Here it is - all welcome, long termers and newbies, I imagine this week is leftovers leftovers leftovers and kicking off from Thursday onwards.

ive gone back to Oddbox and our deliveries now come on Friday nights so I’m going to try to force my brain to meal plan Thursday-Thursday and have delivery on Thursdays to make it happen. Won’t happen this week but hopefully from next

Similar struggles here so have decided to let DD have whatever she wants (all lasagne, spag bol, chicken wings and chips, so boring and all stuff I don't want) and cook properly for the rest of us!

Tonight: Roast veg bowls with chickpeas and feat
Monday: HFW red cabbage, parsnip, orange, pecans and date salad
Tuesday: Mexican Salad
Wednesday: I'm out, the others are having aforementioned chicken wings and chips
Thursday: cod puttanesca (Ottelenghi does it with salmon) and rice
Friday: steak for DD and DH, tempeh chillli for DS and I. Served with roast potatoes and braised leeks
Saturday: DH and DS away for a week, DD will have pizza with a friend who's sleeping over. I am going to have my favourite I'm on my own dinner of hummus and crisps and I can't wait!

We have Hello Fresh vegetarian for 3 (maybe stretch to 4) dinners
1 Bean burgers, salad and potatoes
2 Tofu kiribath- a new one on me.
3 Chickpea and couscous with Ras el Hanout and goat’s cheese

Then I’ll do a range of my usual Summer dishes like
4 Mixed rice salad with tuna and hard boiled eggs
5 Roasted veg and smashed potatoes with salmon.
6 Aubergine Parmigiana with a choice of protein.

I’m going to an Osmiza on Saturday. They’re strange roadside tavern/coaching inn places from the time when NE Italy was part of the Austrian empire. They serve plates of cold cuts and cheese, homemade cakes and rough white wine.

I did the planning for last week completely forgetting that I was away for work. That was a bit of a mistake! haha. Then ridiculous heat and DH hasn't been around so I'm trying to start sort of from scratch but using up what's in the fridge.

So

No-cook ricotta/spinach pasta (with smoked salmon for DS)
Halloumi fajitas
Baked (or BBQ) chicken pieces with new potatoes and salad
Chicken taco bowls
Chargrilled greens onflatbreads with halloumi

I can't really think beyond that. It will have to do!

Big change to the meal plan this week. We were getting a "little" (ha!) bit of work done in the kitchen on saturday morning, which ended up taking all of saturday and most of sunday... So saturday ended up being takeaway pizza and we had the stuffed chicken last night. Pulled pork has not been made so that also knocks out the planned burritos which are now substituted with quiche and salad. Pork shoulder is in the freezer and will happen next weekend instead.

I've got the week off which I'll be spending doing tiring and messy home improvements, so the menu will be fairly simple.

Sunday: pot roast chicken with peas, lettuce and bacon
Monday: coconut poached cod
Tuesday: jacket potatoes
Wednesday: vegetable soup with bread and cheese
Thursday: chraime
Friday: pizza
Saturday: pasta with broccoli and creamy miso tofu.

I ended up having hummus and crisps one night, and I cooked an M&S chicken pie from the freezer with roasties and peas last night.

Tonight is salmon, spinach, steamed potatoes, maybe broccoli.

Tomorrow is a proper tomato ragu with country sausage meatballs and mushrooms, and pasta. With at least 1 more serving to freeze.

Mon will be a lamb bhuna that I’m making tomorrow (-and freezing a couple of servings).

Tuesday is probably buffalo chicken wings and chips.

Wednesday will be either pasta, lardons, a mix of stir fried veg and tomato sauce. Or chicken fajitas.

Thursday some Greek style lemon garlic chicken, roasties, and baked courgette.

Friday is pizza night. I have a base, sauce, nice mozarella, and will decide on toppings then.

I am still manic but need to get better food into me. I’m also pre-juicing my lemons and grating my ginger for my morning wake up drink (I freeze the lemon juice in icecube bags when I do a batch, which lasts a couple of weeks), and chopping mixed fruit for breakfasts between today and tomorrow. And I may even get organised enough to make 2 salad lunches.

But when food shopping today, I also got a fresh tub of hummus and breadsticks, a Camembert I can bake with a part baked baguette, and some avocados and cooked prawns - to make slightly better “nothing” meals than just crisps and wine on the bad days - because there’s another couple of weeks of those yet.

I really have been struggling to stick to meal plans. DH has now been sick for almost two weeks - he says he feels a bit better today which is a relief as I was about to insist he goes back to the doctor - and work has been manic.

HIlariously, DS (14) has now suggested that it would be a good idea for me to have "like a meal menu so we know what we're having every day." He couldn't work out why I was falling about laughing but I told him from now on I'd put the meal plan up on the board instead of keeping it on my computer on MN To be fair to him, for the last few days when he's asked what's for dinner Iv'e told him I don't know. That was clearly stressing him out. Dinner is a very big deal for him and his ADHD brain! Grin

So this week we have:

Fish cakes, new potatoes, salad
Steak sandwiches made with flatbreads, mushrooms and onions and a slaw on top
Halloumi fajitas
Chicken taco bowls
Roasted butternut and ricotta pasta with bacon.

Tomorrow - sweetcorn fritters and Tex Max salad
M - spanakopita stuffed peppers and lemony couscuos
T - Thai tofu noodle salad
W - fishless finger tacos
Th - pesto gnocchi salad
F - mozzarella and sundried tomato frittata

I just bought an air fryer, so if any of you have good air fryer tips or suggestions, please let me know.

Meals for next week are:
Sunday - spanakopita
Monday- roast sea bass with broad beans and chorizo
Tuesday: sardine fishcakes with a big salad
Wednesday - jambalaya
Thursday - DC cook and choose the meal
Friday - pizza and salad
Saturday - halloumi bake

I've found myself planning lunch menus for everyone this week too, in an attempt to get my adult AuDHD son eating three meals a day rather than one 🙄 - and also because I was buying random stuff that only I seemed to be eating and having to chuck stuff away.

But this is just evening meals

Tonight - Baked ricotta, rainbow beetroots, salad/ready meal lasagne

Monday - five a day fried rice

Tuesday - falafel burgers/lamb burgers with feta and tzatziki

Wednesday - Miso salmon with broccoli, sesame and ginger noodles for the rest of the family while I am out, might try and pre-cook myself aubergine and pepper tagine with halloumi and that can be an extra lunch too

Thursday - spicy pork on little gems, green beans and egg stir fry, rice

Friday - fish and chips on the beach

It's too hot to think about food and I'm very ready for a holiday.

Monday - nice bread, cheese, pickles. hummus etc
Tuesday - I'm eating out; everyone else is fending for themselves
Weds - bibimbap, as we haven't had it for ages and we all enjoy it
Thursday - fish curry or paneer curry, with salad. rice or parathas, depending on how hot and grumpy I may be feeling by then

Tonight: One pot cabbage and flageolet beans with sea bass, potatoes

Monday: Lebanese green beans and vermicelli rice

Tuesday: Creamy, spicy courgette and tomato pasta or Chicken Kyivs with oven fries

Wednesday: Roast carrot biryani/chicken saag masala ready meal

Thursday: Tapas - padron peppers, Felicity Cloake's perfect patatas bravas (they are perfect, but I just do garlic crushed into mayo instead of aioli), green beans and almonds, chorizo and mushrooms, nice bread, olives, shop bought tortilla,

Friday: Kohlrabi, beef and cashew stir fry

I saw another tapas recipe last week that sounded really easy and would use up some courgettes, but I can't for the life of me find it again!
