what do you do with Halloumi ?

i made a fritatta and put some chunks in, very tasty.

but what else would you recommend?

I know this thread is over a month old but can I share a tip about hallumi.
I've always cut and fried it. However I was in a Turkish restaurant on Tuesday and the hallumi was gorgeous. I was talking to the owner/chef and he looked in horror when I said I fried it.
He said stand it boiling water for about 10 minutes to get rid of a lot of the saltiness and then grill on a hot temperature until the outside looks cooked.

DH has just made me hallumi wraps with mushroom and tried it this way and the difference is amazing!

Wow - so much halloumi love. Including me. I fry in garlic oil, then layer up on a sandwich with some kind of crusty bread, lots of lime or lemon, pepper, tomato, cucumber and maybe avocado.
Love the halloumi burger ideas. I generally do cook a whole block, save half for tomorrow, then scoff it later that night out the fridge, nuked.

We eat a crap load of hollumi with dh being Turkish Cypriot and me being vegetarian, one way which is lovely is coated in a light batter and fried served with chips and peas as an alternative to fish!

On Sunday I soaked it in boiling water for 10 minutes , wrapped it in foil and baked it.
My kids like it sliced and use it to scoop up humus.
