Here it is - all welcome, long termers and newbies, I imagine this week is leftovers leftovers leftovers and kicking off from Thursday onwards.

ive gone back to Oddbox and our deliveries now come on Friday nights so I’m going to try to force my brain to meal plan Thursday-Thursday and have delivery on Thursdays to make it happen. Won’t happen this week but hopefully from next

@DilkushaKitchen what's your greek style cabbage and rice

It's this, not sure how authentic it is!

https://www.riverford.co.uk/recipes/greek-cabbage-rice

It tastes nicer than it sounds and is a good option when I am getting overrun with cabbage.

I usually measure out the water to be double the volume of the dry rice (ish) rather than eye balling it.

Greek-style cabbage rice with raisins, pine nuts & feta / Riverford

Rice and cabbage doesn’t sound that exciting but trust us, this dish is packed with flavour from the vegetables, herbs, sweet raisins, creamy feta and more. Cabbage can be one of those vegetables that is tricky to use up; if you find yourself with half...

@MotherofPearl @SpaceOP I pre-made our risotto for tonight and went for a wild garlic and lemon risotto with roasted tomatoes and goats cheese on top

This sounds delicious. I think a topping for risotto really lifts it. In autumn/winter I top butternut squash risotto with toasted pine nuts and/or crispy fried sage leaves.

Wild garlic and lemon sounds delicious. Can you leave the tomatoes off of my portion though, please?!

SpaceOP · 09/06/2025 17:59

I have some old cabbage lurking in the fridge..... Grin This is excellent! @DilkushaKitchen

After a few weeks mostly eating from the freezer, I am trying to be slightly better again. Although, while I brought back some treats from home (like a couple of steaks, and some lovely tender diced lamb, and 2 M&S single portion pies for the oven), I won’t be able to do food shopping for another 2 weeks properly.

Yesterday was, when, cheese on crackers (after a late flight home, a bacon sandwich breakfast and a snack of crisps and a Bakewell slice with a G&T on the plane).

Tonight, I made a decent pepperoni and olive pizza.

Tomorrow, I plan chicken fajitas with proper guacamole, so a feast of veg.

Wednesday salmon with steamed french beans and baby potatoes.

Thursday quite possibly chicken and mushroom vol au vents. Or country sausage meatballs and pasta.

Friday to Tuesday I am travelling again.

I still have the makings of feta and thyme chicken;, duck and chips; steak; another pasta with country sausage meatballs; bacon lardons and eggs; 2 different M&S pies and a pack of fish covered in mozarella; 2 servings of hake; a couple of servings of butter chicken; and 1 last serving of chilli - that I can choose from already in fridge/freezer. Shops are hard to get to midweek here.

more urgent is lemons, ginger and milk Which I should be able to get in the local corner shop. But generally relatively “boring from stocks” week.

hailholyqueen · 11/06/2025 14:18

What’s your recipe for butter bean puttanesca please @DilkushaKitchen?

DilkushaKitchen · 11/06/2025 14:55

It's this Bold Beans one, @hailholyqueen, but I can't vouch for it, as I've never made it before!

I’m adding this to my next list.

I’ve already planned the upcoming week as follows:

Thursday: tuna/rice casserole with peas (don’t ask; it’s a weird but popular dish in our house)

Friday: crispy chicken thighs slow roasted with cherry tomatoes

Saturday: fajitas (chicken for the meat eaters and black bean for the vegetarian) plus homemade guacamole

Sunday: aubergine melanzane plus nice bread and green salad

Monday: white fish and rice with olive tapenade; greens of some kind

Tuesday: new dahl recipe with shop-bought flatbread

Wednesday: shepherd’s pie (one lentil, one lamb with enough for the freezer); greens

Thanks, looks great! I bought 3 reduced jars of these beans in Tesco the other day so keen to make good use of them.

It really is never ending, isn't it!?

I haven't tried the cabbage thing yet but I'm putting it on my general list - maybe for a light lunch. Doing my planning now for a Sunday delivery.

roast chicken - but with salads/new potatoes.
Aubergine, tomoto and mozarrela salad with focaccia. I am a BIT concerned this will not feel substantial enough for the hordes at my house.... but hoping for the best.
Pork mince stir fry with noodles
Beef mince tacos (I seem to have a mince glut!)
Salmon with something or other.

A lot of this can be switched around depending on weather as the meat/fish is in the freezer.

