what do you do with Halloumi ?

i made a fritatta and put some chunks in, very tasty.

but what else would you recommend?

Mmmm....I love halloumi. I just chop it into cubes and brown it in a dry frying pan (no oil), then chuck while still hot onto a salad - simples. Even the DCs love it.

You have to grill or fry it; otherwise it's very bland and rubbery.

I usually slice and grill it to have with roasted veg, yum. I think it's quite nice raw cut into very small chunks and tossed in a salad, but it's very salty so you wouldn't want a lot.

My favourite way to have it though is to cut into cubes, mix with cubes of courgette and roasted pepper, coat the whole lot in harissa paste (rose harissa is especially nice) and put it under the grill until it starts to brown. Then eat it with crusty bread. Delicious.

A variation on the halloumi mushroom burger. cut a burger shaped sliced of butternut squash and roast until soft (no need to peel) and put in a brioche bun with a slice of dry fried halloumi and your preferred salad, relish etc.

i usually have feta in salad/cold lentils so cooked halloumi sounds a good option instead?

I fry it or grill it and have it with tomatoes, avocado and sometimes crispy bacon bits. Lush. With balsalmic glaze on top.

As below, fry it and have in burger buns with giant roasted mushrooms. Bit of lettuce, sweet chilli sauce, red onion. Gorgeous.

Love it, mostly fried with salad in a pitta with chilli jam. Had it in an omelette last week-was OK, thinking next time I will try v hot pan & thickly grated halloumi to see how that ends up. I always think of it as veggie bacon- one of my Dave meals though & you can get lighter halloumi, not much difference in taste imo

Roast veg (courgette, sweet potato, red onion etc) for 15 mins.

Add red lentils and then a little stock

Stir & cook for 15 /20.

Lay sliced halloumi on top then grill.

Delicious.

Depends what you eat it with.
Roasted vegetables and halloumi = healthy.
Some of the other recipes on here = much less healthy!
