Starting today - low carb

Right it's time to get back in the low carb saddle. I basically follow boot camp rules. That works very well for me. I find getting into ketosis hard so making my public declaration of intent here. Planning to weigh and measure shortly.

So I'm starting today. Whingeing about carb flu all the way. Join me

Lordy, I do love low carbing. Just had brunch - a plate of scrambled eggs (cream and butter), bacon and mushrooms' both fried in butter, washed down with a cup of peppermint tea. Was so good. But when I walked past the mirror I noticed I had s very shiny, greasy chin. Oops Blush

DearPrudence · 25/01/2017 13:56

Thanks last. I'll give it a go

RupertsMum2 · 25/01/2017 14:05

Day 10 and still waking with a headache. I need to drink more water. I find it easy enough if I am home all evening but when boys have activities and I'm driving all over town all evening it's harder. A bottle of water in the car might be the answer.

B. Chicken thigh coffee with cream x 2
L. Tuna mayo, green salad, half avocado, grated cheese
D. Pork chop, mushrooms in butter & cream, cabbage

I like the sound of the duck. I'll need to have a look for it next time I'm in Lidl.

Flibbertyjibbit · 25/01/2017 16:18

Not feeling so great today (headache/nausea) so I thought I'd head out to lidl to re-stock fridge with meat & veg. As I managed to bypass lidl bakery I decided to try the Skyr protein yoghurt which is 4.6g carb per 100g so slightly high. I just measured out 50g in a ramekin - really tasty (only 2.3g carb) as a snack although I know I'm not meant to be snacking.

No ground linseed/flax meal so I've put an order in online, should be here tomorrow. I found this recipe online which I'm going to try out - flax pizza base

I picked up a celeriac - never cooked/used one before. Any tips/recipe suggestions?

nekobus · 25/01/2017 16:47

Flibberty I love a celeriac dauphinois - sliced thinly then into a buttered dish with cream (watered down a bit with stock or water) then covered in cheese and into the oven. I've done this one before:
www.greatbritishchefs.com/recipes/celeriac-dauphinoise-with-gruyere-recipe

LovelyBath77 · 25/01/2017 16:50

I had a lovely mushroom and cheese omelette for brunch and some seeds for a snack- having salmon, pesto for dinner with broccoli and coconut cream with cacao for pudding.

I noticed when I put it all in myfitnesspal it came to around 1,200 calories so even with the high fat it's not that high in calories. I know, it's not about calorie counting this woe but was quite surprised.

I'm finding I'm only needing brunch and dinner now, is anyone else finding this too? I often have a bulletproof coffee in the mornings (helps with the school run haha)

Flibbertyjibbit · 25/01/2017 16:56

ooo that sounds nice nekobus thanks, I don't have any gruyere in, might try it with parmesan/cheddar mixture?

boldlygoingsomewhere · 25/01/2017 16:59

Lovely, once I've started low carb I often find I only need 2 meals a day. For me, it's often breakfast and lunch and then I don't want anything for dinner. Easily gives me a 16 hour fast most days if not longer!

AdoraBell · 25/01/2017 17:00

I'm shiny new to this.

B - black coffee, natural yoghurt with a handful of defrosted blueberries and strawberries, a banana and some HM granola. That has honey in it.

Snack while out - cappuccino and small pack of nuts.

L - scrambled eggs, 2, with chorizo and cherry toms.

D- will be bolognaise with some fresh gf pasta that needs using. I ordered that before deciding to do this and am not rich enough to chuck away edible food.

Will look through the recipe thread to plan for next week. I've already eliminated cakes and biscuits when I realised that gluten doesn't suit my system. Now I want to drop as much sugar as possible from my diet.

Aderyn2016 · 25/01/2017 17:40

Have had a good day today. Went out for lunch and managed not to totally blow the diet. Had a chicken salad, no bread, no chips. Did have a small glass of red wine but consider that things could have gone much worse. I have never been put for lunch and skipped dessert before!
Apart from lunch I have eaten 2 small pieces of low carb bread, one with butter and marmite, the other with some almond butter. Had plenty of mint tea and not hungry at all. Having a no dairy day today, having had a fair bit over the last few days.
Had the munchies last night and ended up eating raspberries and cream before bed!

