After work quick tea, wolfed down by the DC!

Cooked some pasta
Chopped up a couple of tomatoes and a ball of mozzarella
Fried up a box of lardons
Mixed the pasta, mozzarella, toms and lardons together. Added a few black olives, a couple of abel spoons of philly and a blob of pesto
Stuk it in a dish
Cover in grated cheddar
Grilled it

I thought I'd made enough for DH's tea too, but there's hardly any left. This never happens! They both ate it all up, even DS who "doesn't like tomatoes".

I called it "Pizza Pasta" because its all the stuff you'd usually get on a pizza, but in pasta.

It also works (but so quite so yummy) if you boil the ravioli first, heat up the sauce - mix add cheese and grill - can be ready in about 6 or 7 minutes that way.

Sorry if already done but these are two family favourites:

Tuna pasta

Boil pasta (add peas last minute if liked)
Add tin tuna
Add tin sweetcorn
Dollop of mayonnaise
Mix and serve.

Pea and bacon pasta

Fry onions mushrooms garlic bacon
Boil pasta
Add peas to frying pan then cooked pasta reserving a little of the pasta water
Add dollop of creme fraice or soft cheese (have even used dairylea triangles)
Mix in with peas bacon add lots black pepper and Parmesan-a really quick easy dinner which we all eat!

Does anyone make rissoles?
I think you basically get any old meat bits, mix with mashed chickpeas/lentils/veg, whatever really and an egg, coat in flour and fry as a kind of patty (sp?).

Anything goes and they are v tasty regardless of what's in them.
My mum used to make them all the time but I'm not sure whether she ever had a recipe or made it up!?

Oh another I used to do. Buy sausage meat, you can usually find it at weekends, they put it on for roast dinner accompaniments.

Mummy`s sausage stuffing.

pack of sausage meat or squeeze out the sausages)
1 onion (diced)
2 slices of stale bread (I toast it) blitzed into breadcrumbs
some sage to taste either fresh blitzed with the bread or a teaspoon from the jar.

mix the whole lot together in a bowl, throw into a 7" sandwich tin, cook in a hot oven 180c fan oven for me, cook for 30 to 35 mins. Then take out and slice. My family fight over this one, I usually double up on everything because as a leftover it is yummy cold.

Serve with any vegetables and potatoes of any form.

I too did JAnice's pancakes this morning with left over gammon and cheese, 8 minutes from start to finish and went down a storm, in fact they want them again tonight Grin

pointythings I have made your curry, substituted broccoli and carrots for mushrooms, cauliflower and frozen spinach!
Don't know if the dc will eat it but it smells amazing!

Checkpoint I love mushrooms and cauliflower but one DD won't eat the cauli and the other won't eat either the cauli or the shrooms...

Wow some great ideas here. Apologies for not reading the whole thread yet. Has anyone else mentioned pea omelette? Another quickie in our house is pasta added to Sainsbury's chicken and sweet corn soup. DD12s favourite. If she ever cooks her own tea that's what she always cooks herself.

When my DC were at school and needed packed lunches they got sick of sandwiches but used to love this:

A sachet of Uncle Ben's microwave rice, (usually the Mexican one or the vegetable Pilau one) cooked and left to cool.

Then add some cold marinated chicken fillet strips you buy in a pack from the chilled section of the supermarket, (tandoori, Mexican, sweet chilli, barbecue, garlic and herb, whatever flavour you like) chopped into smaller chunks and mixed into the cooled rice.

Then you can add cold drained mixed beans from a tin, cucumber, halved cherry tomatoes, peppers or whatever they will eat.

Then depending on the flavour of the rice and the chicken I'd drizzle it with a bit of dressing, either mango chutney mixed with yogurt or mayo, or a bit of sweet chilli sauce or chipotle hot sauce with mayo or whatever. Not swimming in it, just enough to stop it being dry. And stick it in a Tupperware pot with a fork.

Fish "pie"

Fish fingers or breaded fish pieces in the bottom of an oven proof dish, top with a can of baked beans, or some white sauce/cheese sauce, top with mashed potatoes (I use instant - no shame here!) in the oven for 25 mins, serve with salad or green veg.

Chicken bake

Chopped chicken (thigh here) fry off while a few chopped up broccoli florets are cooking, mix together, add a tsp of curry powder to a tin of condensed mushroom soup, pour soup over chicken and broccoli, top with grated cheese and breadcrumbs, bake for 15-20 mins until crispy and golden.
