It sounds like some of us have been struggling recently, so I hope that the scales have been kind to you this morning.

If the scales aren't your friend, then don't forget to take your measurements, or to try on that dress/those jeans that were too tight 5 weeks ago - the results here are more meaningful than the scales anyway.

I put some new trousers on yesterday that I bought a couple of weeks ago, and find that they are now too big. Which is both pleasing and annoying at the same time Grin

Just logging my food for the day.

B: Three eggs fried in duck fat, coffee with cream
L: Courgetti with hot smoked salmon
D: Venison sausages, three bits of cheese
S: FF yogurt with vanilla

E: 2 hour ride with horse including a 1km gallop - felt amazing!

Not enough veg today but the long ride was unplanned and I just got in the house at 10 so can't be bothered making lots so just cooked the sausages.

I'm very happy to report that using parmesan in place of breadcrumbs to coat a pork loin chop is bloody delicious! I'm going to try it with chicken next time.

Coming on for a rant but not at a person, at the bally celeriac I cooked for tea, was so woody literally like chewing bits of wood even after cooking in the lovely bravas chorizo sauce Sad not buying anymore - boo !

ewanhoozami, thank you for that advice about the kale, I'll try it later today. Unfortunately, I don't have access to Tesco's (I live in the Sandpit, aka the Middle East) - but I might ask DD to bring some cauli couscous with her when she comes back from uni next week! (And special dog treats, but not relevant here!)
clare8allthepies, I gather you can freeze uncooked portions of cauli rice (and courgetti?) within use-by date and all will be well - would that be possible for you to do?
LexLoofah, I make celeriac boulangere regularly and it is deelish, but oven baked for around an hour and half to make it lovely and soft and so tasty! I think I found it on the LCBC recipe thread and the person whose idea I pinched called it something else, can send you the recipe I use if you want as it is just yummy.
Just wanted to say, I stuck to LCBC rigidly for 3 weeks and gained. I was upset by that and allowed myself to fall off the wagon and am having terrible trouble getting back on again, but given the strong reactions, feel bad posting on here for support. But nothing anyone posts on here acts as a trigger for me, I know it is all my own fault and it is up to me and only me to "get my head in the zone".

Morning all, feel so much better - luckily nasty tummy bug has gone as soon as it came on and DS slept through so a good nights sleep has made me feel like a new woman.

I had a sneaky weigh in and I haven't lost a pound! Gutted I didn't drink anything for nearly 18hrs and I couldn't keep anything in for 2 days lol.

Delite - I make courgette by grating it on a box grater using the largest hole, I then fry it in garlic butter for about 2 mins, I think I prefer it now to pasta ad its so quick - in fact its what I had for my dinner last night.

I will chance a BPC for breakfast, then i will make green soup for lunch and dinner is chicken and salad.

Heman chicken in parmesan is called ChestersChicken even though I don't think chester is about anymore.

lex I love celeriac Sad that yours was wooly.

I am jealous of everyone who can get courgetti and cauli-rice in their Tesco.

Dillite I use a spiralizer for my courgetti as I never managed very well with a peeler or anything.

Had a mini woosh over night which is lovely after the scales not moving for a few days.

Have managed more fat but really failing with more water. Sitting here at an appointment for ds gasping as forgot to bring water. Stupid!

Going to go and by 6 500ml bottles of water which I can refill. Have been filling a jug and doing that way but keep filling dog bowls. Just have to watch the plastic bottles as the dachshund steals them and chews them ready for recycling!
Definitely more fat and more water going on here!

Oh and I am hoping to lose it by this time next year. Don't want to rush it as I don't want a wrinkly face. I have a friends wedding in September ( 1st in 25yrs) so am aiming for up to 14lbs weight loss between now and then.Grin

Morning all,

Tetley - I am a big fan of 6x 500ml it seems easier somehow!

Dinner last night - 6 slices of leerdammer cheese, spread with butter. Think I need to build in a snack at about 4:30pm as I am getting him 7/7:30pm each night and am so hungry could eat horse and then chase the jockey - pointless as there is no fat on them, but you get my drift.

Dinner going forward needs to be something fast, and speedy - may go back to bacon and eggs for dinner, and FF greek yog for breakfast. Sorted then - sorry for anyone who read that - clearly I need to "type my thoughts" - as you were!

Today:
B - Mushrooms, streaky bacon, fried egg all done in butter
L - Guacomole and smoked salmon
D - POrk Belly and buttery courgettes (gotta finish that Pork belly!)
W - 3liters

Morning all! I made it through my leaving do reasonably unscathed by carbs which I think is an achievement! Went for Thai once we ditched the pub and I stuck to duck stir fry and broccoli, no rice.

