I love this point in Bootcamp. It's such a leap of faith for so many people when they first start low carbing, because it seems so strange to eat all the fat we're told to eat. But then when the scales show the result, I love it!

Are we allowed almond flour soon? I'm imagining a sort of fake tiramisu with almond flour sponge soaked in coffee, mascarpone and cream!

Doing my shopping for the week - managing to not go mental and order every LC thing I can think of!

Dinner was absolutely gorgeous, the pork was so tender, the crackling just perfect, the cauli/broccoli cheese and fried cabbage lovely. I am so full!

Someone gave me a recipe for ragu up thread (sorry, am on phone, can't check back), I do often make bolognese sauce to serve with cheese and cauliflower. I fancy something that isn't tomatoey, more like mince in gravy?

I have made an aubergine, coriander and mint stew for my lunch tomorrow. DS stood on a chair beside me and concocted an aubergine, mint and Rice Krispie delight. Which shall I take tomorrow?!

We went out for dinner (again!) tonight - DS1 is staying with us for a few days. Lovely local Italian. Fillet of beef in gorgonzola sauce, with a green salad.

lurking yes, from tomorrow, you will be able to include almonds (and other nuts).

If you look on the recipe thread, there's a lovely recipe there for Bacon, shallot and Gruyere tart, which is made with an almond pastry crust. And I think Crabby has a recipe somewhere for a berry crumble made with almond pastry.

now I made a cottage pie today. It's adapted from a mince and onion pie recipe in ministry of food by Jamie oliver. The kids love it.

Fry shallots, leeks and celery until soft. Add the mincemeat. A dollop of English mustard. 2 beef stock cubes and boiling water to about 3 quarters covering it. Bring to bubbling and then turn down to simmer 45 mins. Cook cauliflower. Mash with cream, butter salt and cheese. Put on top of mince in a casserole pot, grate more cheese on top. Stick in the oven until cheese browns. It's very yummy.

Feeling a bit stuck weightwise at the moment. Today's food was
B Indian scrambled eggs
L big tuna salad with lots of dressing
Then it went a bit wrong as I had decided to do some batch cooking for next week and ended up having a portion of spicy pork AND the roast chicken, celeriac chips and broccolibroccoli that were already cooking Confused

Even worse, I ate about 12 peanuts that I had toasted to go into the pork fir boot camp light. And I had a tiny square of dark chocolate. So started boot camp light a day early when I hadn't planned to and was wondering about staying in boot camp and cutting out cream and cheese

How is that going wrong, Alma? If you ate pork, chicken, celeriac and broccoli you weren't eating carby food. What's the problem? I assume you ate it because you were hungry? That's fine.

12 peanuts isn't going to be the end of the world, and nor is a tiny square of chocolate! Stop stressing about it.

Thanks BIWI. I suppose I was beating myself up because I haven't cheated once in a fortnight which is amazing for me. I am very excited about the berries I am having with my yogurt tomorrow morning though.

On bcl, we are still eating lots if fat right? But introducing slightly more carbs because we are fat adapted and so won't flip back - have I got that right?

pseudobadger to make the scratchings I asked my lovely butcher to cut me the rind and fat from a large piece of belly pork. He also scored it for me. Left it on a plate overnight in the fridge (to dry out). Then salted it liberally and put in the oven for 1.5 hrs on 140. Drained off the liquid every now and then (keep in a pot for the best fat for cooking). Then turned it over to cook the underside.
Then just cut up (easy as scored) and keep in an air tight container when cooled.
No preservatives (apart from salt) no additives, no sugar, no hidden nasties....and saves a fortune. What's not to love? Yum, yum, yummity yum.
I plan to make herbed and various spiced versions. Oh yes.
Food wise, I have mostly eaten pork scratchings today!
(and avacado, spinach, usual ff total breakfast and a boot camp roast chicken dinner.) loads of water and a mountain hike in the snow. Perfect.

I am down 4kg from Christmas! yay :)

struggling with my choc addiction in the evening tho so weight loss is stalling - not stopping but slowing down.

I find I am exhausted all the time right now as DH has been away for 3 weeks. Sole responsibility for a 2 1 /2 yo + full time job adds up to a lot!!!

Today has been better

b - 2 sausage, 2 bacon, 2 eggs, mushrooms
l - roast chicken (lots of skin), avocado, tomato and rocket salad & mayo
s - peperami
d - 4 bird roast, creamed swede, cauli & broc

I tried the swede in the microwave and it was rubbish! not sure if i did it right. i put it in for 7 mins then turned over for another 7 mins. it was still rock hard so i turned it and gave it another 7 mins. Cut it open to find half was soft and half was still hard. put the hard part back in for 3 mins and then tried to mash it. The masher broke and bent. i burnt my fingers. Ended up pureeing it with the stick blender and loads of butter and cream. i think i'll just boil it in future!

