Your absolute favourite slow cooker recipe?

Now that autumn has landed I've dusted off the slow cooker. I'm using it about three times a week, but my repertoire is fairly limited. I'm not an extravagant cook by any means.

I've done tagines, casseroles, beef roasts and a curry but looking for more inspiration.

Please can you share your favourite fool-proof slow cooker recipes? Thanks Smile

Layer of slice potatoes on the bottom, layer of lightly fried chopped bacon (I use smoked streaky bacon) and onion. Second layer of sliced potatoes. Pour over 400ml of veg stock (I use Swiss bouillon powder for extra flavour), season and then top with sausages, pre fried for colour. Cook on high for 4 hours.

Anyone got any good vegetarian examples (other than fudge Grin)? I've been wondering about getting one, but can see the benefits mainly being for slow-cooked meet. I imagine they must be good for anything involving pulses, though.

The recipe i gave above for kolokasi can be done without meat. Kolokasi is also known as Taro or eddoes.

I saw a recipe on an American website for red wine hot chocolate. It sounds so gorgeous and decadent. I know I would never be able to get away with making something chocolate based that the kids couldn't touch. So I do gammon on tinfoil balls. Sometimes do it with bottle of cherry Coke thrown in. Never have leftovers as the whole family starts attacking it as soon as it comes out. :o

Thanks Bruffin, think I might try that even without a slow cooker, have often seen kolokassi dahn the market, but didn't know what they were/their name/what to do with them! Good with chickpeas maybe? Have yet to find a wintry veg stew that doesn't benefit from a few chickpeas...

The kolokasi oozes when it is cut , so it thickens the tomato anyway. , we never put onions in it was my dad couldnt eat cooked onion

Becadillo I do a vegetarian lasagne, even my kids love it.

You need random veggies of your choice - courgette, aubergine, pumpkin, leek, peppers, mushrooms, onions, spinach etc. Add herbs - oregano, basil, as you wish.

Chop, fry on the pan until soft and most of the water has evaporated. Mix in a tub of ricotta.

Take a random jar of pasta sauce of your choice. Layer the sauce, lasagne sheets, veggie filling, grted parmesan. The more layers the better. Last layer you can also top with mozzarella.

Cook about 4 hours on low.

Yes veggie recipes, dahls and curry things fairly healthy would be good.

Also, baked spuds in sc? How, and why didn't I think of this before! Can you get a crispy skin though?

For he tbrisket I put it in a small a joint then cut up about halfway through as easier to cut then.

Stewing steak (don't bother browning first) tinned chopped tomatoes, garlic, onions, oxo cube, glug of red wine cook for 6-8 hours on low setting. Add chopped peeled potatoes and chunky chopped carrots a couple of hours before the end. Produces a rich and sticky sauce over melt in your mouth beef, Serve over mash. Yum

Also gammon, cooked in coke for 8 hours, pull apart drizzle over honey glaze no caramelise in oven a bit.

Last night we had maple mustard chicken - chicken breasts browned, then a couple of chopped leeks, carrots, an onion chucked in (I soften slightly in the pan I browned the chicken to get the flavour), deglaze the pan with some chicken stock, shake in lots of dried herbs, couple of dollops of whole grain mustard, maple syrup (would have used honey but gave to ds 10 months), and then cooked for 4 hours on high (or all day on low). Stir in creme fraiche just before the end of cooking and serve over a pile of mash. Would be lovely with cider replacing the stock and bacon added too.

Sausage casserole tonight with pads of veg and cannellini beans.

Rice pudding with coconut milk is gorgeous and creamy. Would love to try fudge!

becadilllo I do this slow cooker quinoa enchilada. Its really filling and so easy especially if you have some cup measures - it's my 'go to' Friday recipe

I also do fajitas - chicken, frozen onion, frozen peppers, fajita mix and jar of salsa. Throw it all in( no need to brown the chicken) then cook on low for about 6 hrs then shred chicken and remove lid for last half hour to thicken up

The fudge recipe is one I found on the slow cooked wonders fb page mentioned earlier.

180g chocolate - any will do. A lot of people say that cheapo chocolate makes nicer fudge
15g butter - I'm not sure whether it has to be unsalted or not; I tend to use unsalted anyway
A tin of carnation condensed milk
(Some people say to add some icing sugar to help it set but I never have)



Break up the chocolate into small pieces

Put it all in the sc on high without the lid

Stir with a metal spoon every 10-15 mins

When it has all melted and the surface sort of cracks when you stir it (takes about an hour), tip it into a lined shallow cake tin and leave to cool before putting it in the fridge overnight.

When it's ready, cut into chunks.
It should save for 2-3 weeks in the fridge, or for 3 months in the freezer, in an air tight container.

I've got potatoes in slow cooker now. They don't get crispy skins but still lovely. I've done Dahl,veg lasagne, rice pud, chocolate puddle pudding, syrup sponge etc. Did a lovely bolognaise sauce for dinner last night. Went down very well! Love my slow cooker

Chorizo and Bean stew/mix/thingy

Chuck in the following:

1 large chopped Spanish onion
2 tins of chopped tomatoes
500g of dry pinto beans
1 can of kidney beans
1 chopped chorizo sausage ring (250g)
2 cans (from the tomatoes) of water
Pinch of chilli flakes
2 teaspoons of paprika
A dash of cayenne pepper
Salt and pepper
A chicken stock cube
2 teaspoons of oregano
Glug of red wine

Then turn on low and leave all day (around 10 hours)

Serve in a bowl topped with some grated cheese and fresh parsley with abread roll or garlic bread. Thus will make enough for around 6 people and is warm, comforting and delicious. Oh and quite healthy.