NotdeadyetBOING · 25/01/2017 18:24

I love celeriac, but am much lazier. I sometimes make mash with it (lashings of cream and butter, obv) - you can do half cauliflower and half celeriac and use hand blender.

OR - I just cube it and roast it in olive oil alongside other veg (cubed aubergine), fennel, courgette, whatever. I add dried thyme and oregano plus salt and pepper. Often serve with a dollop of mayo.

Welcome, Adora. It is quite a major shift in thinking when you starting LCing. For instance, fruit is actually pretty high carb and should be avoided other than the odd berry. It's not just added sugar you need to cut, it's things high in natural sugar (like fruit) and starchy stuff which just turns into sugar in your body as soon as you eat it (spuds, rice, bread, pasta, cereals etc.). Porridge is no longer your friend.

BIWI · 25/01/2017 18:40

AdoraBell I know we're not Bootcamping yet, but just wanted to comment on your post:

I'm shiny new to this.

Welcome! We'll hopefully give you a lot of support and help so that you can navigate your way into successful low carbing!

B - black coffee, natural yoghurt with a handful of defrosted blueberries and strawberries, a banana and some HM granola. That has honey in it.

This really isn't very low carb. The yoghurt does have carbs, depending on the brand - the berries are OK depending on the size of your hand! But the banana and granola will have added A LOT of carbs - especially if it had honey in it

Snack while out - cappuccino and small pack of nuts.

Your cappuccino will have been very carby, and the nuts, too, will have added carbs - did you look at the carb count on the back of the pack?

L - scrambled eggs, 2, with chorizo and cherry toms.

D- will be bolognaise with some fresh gf pasta that needs using. I ordered that before deciding to do this and am not rich enough to chuck away edible food.

I appreciate you don't want to throw food away, but please don't think that you're eating a low carb meal here. GF food is often still high in carbs

Bibblewanda · 25/01/2017 18:44

Tuna nicoise for dinner here minus the potato

I had double cream in tea earlier as I really can't stand almond or soya milk. Worked very nicely!

Flibbertyjibbit · 25/01/2017 19:37

Followed celeriac dauphnoise recipe nekobus posted but switched gruyère for parmesan & cheddar. Really yummy! I think it might become a sunday roast regular. Came out at 2.2g carbs per portion. Also tried roasting a few celeriac bits chip shaped with a drizzle of olive oil. They were also very yummy.

AdoraBell I've been having black tea while out or if you ask the coffee shop may have cream you can have with coffee which is a lower carb than milk. The best yoghurt to buy is total full fat Greek yoghurt as it is one of the lowest carb counts. I spent the first few weeks when I started low carbing checking carb counts on all packaging but you soon learn what you can/can't have.

NameChanger22 · 25/01/2017 19:57

I made a very weird and horrible concoction this evening with ground almonds, butter, cheese and vegetables. It wasn't even edible. DD said it looked sick. I need to follow recipes and stop thinking I'm a good cook.

LovelyBath77 · 25/01/2017 20:07

I'm keeping things nice and simple here- mainly a piece of protein (fish, or quorn) with cauliflower mash and broccoli in the evenings with mayo and a omelette for lunch. A pudding with cream and berries or coconut cream, and snack of almonds or seeds at school pick up time. That's basically it. Will probably get bored soon.

Has anyone tried Stevia? What's it like?

Lucysdiamonds · 25/01/2017 21:39

I've been low carbing since Monday. I'm so used to snacking and eating junk ... still craving sweet stuff but not giving in.

Can I post what I've eaten today to check it's ok?

B: bacon and fried eggs, coffee with a tiny dash of cream
L: tuna mayo with salad with a dribble of Heinz Caeser dressing
D: home made burger with stilton in the middle with salad
2 more coffees with tiny dash of cream
lots of water
ginger and lemon tea

If I'm hungry before bed I may have half a mug of carrot and butternut squash soup.

How does that sound?

Bibblewanda · 25/01/2017 21:41

Sounds good to me lucy though you may want to check the dressing for carbs.

