Here it is - all welcome, long termers and newbies, I imagine this week is leftovers leftovers leftovers and kicking off from Thursday onwards.

ive gone back to Oddbox and our deliveries now come on Friday nights so I’m going to try to force my brain to meal plan Thursday-Thursday and have delivery on Thursdays to make it happen. Won’t happen this week but hopefully from next

Fear not @SpaceOP - I like burrata and that looks like a good recipe to add to the ‘peak summer’ repertoire!

SpaceOP · 16/06/2025 19:54

@RemusLupinsBiggestGroupie So yes, you are rhe one who hates it! 🤣🤣. Veggie yes, mozzarella no! Oh well! Looks like @MotherofPearl can benefit!

Tomorrow: pasta primavera
Saturday + Sunday: out
Monday: pizzas
Tuesday: Jacket potato
Wednesday: falafel and hallumi burgers
Thursday: matar paneer

can you tell it’s going to be a busy week… hopefully next will be a bit better

BiddyPopthe2nd · 19/06/2025 16:07

This week, disaster.
Sunday - dinner out with a friend.
Monday - dinner out on a work trip
Tuesday - flew home from work trip so cheese and crackers when I got in to empty fridge
Wednesday - pasta, bacon lardons and tomato/mozarella sauce.
Thursday - have defrosted a duck breast, have oven chips in freezer.
Friday - maybe butter chicken from freezer.

Saturday - go food shopping (it will be 3 weeks since I last went) and eat all the lovely fresh stuff!!

I don’t even have breakfast stuff this week (I did last week). Or milk. Oh well, an excuse to drink wine with dinner…

MotherofPearl · 19/06/2025 16:27

I have lined up:

Thursday: new recipe BBC online for tuna, pepper & courgette tart

Friday: indoor picnic as too hot to cook - will be smoked salmon; tomato & mozzarella salad; nice bread etc

Saturday: I’m trying the butter bean puttanesca from earlier in the thread

Sunday: homemade cheese & onion quiche; salads

Monday: warm tomato pasta salad

Tuesday: TBC Greek feta traybake or salad nicoise

Wednesday: white fish with salsa verde plus veg

SpaceOP · 20/06/2025 19:01

I dont' ctually mind cooking in the heat, but it turns out meal planning is depressing me! Grin.

we're having pizza tonight.
I think tomorrow and/or Sunday we'll do BBQ and salads. Chicken one night and perhaps lamb/sausages the other.
Thai-style steak and noodle salad
Pesto/mozarella/greens gnocchi
"No cook" pasta sauce, probably with some salmon (fresh or smoked).
Fajitas as per DS' request (halloumi).

I haven't actually ordered or shopped for any of this. I guess I better do that!

RemusLupinsBiggestGroupie · 20/06/2025 19:17

Pizza tonight with salad
out tomorrow night
omelettes, salad and nice bread on Sunday
quiche and salad on Monday
tapas type bits on Tuesday
smoked salmon pasta or pasta pesto on Weds
veggie burritos on Thursday (not had these for absolutely ages, and ds is good at making and shaping them, whilst I'm rubbish)

Makelikeatreeandleaf · 20/06/2025 19:25

Tonight - been a shocker of a week so best intentions have been replaced by wine and crisps.
Tomorrow - veg kofte with salad and couscous
Sunday - quiche and salad
Mon-Thurs - school residential so whatever delights I'm served there. I'm guessing the food group of 'beige' will feature heavily.

HalloumiFries · 20/06/2025 21:27

Tomorrow: Out for fish and chips
Sunday: Chicken kebabs, Greek salad, tzatziki and halloumi
Monday: Quiche & salad
Tuesday: Greek salad pasta
Wednesday: Quinoa salad with halloumi and walnuts
Thursday: Harissa aubergine with butter beans
Friday: Not sure yet - having some work done in the kitchen and no idea if and when we'll be able to cook.

Forgottenmyphone · 21/06/2025 07:04

Tonight - paneer kachumber roti wraps
Tomorrow - chickpea fattoush and pitta
M - hummus pasta salad
T - feta and roasted courgette couscous
W - Cajun grilled halloumi with lime black-eyed bean salad and guacamole
Th - sundried tomato and pesto quiche
F - Thai peanut noodle salad

Makelikeatreeandleaf · 21/06/2025 12:09

@Forgottenmyphone your plan sounds fabulous. Do you have recipe links for the chickpeas, couscous or halloumi?

Makelikeatreeandleaf · 21/06/2025 13:30

That's great, thank you very much.

BiddyPopthe2nd · 22/06/2025 09:34

Last night, prawns and avocado; pepperoni pizza and slice of coffee cake.
Tonight, I plan either feta chicken or lemon/garlic chicken (thighs on the bone)
Tomorrow I am out for a work dinner but need to leave something dd can have if she’s hungry when she arrives (she’s up at 4am to get to her city by plane for uni thing, coming here by train with her bike in the evening so may be starving at 11pm or just want sleep)
Tuesday I think lemon garlic chicken breast or plain chicken (as dd here).
Wednesday either salmon or cod. As I don’t know if dd is staying til Wed/Thurs (she’s definitely leaving Thurs to go training in her uni town).
Thursday I am out for a show and drinks so need something fast early evening - possibly chick fajitas.
Fri was to be quiet but now looks busy so probably a M&S chicken pie from the freezer.
Saturday I think I will do a proper steak dinner.

