whip the cream for the top and put the sprinkles on - yum!

Of course, now I'm GF, can't have those ghastly sponge fingers any more, so started using amaretti biscuits instead (the hard ones, not the soft ones). Haven't had one for years though.

Grr. My period has turned up five days early bringing an overnight 2lb gain with it. I know it's bloat and Wil go but it's disheartening to see the gain literally overnight

Stall as expected but I’m just keeping going.
I know I’m not having enough water though. I’ve bought a reusable bottle to try to encourage myself but I’m still really struggling.

Come & join me in the grumpy corner, Black. I thought my gain might have passed by this morning as, to put it politely, I had very active bowels last night but, no, still here at 146lbs. I couldn't get below this weight at all last year and am worried that the same might happen this year. It is the very cusp of healthy/overweight BMI for me but, crucially, too big for most of my clothes.

So some SVs (not on the SoF so just a quick summary)

1st Jan 141.4 lbs
4 weeks LCHF on my own, fairly strict but not boot camp strict
30th Jan 136.4 lbs
5th Jan 133 lbs
13th Jan 131.8 lbs

I'm 5'3" with a small frame so some way to go to get back into all my pre-Pregnancy clothes but going in the right direction. 4.6lbs for 2 weeks of boot camp not bad considering I'm in the healthy weight zone. Loads of great ideas on here helping. Will add in some nuts and seeds for porridge at some point but keep fruit and wine to a minimum for a while I think.

Morning all. Who's making LC pancakes today? I'm not a massive pancake fan and cam take them or leave them really. I did make keto pancakes when I was egg fasting, but I have coconut flour and was wondering if you can make a version with that? I need to use it up.

Made fathead pizza last night, it's so filling! Mine had mostly almond meal but a bit of coconut flour and I didn't like the coconut flavour aftertaste, a bit sickly!

I've made these a few times, they freeze well (between sheets of greaseproof paper) and toast up nicely so you can make a big batch. I do find like all LC pancakes they are a bit eggy and the break easily but still better than being tempted by the HC ones!!

I've got 2 unopened packs of ground flaxseed with BBE Nov 17 - any thoughts on whether it'll be ok to use? And any other good recipes to try?
Don't want to waste but that's now a good 2m out of date....

Flowers to those in need of them this morning.

Tiny gain today from my post injury weigh in on Thursday, so a total loss this boot camp so far of 4lbs but I'm heading towards my goal now so I presume these are the stubborn lbs! Onwards.

I'm not going to bother with pancakes to be honest ragz, I'm not a huge fan. DD has them every week, but will still want them tonight. I bought a new pancake flipper on Sunday as the one we had snapped - from over use I suspect!

Weighed this morning rather than yesterday because away yesterday. I've lost a lb, which I'm delighted about.

Didn't get round to weighing yesterday, but I'm down 1lb today from last Monday.

Rather surprising, since birthday celebrations spilled over to this weekend, both planned (meal out, Indian, really don't like low-carb options there and allowed myself to enjoy myself with naan, rice etc) and less planned (friends invited us to dinner on Sunday, she'd cooked me a birthday cake with her 3 year old and I really couldn't say no!). Last night was going to be a fry-up but DP got back late and didn't get round to it, so I ended up finishing up my birthday panettone. I suppose I also know that weight loss is going to be slow now, anyway, considering my BMI is slap-bang in the middle of 'normal', plus I'm exercising so, hopefully, building muscle. But I would like to see a further decrease in inches if not pounds, so I do have to get back on the wagon.

Could someone give me a leg up please?

TimeIHadANameChange belated happy birthday. Now that it's over for another year, just get back on track. Have you got meals planned for this week? Have you got easy go to meals for those occasions that your DH is back late or other unforeseen events? Well done on the exercise, what are you doing?

Weighed this morning. 1.8lb on. Losing the will. I am sticking to plan too. And running, I am on week 6 of C25k. So this is muscle, right? Right? Right!?

Kleptronic great work on the running. While it's great for health and toning, the impact on weight will be negligible. Maybe post some daily menus for some feedback from the collective minds?

Just made a version of Savoy cabbage carbonara for lunch inspired by the recipe thread. It was fantastic. Going to miss cooked lunch when I'm back at work which I'm not thinking about at all as it's months away thankfully

Have been experimenting today and made some cheesy scones using coconut flour. I adapted an online recipe for bagels. Just had one warm with butter and was really quite nice!

Hi everyone- got back on Sunday night but had the day off work yesterday so have managed to catch up with the thread. Some great scale and nsvs. Hello to new joiners!

Had a fab time skiing. The snow was perfect and we had sun everyday. In terms of food, breakfasts were great, cooked breakfast and continental available. Dinners were provided by the hotel so not much choice but I avoided most carbs apart from carbier veg. Lunches were on the slopes and fine. I did have some treats (tartiflette and a wonderful tarte tatin!). Drank loads of wine, and not as much water as it's such a faff to take off all the layers every time you need the loo!

Definitely bloated and a few lbs up by Saturday, but got back on the wagon on Sunday and back in the swing of things now.

Just had to sit through a department meeting where our lovely boss brought in pancakes, syrup, Nutella, marshmallows and choc chips. Not normally my sort of thing but I missed breakfast and it was over lunch so I was pretty hungry! Resisted and just had a lovely chicken, spinach, olive and feta salad.

Sorry for huge post, feels like I've been gone for ages!

I changed it slightly though!

I used 2 eggs
Big Tablespoon of butter
Big Tablespoon of cream cheese
About 50gram coconut flour
Half teaspoon baking powder
About 150g grated mozzarella

Melted mozzarella, cream cheese and butter in the microwave and added the beaten eggs. Then mixed in to the flour and baking powder until it formed a sticky dough. Bake on greaseproof lined tray for about 15 mins at 200 degrees. It made 5 scones. Might try adding garlic and herbs next time.

Dh just told me that when he was making cottage pie the other week, not wanting to contaminate my swede topping with potato while running the fork over, he licked the fork. Another fork???

The coconut pancakes mentioned up thread are nice. Bit eggy and you have to turn them quickly before they burn.

Thanks nekobus I ended up eating half a real one and deciding I really don't like pancakes, so I'll call that a win. They're pretty pointless really!

I'm going to try some low carb pancakes (but tomorrow not today as ds has gone out Confused somewhat missing the point Wink) - am going to do standard ones for ds and dh but make me some keto ones and serve them up with erythritol and lemon, to keep it low carb.

I've bought the M&S Valentines deal, which dh and I are going to have tonight (ds has rugby training tomorrow night, which means we have to eat quickly at 6.30): I chose the avocado, prawn and salmon mousse, followed by sirloin steak (going to make myself a Boursin, cream cheese and cream sauce) with carrot & swede mash (will make dh some oven chips and maybe some celeriac chips for me or yet more buttered brussels Grin) and then strawberries (got plenty of cream to serve with them). Will leave the chocolates for another time!

A wee word about TK's tiramisu, whivh I made at the weekend: it says to chill for at least 3 hours or up to 2 days in advance, to allow the layers/flavours to meld. I made it on Saturday and today I finished off ds' portion who doesn't really like coffee (there is still one more serving in the fridge) and I would say it is better now than it was on Sunday, when I served it Smile. It's as good if not better than any "full carb" tiramisu Smile