I am currently treating myself to a fancy breakfast before I lope into the office for my final few hours. Just had poached eggs, hollandaise and smoked salmon, plus two strong coffees with a splash of whole milk.

I am going for lunch with two colleagues later and will choose boot camp friendly food, and no booze today! Not sure what dinner will be yet.

I saw a few old friends last night who I hadn't seen in a while and got compliments on looking really well, have you lost weight etc which was very motivating. I did start to enthuse wildly about LCHF but I do think people switch off when they hear the word "fat" used in a positive way!

plum. I make a batch of bolognaise sauce which I divide into portions and freeze. I then whack it in nuker for 3 mins on high (or a little bit more if not piping hot) and have with courgette. If I want iceberg tacos I sprinkle on fajita seasoning before going in microwave and stir when I get it out. I have this with sour cream and grated cheese all loaded into lettuce leaves.
You could always microwave swede and top sauce for cottage pie.
Im looking into getting a slow cooker to do lamb shanks and other things as turning on the oven for one is pointless.
DH home this weekend - back from Thailand - haven't seen him since middle of April. Home long enough to disrupt everyone then leaves again Monday. Dinner booked for Saturday night at East Beach Cafe in Littlehampton - love this place!Smile

Lis - well done, and I know what you mean re the glazed look - I have experienced it and now find not talking about it in RL the easiest way - however people look slightly wistfully when a rare steak dripping in Bernaise sauce is placed in front of me, compared to a plate of over or under cooked rice and a fat free chicken korma - I WIN!!!!!!!

Ok, so 6lbs on having missed 2x weigh ins , still 4lbs down from my start weight; I am hoping that a lot of that is associated with the water being retained from being off plan for a while.
Thanks for the explanation re BPC - I don't drink coffee, but do drink tea, although I am not sure I can face trying it! Maybe when back on track...

A quick post re soggy courgetti...

It's the middle bit that goes soggy, ime - the bit with the seeds. I use a Y shaped potato peeler or a julienne peeler to take strips of all four sides down to the seedy bit, then discard the core. A bit wasteful of the inner bit but saves the rest from sogginess. Also, I then spread out the strips on kitchen towel and leave them for a while for the moisture to evaporate - couple of hours if poss. Then stir fry in butter for just a couple of mins.

Celeriac... Cube small and roast in plenty of oil at about 200*C 'til brown round the edges - about 45-60 mins. Then mash or add your sauce... nice and soft inside then.

Hi Folks, just checking in. Been AWOL after that horrendous stomach bug that's going the rounds. Boy did it hit me hard! I had been complementing myself on how much a keto diet had improved my immune system as I had the family sneezing round me all winter and never succumbed but this bug really got me! Managed to stay LC with what I did eat as I just don't really fancy carby stuff anymore.

Wanted to thank whoever posted the idea of Boursin as a dip earlier in the thread. I wanted something to go with some chicken strips and found a pack of the new one with shallots and chives. I just whisked in enough soured cream to make it dippy and it was yummy.

Was it Crabby who was upset that the dreaded bug had caused a weight gain? Whoever it was, don't panic! My weight shot up but once I got drinking a decent amount again it has dropped nicely. I think its just that the period of dehydration makes your body soak up the water with a sigh of relief and then hangs onto it for a day or two just in case! Grin

Trash I really felt for you when you said you were struggling because of the swelling in your legs. My DH has lymphoedema very badly in one leg and mildly in the other. He struggles with his weight and, even when he sticks to his plan, his weight can go up by as much as 10lbs on a bad day. Its a matter of just telling yourself that you are doing it right and that you will still be losing fat. You need to use measurements rather than the scales until your leg improves. Flowers

Any ideas for what to have with gammon? I bought a gammon joint as they were half price and when it turned up its massive! Normally it would be with chips and pineapple or in sarnies! Grin

CLARE - I do a gammon joint (actually have one in the fridge for this week) with broccoli and cauli cheese. Sometimes I roast swede cubes as well. One our fav meals here.

Thanks Tetley - not sure about the SpagBol - long story but my dad used to cook it twice - three times a week when he was learning to cook - really struggle to stomach it now (fortunately his repertoire has improved over the years - however I like the thought of fajita mince - I will bulk buy on Saturday and freeze, hopefully that will cease the main lining of cheese on the way home from work - so uncouth Grin

Clare - I don't eat gammon - tastes like pig - I know Confused and Hmm but moving on from that - my bro takes one, cooks it, cuts in half, adds fried mushrooms, cheese and fried egg to one half then slaps the other half on top - not sure if that is weird, family friendly or just cos he is a boy and they are all a but odd!!!!
