Sounds ok, although the squash could be quite carby - I'm assuming you mean the vegetable and not the drink?

Yes, this was very bad - a baked potato is probably one of the worst things that you could have had

No wonder you gained so much overnight - you've simply re-filled your glycogen stores.
Drink plenty of water. Be super strict over the next couple of days, and get out and so some/more exercise.