Also carrot and butternut squash are both quite carby.

nekobus · 25/01/2017 22:08

Flibberty glad celeriac recipe worked out well! It's a really good Sunday roast side dish and doesn't make me feel deprived of roast potatoes Smile

Good day for me today. Home with DD who has chicken pox, but managed to stick to plan despite making fairy cakes! And escaped out for gym class as soon as DH was in the door Grin

B - LC bread, butter, marmite. hb egg with butter
L - meatballs in a cream and cream cheese sauce with leeks and mushrooms
D - more meatballs with a little tomato sauce on steamed cabbage
S - several coffees and cream, small bar 85% choc

Need to brave it and step on the scales. I'm trying to hold out until I'm sure I've lost something!

Veryflummoxed · 26/01/2017 03:32

Flibberty. Also roasted, as chips, as wedges, mashed with loads of butter, grated in a coleslaw. I now prefer to potato.

Dinner today was a lovely curry made with meat leftovers and served with dressed leaves.

Lunch was a toasted ham and cheese sandwich, made with the flax bread.

Breakfast a small portion of meat.

Coffee with cream.

I was quite pleased with myself then had a second portion of curry as a snack. I didn't need it. Tomorrow I am going to give myself a shake and do it properly. I am also going dairy free for a couple of days.

Bibblewanda · 26/01/2017 07:44

Presumably there is such a thing as too much fat? Like I couldn't neck 300ml of double cream and still lose weight?

Is there a maximum amount we should aim for?

BIWI · 26/01/2017 09:06

Not really - to be honest, you'd find too much fat very difficult to eat! (Bleurgh to necking 300ml of double cream ...)

However, although low carbing is a WOE (way of eating) that isn't about deprivation, it's also not licence to pig out and stuff your face. So be sensible.

But also to be clear - eating fat (in reasonable-sized meals) will not make you fat. Carbohydrate will.

As you get closer to your goal weight, you will find that you may have to more vigilant about the number of calories you're consuming - but in the early days of low carbing/weight loss, please don't worry about it.

I'd also advise that you do some reading about the science behind low carbing (look at the tabs at the bottom of the spreadsheet to find some amazing resources there), so that you understand why fat isn't the villain its long been made out to be.

Bibblewanda · 26/01/2017 09:23

Bleurgh to necking 300ml of double cream

The thing is I probably could. I wouldn't, but I could. I use to sip double cream out of the carton BlushBlushBlush

No I totally get fat is good, I just wondered if there was a limit.

Breakfast today was one avocado mashed with two hard boiled eggs, and three (low sugar low carb) salami cream cheese roll ups (which I wasn't wild about). Feels like quite a lot but I don't feel particularly satisfied.

ChesterDrawers · 26/01/2017 09:27

Morning all, ventured on the scales today and have lost 3.5lbs since Jan 9. Not as much as I'd hoped but fine as I'm not really focussing on my weight just trying to be healthy lie. I did start a few days before that but didn't weigh so there's poss a few extra lbs gone and AF arrived at the weekend and my knee is still swollen so I'm hoping there's another lb lingering that would ordinarily have gone. That said I am going to try to reduce dairy a little, although TBH I've not been going that mad on it anyway.

Today's plan:
Brunch: flax bread with butter, avocado and bacon
D: meatballs, Tom sauce, courgetti

Will chuck a BPC in to up my fat too, probs mid afternoon

NotdeadyetBOING · 26/01/2017 09:48

Morning all.

I had a small cheat yesterday (peanut butter sandwich, but sugar free PB at least she says clutching at straws).

But - trying not to be 'all or nothing' about this. Otherwise the temptation is to say 'sod it, you've had 2 slices of bread so you may as well have a packet of Hobnobs'.

Overall, yesterday was good and did a yoga class in which I definitely felt slimmer. NOt really showing on the scales yet, but I suppose if losing fat that may be why clutches at straws again

Anyway - had cheese omelette for breakfast which was v. tasty.
Lunch will be crab mayo with celery and cucumber.
Dinner will be chicken leg with skin cooked in butter etc. Probably with buttered leeks and maybe some celeriac chips.
