Your absolute favourite slow cooker recipe?

Now that autumn has landed I've dusted off the slow cooker. I'm using it about three times a week, but my repertoire is fairly limited. I'm not an extravagant cook by any means.

I've done tagines, casseroles, beef roasts and a curry but looking for more inspiration.

Please can you share your favourite fool-proof slow cooker recipes? Thanks Smile

I have an ancient crock pot. It's basic but that's all you need. Never let me down. I think DP paid about £25 for it.

Got veggie stew going right now. Heinz Spring veggie soup as base - browned some red onions, added garlic, celery, lentils and split peas... a couple of those veggie Knorr Stock Pot thingies, a teaspoon honey, a glass of wine, salt n pepper and a bouquet garni... Chucked in some dumplings. Lovely! Having it for tea when we get back in from dog walk, later.

This is a really lovely creamy chicken pot pie that doesn't actually need any dairy (DD has Cows Milk Allergy).

  • I substitute in vitalite spread to make it dairy free.

  • I dont add any salt.

  • I brown the chicken and onion before putting in slow cooker.

  • I also add more carrot and more celery. I finely slice the celery and you can't actually tell its there (my brother hates celery and it was only after he'd finish and was raving about how nice it was that I told him how much celery was in it) and its now his favourite meal.

  • I dont bother peeling carrots or potatoes - just wash them

  • It's not an English site so, to save confusion, biscuit just means puff pastry.

I always brown onion and meats. If meats and onions haven't been sealed/browned the flavour is supposed to be totally different. There are also people who question whether its truely safe.

You can get slow cookers that can be used to brown things first then be switched to slow cooker mode. ASDA were selling one recently I want it

Oh and to the person who asked for slow cooker recommendations - standard slow cookers are basically all the same. So buy the cheapest, unless you want one that does the extras like being able to brown the meat and onions in there first.

3.5litre ones are big enough for 4 adults.

Cauliflower and lentil curry. I soften a chopped onion on the hob first and add spices and curry paste so they can cook a bit first. Put that in sc with red lentils and a tin of coconut milk. Cook for a couple of hours then add cauliflower florets for 3-4 more hours. It makes a lovely rich curry sauce.
DH cooks gammon with a can of coke, sliced onion and a few cloves.

I have one of those that can also brown meat, simmer, boil and all that. Very convenient, but not strictly necssary.

Ah, Blue you answered one of my niggles about slowcooking chicken & veg - there's so much fuss about using different knives & chopping boards that I did wonder about chucking the whole lot in together and leaving them to mix for 4 hours!

Very simple curry today. Kids refuse to eat recognisable vegetables in anything, apart from onions (go figure) so this has frozen beef cubes, browned with some red onion and garlic, then fried with the spice mix from Aldi's curry sauce, followed by curry sauce (Balti today) dropped in. Bring upto boil and lob in slow cooker. I use a wok for frying it/bringing upto boil, so as I'm quickly making this, put kettle on for a coffee and then use rest of boiling water to wash up wok. Which leaves only the crock pot to be washed up later.

The kids won't have it that 'non lumpy' sauces like curry, and pasta sauces actually contain the hated veggies. Wink

That lasagne!!!! Shock

I made a gorgeous sausage casserole yesterday:

8 sossies
Tin baked beans
Tin chopped toms
Chopped baby potatoes
Mushrooms
Onion
Garlic
Worcester sauce
Tablespoon whole grain mustard
Mixed herbs

I fried the onion and garlic with the sausages to seal them before chucking it all in the pot for 7 hours. Served with a dollop of mash. Tasted lovely. DCs and DP all loved it too.

I have an Instant Pot that i use on slow cooker setting to cook:
Chicken tortilla soup
Beef bourgingnon
Chilli Marrakech
Drunken cajun chicken
Beef massaman curry
Butter chicken
peanut pork
fish chowder

It has changed my life!

I'm watching this thread with interest for more yummy recipes

Misterbig the lasagne is really simple. Just make a ragu like you would if you were oven cooking it. layer it in the SC with double layers of pasta sheets (remember the double layers!), then finally top with grated cheese.

You can incorporate a white sauce as well, but I didn't bother, for simplicity sake.

If my memory serves correctly I cooked it on low for 6 hours?

A favourite of mine is
1 400g tin each of flageolet, kidney and butter beans (or variety as liked)
An onion, a carrot and few garlic cloves chopped and browned
1 tsp brown sugar
1 tbsp Maggi chilli sauce (or more)
1 tbsp red wine vinegar
A lemon sliced thinly and slices quartered
Salt and pepper to taste
Cook on low for about six hours and eat with lots of grated cheese. Making this today!

I like the fakeaway donner kebab with pittas and salad and sauces, minty shredded lamb in baguettes, pork stacks and Mongolian beef with rice. Hit me up if you want any recipes :)

Surprised no one has mentioned campfire stew. A big hit here, usually served with jacket spuds.

Beef in Guinness.

Cook onions.
Braised beef cut into chunks toss in a bag with seasoned flour.
Sauté beef.
Put onions and beef into slow cooker then add some Guinness to pan to de glaze. Pour onto beef add rest of Guinness.
I make this regularly for some guys working on a property and they love it. I buy the local beef which is amazing and very tender.
I put it on in the morning and we eat at 7pm.

If you make a load of it you can then freeze it in smaller portions.

I made the Hairy Bikers Chilli Con Carne last time.