RemusLupinsBiggestGroupie · 22/06/2025 10:56

@Forgottenmyphone You've just reminded me how much I love fattoush. Might add that to my next order, if we have a ds-free night!

DilkushaKitchen · 22/06/2025 21:44

We've just got back from a lovely weekend in Teignmouth (fish and chips, Thai restaurant), back to reality and did my plan just in time to get to the supermarket

Tonight we had: Lemon baked salmon, kohlrabi and potato gratin with lemon thyme, summer greens, carrots, peas

Tomorrow: Tuna, olive, mushroom pasta

Tuesday: Saffron and broad bean paella, fried chorizo on the side, salad

Wednesday: chestnut, hazelnut, greens pasta for me before I go out, nduja meatballs in tomato sauce for everyone else (picked up the meatballs and then spotted the recipe card in Waitrose)

Thursday: Chicken saag, rice, poppadoms

Friday: Sausage and Butter Bean stew (Bold Beans recipe again), broccoli, baguette. Might be white beans though as there were no butter beans left. A bit similar to Wednesday's dinner, but I am not having that 😏

HalloumiFries · 28/06/2025 08:01

Tonight: Nduja and mozzarella stuffed chicken with creamy cannelinni beans
Tomorrow: pulled pork rice bowls
Monday: Burritos with leftover pulled pork and salad
Tuesday: Braised courgette and white beans
Wednesday: Pasta with nduja and spring greens
Thursday: Minestrone
Friday: Pierlini and salad

UnimaginableWindBird · 28/06/2025 11:25

I'm in a bit of a rut at the moment, because what I want to eat (pulses and fish) and what the rest of the family want to eat (meat and absolutely not beans) are at odds with each other.

Monday: salmon with lentil salad and green beans
Tuesday: courgette, feta, mint and pea frittata with a green salad.
Wednesday: sea bass with spicy aubergine and honey relish and couscous.
Thursday: out for dinner
Friday: Mushroom pizza
Saturday: Spicy sardine pasta
Sunday: pot roast chicken with peas, lettuce and bacon; strawberries and cream.

RemusLupinsBiggestGroupie · 28/06/2025 14:08

Also struggling here with the mismatch between what I want to eat and what others do.

Sunday - I'm going to make a vegetable lasagne to have with salad

Monday - I've got to bake a cake, so an easy dinner of Jersey Royals, salad and either fishcakes or veggie burgers

Tuesday - quiche, chips and salad (pretending I'm on holiday in 1984)

Weds - tofu and veggie stir fry plus Itsu vegetable gyoza

Thursday - dp will make a curry of some sort

Friday- veggie hotdogs with homemade baked beans

Forgottenmyphone · 28/06/2025 14:51

Tonight - minted pea and lemon carbonara
Tomorrow - tofu katsu burgers
M - black bean tacos
T - whipped Philadelphia pasta salad
W - herby lentil koftas, couscous and salad
Th - Mexican stuffed peppers with chipotle lime rice
F - eggs florentine flatbreads

BiddyPopthe2nd · 28/06/2025 15:43

last night I was being lazy and had got a yellow sticker duck breast in supermarket, so pan roasted that with oven chips and peas.

tonight steak with lemon pepper/rosemary/garlic potatoes, fried onions and fried mushrooms.

tomorrow feta chicken with the same potatoes and roasted Mediterranean veggies.

Mon I am out so I have a part baked baguette and a Welsh rarebit in case I need food when I get in.

Tuesday I am thinking sausage meatball pasta.

wed night I have a drinks thing that may run late, so my other “need food but can’t be bothered” meal I have available is fresh pasta with bacon lardons and pesto rossa. Mushrooms too if I really feel capable.

Thursday I have a dinner out.

Friday I will want easy but tasty so I think I’ll get out my chicken and mushroom sauce from the freezer to have over vol au vents with salad.

A fairly boring week cos work is manic and it’s just me.

DilkushaKitchen · 29/06/2025 14:15

Joining you on the struggles to make something that everyone likes. I do regularly buy a ready meal for one person, or have shop bought fishcakes or something in the freezer.

This week we are having

Today - kohlrabi bhaji burgers/beef burgers, chips, salad

Monday - paneer, chickpea, spinach curry (and in fact, I have forgotten to buy a ready meal alternative...)

Tuesday - Fish finger katsu

Wednesday - Broccoli and anchovy pasta with chilli lemon pangrattato

Thursday - veggie/beef tacos

Friday - pizza from the van in the park

DilkushaKitchen · 29/06/2025 14:18

@Forgottenmyphone those eggs florentine flatbreads look good! I will suggest them to my daughter for when she goes back to uni
