I'll add as well that my Konjac experiences were pre-low carb and I can't comment about the effects during low carb eating.

Hi everyone

Didn't log on yesterday was last day of pmt, was looking after 3 under 3 all of whom napped at different times. Ended up snacking loads and having gin and tonic. And I didn't run :(

Better day today

L tuna in cream cheese with salad and a pack of pork scratchings
T either roast pork or bolognese

Hey y'all

Sneaky weigh in (stupid I know) and I put on 2lbs stupid weekend of camping food But it should all come off by Tuesday's weigh in.

Going for a curry on Saturday - what should I order? Something creamy?

B: Pork belly fried in coconut oil
L: Chicken drumsticks (skin on) cray fish salad with full fat mayo and avaocado
D: Cougetti with cheese sauce

We often take left over curry for picnics. We love it cold. Also we take belly pork strips, hard boiled eggs, smoked sausage, chicken drumsticks, Cheese, Babybel, cucumber, tomato, salad leaves. Sparking water.

regular LC picnic

Courgettie with pesto, chicken and chery toms
Crust less quiches
Bacon wrapped asparagus
Cucumber /celery sticks
Boiled eggs
Marie Rose sauce (Mayo, passata, lemon, chilli, cream) as a dip
Cauliflower salad (cauli blanched and chopped, dressed in Mayo with shallot and spring onion)
Pate in which to dip celery
Hm coleslaw

Breakfast for me was two cheese sticks and coffee with cream as I had to be in school to help with a tea party at 8.30am. I did resist scoffing the jam sandwiches and cakes though which was actually easier than i thought.

I am now bloody starving but waiting on my shopping delivery so i can eat!! It's late and I'm cranky but don't have anything else in to eat.

Not sure if these are allowed but I have loads of these www.amazon.co.uk/itsu-Crispy-Seaweed-Thins-Pack/dp/B00LCRMHLU/ref=sr_1_1_a_it?ie=UTF8&qid=1464265007&sr=8-1&keywords=seaweed. I figure next week i can have them?? They are 0.5 carbs per pack. I like them as they are crunchy and salty.

Dinner will be chicken thighs with cabbage and a bacon and mushroom cream sauce. mmmmmmm

Stuck at the airport as SqueezyJet flight is delayed by 2.5 hours Angry

Had a really good lunch at Nandos, which was a real surprise - 4 x chargrilled chicken thighs, with chargrilled roast vegetables. The chicken also came skin on, so it was pretty perfect low carb food.

Sadly, I suspect that the rest of the weekend won't be so perfect, given the fondness for Danish pastries and open sandwiches in Denmark! But I will do my best. Scouts honour Grin

Aaarrrgghhh my Konjac hell continues. I am at work and despite 2 Zantac pills since morning and loads of water I still have that bloody fishy smell in my breath (loads of wind, to put it mildly!!) plus some nausea still and bloating. I have no idea monkeygrace how you're attempting to eat them again Confused. They are the work of the devil and I will stay well clear of them. Beware anyone that tries them!!

I have honestly had no problems eating those noodles, but I also havent eaten an entire pack to myself, I share them with my DH & DD. I make a lovely Asian broth & bung them in that.

I'm so sorry for those suffering after effects of konjac! I hope it passes soon - in more ways than one!

I nearly forgot to have lunch. I only had the avocado in the morning, and only realised half an hour ago I'd not eaten anything else! I've just not been hungry at all. Just snaffled up some bacon, mozzarella, greens and tomato. Dinner will probably be quite late now.

The other problem with the Konjac noodles is that i basically feel as if I have a hangover ie utterly parched and thirsty all day today despite drinking litres of water. Honestly!!! It's noodles not whiskey.

Looking at the menu, under side dishes, the duck lettuce wraps are only 1.9g carbs, Id have that with the stir fried greens.

Today I've had

B bacon, cheese, olives

L raw courgette strips dressed with oil and vinegar. Rocket. Chicken in Mayo. I added a tiny amount of curry powder then (after eating) remembering other posts I checked and yes the first ingredient was brown sugar. Hopefully not enough to count.

D savoury mince (shallot tomato celery swede mushrooms oxo) with buttered courgette and cauliflower.

Doing much better with the water today.

I made wild mushroom risotto using cauli rice, it was rather tasty!

Looks gorgeous WanHeda! When you say cauliflower rice, how is it different to cauliflower mash?

I used grated cauliflower in place of rice. Fried a shallot, garlic & wild mushrooms in butter for 10 mins, then added the grated cauli & a mug of chicken stock and then let that simmer for 5 mins or so. Then added double cream, parmesan & parsley & allowed to thicken up for about 10 mins.

I've never made cauli mash - how do you make it?

I steam the cauli, then when it's soft I mash it like I would potatoes with double cream / butter / salt. It's delicious with stews or with anything as a side dish really.

I roast a cauliflower whole in spiced yoghurt tonight. Was delicious with a baked salmon fillet.
