I'm in need of a distraction project from life - anyone fancy joining me in an attempt to cook my way through Jamie Oliver's latest?

So far .. have made Quick and easy fish curry. Made this for DM and I - went down well with us both. Used haddock as cheap and the rest was store cupboard which was handy. I was a bit heavy handed with the lime pickle and it showed in the taste so I'd def recommend to stick to his quantities there. The result was lovely and we both cleaned our plates though! Timing said 15 minutes or so and I couldn't do it in that as he had you both halving tomatoes and chopping the fish and then cooking the tomatoes all at the same time... so I did the prep in advance

Also tried Korean Rice - with Kim chi. This was a super tasty and easy lunch to put together. Really enjoyed it both of us (Dh and I). I wouldn't need the recipe next time as it's a great idea and technique to get your head around and will be good to have at my fingertips.

Plan tonight is harissa chicken tray bake.. looking forward to it!

I've seen good things about the flatbreads on here and I'm also planning those for tomorrow

Also tried the orange cake which was ok but very honey flavoured which I'm not keen on.

I might swap for maple syrup next time. I also added some caramelised toasted almonds to the top (using orange juice and icing sugar) which looked nice.

There's a theme with these recipes for me, nice with a few extra ingredients which kind of defeats the point 😂

Flatbreads done. My face was Confused at egg and mango chutney but I'll eat my words as it was lovely. Needed a lot more flour though, not sure why

So I had half the flatbread dough left over and somehow made a kids recipe out of it despite the fact I have no DC Grin
Anyway. Flatbread vaguely rolled patted out. In to pan, switch your grill on. Flip over and top with pizza sauce (I used Morrisons pizza topper), any meat/veg (I used ham and chilli) and grated cheese (mozzarella and mature cheddar here). When you've done that the bottom side will be cooked, take pan and shove under grill until bubbling

Sticky chicken stir fry: barely needed the recipe for this one so it was ideal for a need to cook for DH and I two minutes after walking in the door at 8pm.

Didn't serve the peanuts as found them in the kitchen later forgotten- both DH and I agreed they would be great with this.

Really good and sometimes it's great to have a straight forward recipe you can follow whilst catching up with DH and listening to the archers...

Just joined this to say the green spaghetti is a work of genius that has changed my life haha! I have made it 3 times already, each time using different greens based on what I had in the fridge that week - cavalo negro, kale, spinach - and each time it was absolutely delicious (just have to slightly vary the amount of pasta water I put into the blender).

I subbed torn mozzarella for the ricotta a couple of times, too, and it worked well. So versatile, easy, quick, cheap, nutritious and yummy :)

Those that are a fan of super green pasta or anyone else with this problem- how would I make it dairy free? Would it still be nice?

Ingredients are pasta, garlic, greens, Parmesan (can buy dairy free) and ricotta (can't)

While the ricotta is lovely, imo it's a bit of an extra rather than integral to the recipe. Maybe some really nice cherry toms sliced in half? Different taste and texture to the ricotta obviously, but a nice sharp/sweet taste to cut through the pasta and beefs it up a little.

Make sure you season well with salt and pepper - really important with this dish anyway, but doubly so without the saltiness of real cheese. Maybe also add a little more garlic.

Lemon juice should help too if you leave out the ricotta.

Cod wrapped in pancetta with lentils

Used the Jamie oliver branded lovely lentils - really enjoyed this. Should have used more spinach as I always forget how much it reduces when cooked.

Really really nice and a nice touch on white fish which I can find a bit bland (the way I cook it). Might well have for lunch as still have pancetta left...

Planning the roast tikka chicken tonight - those that have done it - did you really put straight onto the oven shelf?

Did the roast tikka chicken last night, put it on the oven shelf. It is perhaps the easiest meal ever! Haven't looked at the oven yet - will try the dishwasher suggestion but my oven needed cleaning so I wasn't to precious. It was really good but he suggests a 1.2kg chicken, I used a 1.7kg chicken - it needed longer to cook but it was the perfect size for 4 people. Kids loved it!

Ginger shakin beef is excellent! Highly recommended, given how easy it is - great weeknight meal.

Did the gnarly chicken tonight. Not sure about the grill as chicken wasn't cooked through and I had to put it back on the hob. Tempted to cook the chicken more and do a thinned down sauce so I can have the sauce on veg. Sauce was gorgeous though

Chickpea chard pork- had to do my first ever Ocado order to get the Chard as Tesco don't sell it for delivery here and I can confirm it was worth it! Really different but very tasty and so so easy. I did add some chilli and I think I'd maybe add some lemon juice next time

Also think I may be an ocado convert. My basket was loaded with various things which tesco don't sell - like preserved lemons and chilli jam (new favorite ingredient)

Thanks Yazoop and Funknll for the suggestions on the green pasta - I think I'll give it a go with lemon. So many people have reported good things on here and I think it could be good for DS

Pear and Gorgonzola farfalle- firstly I need to state that I used dairy free blue cheese substitute so it's not really the same dish. The chicory and the pear contrasted nicely and the crunch of the walnut pieces added texture - it's not the most attractive finished product (hence the book picture is pre final construction) but I throughly enjoyed it and it took the time it took the pasta to cook (it usually takes me much longer than Jamie's timings... mostly due to chopping)

I made the carrot and grain salad the other night though I used goats cheese not feta. Was really nice.

Pesto chicken thing was lovely. "Like a posh Greggs" said ds. Also the Tikka chicken. We didn't like the pork and chickpeas. Lamb stew was nice but needed garlic. The pickled onions worked really well, though. Lamb curry was good but needed more curry paste. Our favourite is still the sticky lamb chops

Roast chicken tikka- used rogan josh paste as it's what we had in. Would be quite tempted to try this with Thai curry paste or similar with different veg. The potatoes didn't cook - no one else has reported that so think I must have cut them up too big- might rewatch that bit to compare

I did put it straight onto the oven shelf... haven't been brave enough to look at it yet today. Like another poster said- it does need cleaning anyway and may just shove in the dishwasher and see how it gets on!

I made a mess of my oven yesterday making the roast chicken tikka. It was manageable I suppose Hmm

DH whined that the flavour was in the skin but we don't eat the skin, despite me pointing out it was in the veg too. I subbed carrots for cauliflower as have cauli dodgers. DS said it was too dry and he preferred more sauce or gravy.

So prob won't bother with that one again.

I'm sure someone had done the rendang on here - I've got the wait rose spice blend (Ocado again!) but I'd never normally cook a rendang without lemongrass, garlic, ginger and galangal. Do you think it would be worth adopting the idea with the mince but putting the extras in?

Don't have galangal anyway but I do have ginger and frozen lemongrass so it wouldn't be too much trouble tinge honest.

I mentioned rendang to DH and he's looking forward to it - but I think he's expecting the rick stein one I've made in the past...