HalloumiFries · 13/06/2025 13:21

Planning time seems to have come around again, all too soon. Some weeks, I'm bursting with ideas but others, like this one, I'm struggling.

I think I've settled on:

Tomorrow - Sorrel and goats cheese risotto (mentioned last week)
Sunday: Lemon and herb roast chicken with roast potatoes, asparagus and green beans
Monday: Chicken escalopes, braised leeks and peas (was on last week's plan but ended up being left out due to lots of leftovers from other meals)
Tuesday: Out at a work thing. DH going to MiL's
Wednesday: Roast veg and farro bake
Thursday: Spaghetti with courgettes and garlic
Friday: Noodles with roast pork and veg in black bean sauce.
Saturday: Taking MiL out for birthday meal

DilkushaKitchen · 13/06/2025 21:01

I'm pleased to report that the butter bean puttanesca was very tasty, definitely a make again and pretty quick and easy to make.

DilkushaKitchen · 13/06/2025 21:04

Have you got a recipe for the farro bake, @HalloumiFries? I keep meaning to try different grains (is farro a grain?)

Forgottenmyphone · 14/06/2025 06:11

Tonight - paneer tikka skewers and pilau
Tomorrow - asparagus frittata, new potatoes and green salad
M - chimichuri tofu
T - spinach and ricotta pasta shells
W - Mexican charred corn and bean salad
Th- harissa falafel burgers
F - cheese fondue

HalloumiFries · 14/06/2025 08:14

@DilkushaKitchen it's this one - https://smittenkitchen.com/2021/08/baked-farro-with-summer-vegetables/

I'm also trying to introduce more grains. I've made this recipe before but rather than use farro, I just stirred in a pack of merchant gourmet mixed grains and that was really nice - and also quicker. I also added aubergine to make it more substantial on the veggies - will probably do the same again this week but will going to try with actual farro this time.

baked farro with summer vegetables

A pinnacle-of-summer baked grain dish that has all of the decadence of a pasta bake — tomatoes, gooey cheese, and a crisp, burnished top. Farro, small, nutty and slightly chewy, provides heft…

DilkushaKitchen · 14/06/2025 08:47

Thanks @HalloumiFries, I will put that into my "To try" recipe book in Umami!

RemusLupinsBiggestGroupie · 14/06/2025 13:49

I think I've just done my quickest ever grocery order, largely because I just couldn't be bothered to think, so we're going for really boring, but all favourites.

Pasta puttanesca veggie version

Quinoa burgers (Sainsbo's frozen) with new potatoes, tender stem and chilli sauce

Paneer and chickpea curry

Dhal, parathas and minty cucumber raita

Spanish omelette

UnimaginableWindBird · 14/06/2025 14:11

Sunday: roast beef with garlicky crushed potatoes and greens

Monday: salmon, asparagus, new potatoes.

Tuesday:some sort of white fish with lentil salad and green salad

Wednesday: falafels

Thursday: spinach, cauliflower and chickpea curry

Friday: pizza

Saturday: I'll be getting up at around half three for a dawn swim and a friend is having a party that night, so it has to be something very easy. I think I'll go for stuffed peppers with a big salad.

Citygirlrurallife · 16/06/2025 10:51

so boring this week but my last one working away during the day with a long commute:
Monday: tempeh chilli and rice
Tuesday: salmon fillets, leeks and giant cous cous
Wednesday: African Peanut Stew
Thursday: I'm out, I think the others are having fish fingers and chips!
Friday: pasta pesto
Saturday: Going to a friend's BBQ and I'm taking a miso, sesame and ginger slaw and a moroccon cauliflower and chickpea with lemon tahini dressing salad
Sunday: steak for DH and DD, trout for DS and I, with smashed potatoes and a grilled courgette and lentil salad

I’m going to have to do a ‘peak summer’ meal plan from Wednesday onwards. Looks like we have a week of very hot weather coming up.

SpaceOP · 16/06/2025 13:15

@RemusLupinsBiggestGroupie I saw this recipe over the weekend and thought of you (but then wasn't sure if you are the one who hates burrata/mozarella or if that is another poster/ a member of the family?)

2025 Meal Planners!
RemusLupinsBiggestGroupie · 16/06/2025 18:23

Thanks @SpaceOP but I’m afraid to say I’ve never met a piece of burrata or raw mozzarella that I liked. Slimy, soapy nastiness imvho. Sorry!
