When I've been in a nuclear bunker for several months with only tinned food to eat.... that would be the LAST THING I'd eat! And even then it would be about a month after I'd eaten the last of anything else, so I'd be sooooo hungry and not notice how revolting it is

Although I can't think I would EVER have use for a canned chicken, I actually didn't think it looked that bad- for a boiled chicken.

Most of those juices around it were just that- the gelatinous stuff that leaks out of any chicken during roasting- it's delicious in gravy, and stock is like that if you make it yourself.

That said, it did look revolting being birthed from the can in that way. And I agree that it does look rather like confit de canard, including the texture.

confit de canard is essentially duck cooked in its own juices, with a little bit of extra duck fat to kick start it. Most of what leaches out of a duck is in fact fat, unlike with a chicken. Duck oil is, however, supposed to very good for a person- a French person the other day pointed out that the place in France where the most preserved duck is eaten is also the place with the lowest rate of heart disease. Allegedly you can re-use duck fat many times.