Is anyone else struggling without gravy? I just can't seem to enjoy foods like cottage pie or roast without loads of gravy.

Beyond I understand Egg in a Cup to be a hard-boiled egg, peeled, put in a cup (a bowl would do, of course) and mashed with butter.

A couple of people have mentioned boursin which is a brilliant idea, I must get some.

My bootcamp story... I was the person someone else described up-thread, getting up with good diet intentions every morning and going to bed hating myself for the over-eating every evening. Until I read a thread on mumsnet called "What was your lightbulb moment when you decided to lose weight?". Reading that thread was my lightbulb moment. Fortunately, there was at least one person on that thread raving about the weight they'd lost on the MN bootcamp, which was in a "week 2" thread at the time.

I went and read the rules, thought "No Fruit! WHAAAAT?!!" and then thought, do you know what, for once in my life I'm going to do what I'm told.

I didn't have any scales at the time and did NOT want to know my weight. But I could tell I was losing, clothes were getting baggier. Near the end of that bootcamp, in a doctors appointment I did actually have to be weighed, and it was a lot less than the previous weight they had on record for me. At that point, I did some maths and thought, well at this rate of weight loss I have to keep eating like this until Christmas! But at least I could be in a glam party dress at Christmas.

So I did, I ate bootcamp (lite - but with no alcohol or dark chocolate, just the odd strawberry and nuts) for 10 months. I lost more than 3 stone, from over 14 stone to under 11 stone. I went from size 20/22 to size 14. I went from just into obese BMI to just into normal BMI. How happy am I!!

Since then I've done about 10 months of "maintaining" - eating low-carb with treats of the carby things I like. That worked pretty well but I did get laxer and laxer in the run up to this Christmas. I'm 7lb heavier now than when I "stopped" - not much, but I'm on this bootcamp to try to lose it again. I'm still in all the size 14 clothes and I've had two Christmases of glam dresses!

What an inspiring story, Eva. That's kind of my plan to see it come off over the next year, there's about 1.5 stone to go.
Going to the boot camp for a few more days, as I am off to the land down under at the end of the week for a short break. I will try to stay LC whilst there but I can't guarantee I won't eat for the entire journey due to boredom. Surely I lose a day and therefore all the weight from that day?
BIWI, the cheese sauce on the blog was amazing!

Thanks everyone for your stories, so motivating. Eva I will be joining you with the glam dresses this coming Christmas, come what may!

Well my weekend didn't go as planned at all. I came down with a stomach bug during early Saturday morning. I felt rubbish all Saturday and not quite right today. So I haven't eaten much, but have managed to stay LC with what I have eaten.

I feel a bit bloated and gassy (sorry, not a pleasant thought) so no idea how weigh in will go tomorrow. Which seems a tad unfair given I barely ate all Saturday! And completely avoided the food at a Christening today, which was 100% carb central! Handily I was still full from my Total yoghurt with cream for breakfast so was able to wait till I got home to eat (I had eggs in a cup with lots of green pepper strips).

Ah well, still loving this WOE, so will keep on ploughing through. The posts on here really help so much - to give motivation, perspective and hope. Thanks everyone SmileThanks

MrsKoala - why is your cottage pie gravy-less?! Fry your onions/shallots, add the mince (and whatever other veg that you use), add a stock cube and then water. This should all cook down so that you have lovely tender mince, but also plenty of gravy.

If you're doing a roast, put the piece of meat in the roasting tin, on top of a bed of veg - i.e. shallots, leeks - and also put a good litre of water in the tin.

When the meat is cooked, you'll have a lovely stock/jus that you can use for gravy by boiling it until it's reduced.

After a triumphant WE of LCing effortlessly through a mega party last night and lunch at PIL's today, twattery struck this afternoon, bought on by tiredness and out-of-sortness. Hello all, I am back from an utterly lovely anniversary weekend with DH. I won't list my food as there were a few more naughty things than intended (and quite a bit of wine), but I didn't overeat sugary things in the way I might have in the past and I avoided bread, pasta, rice, potatoes which is a big result for me. The puddings got me though. I know the scales will punish me this week, but I am jumping right back on to the full BC bandwagon and raring to go.

Hope you have all had lovely weekends. Onwards and downwards.
