what do you do with Halloumi ?

i made a fritatta and put some chunks in, very tasty.

but what else would you recommend?

Fry bacon. Remove from pan then fry halloumi in bacon fat.

I just told the nacho cheese joke to OH and he didn't laugh. I'd LTB but he pays for the halloumi (which we're going to make into those halloumi kebabs that were linked earlier)

Roasted vegetables - sweet potato, red onion, red and yellow peppers and garlic - and then grill halloumi on top.

Just fry slices with minimal oil, and eat with cherry tomatoes and cucumber.

Halloumi does not need anything doing to it, marinating it and covering it in chili etc is sacrilege, although it is good grilled.

Just eat it uncooked with a cucumber tomato and coriander salad, It is also really nice with water melon on a hot day.
My df was from Cyprus and we used to have vats of it sent over from Cyprus back in the 60s., I was bought up on it. Hard halloumi is a good alternative to parmesan.

Love it!!!

Last night I made fried halloumi with chicken and sweet potato salad - was divine!

Also you can make vegetable skewers and put them on the BBQ.

Nigella's one with coriander and lime or whatever, sublimely fabulous.

LOVE the stuff. Have a block in the fridge, just working out now how to incorporate it into our sausage supper!!!!

I don't think frying it in a little olive oil can be bettered.

I did grate it once and make some courgette and halloumi fritters a while ago, and indeed they were delicious. Though not as delicious as the cheese by itself. And more work.

Oh I absolutely love halloumi; I'm off work today so had time to make a decent lunch which was salad with avocado, cherry tomatoes and grilled halloumi. I usually grill it but sometimes dry fry and we have it on salads, in frittatas, on burgers, on skewers with roasted vegetables, with bacon in a sandwich... it goes with pretty much anything!

If I had halloumi for the first time and thought it tasted like dry, incredibly rubbery nothingness, does that mean it was badly cooked?!

Was excited to try it for first time at a BBQ and was so disappointed. It was grim.....slightly sweaty tasting and a terrible texture. Is that overcooked do you reckon?

I overdosed on halloumi when I worked in Cyprus, as it's so ubiquitous. But I'm back on the old squeaky cheese again now Grin

I do a lot of the above - but it's also a good, if salty, alternative to paneer, and I think I most frequently chunk it and add to veg curries for some protein. Curry also keeps it hot and therefore melty - you don't want halloumi to cool down.

I had halloumi and pork pitta burgers yesterday.

So chop halloumi into small cubes, mix with pork mince, dash of seasoning, finely chopped onion and egg to bind it. Form into burgers and cook. Serve in pitta with avocado and sliced peppers

Or a cucumber and tomato salad with oil and lemon, salt and pepper.
It's the simple things!
Another fond memory from my childhood was small macaroni, cooked in chicken stock, with grated helim, black pepper and lemon juice on it....yum!

That Delia recipe is just silly-she starts off by saying that halloumi lasts for ages and is a good standby to keep in the fridge. Huh-I've never managed to keep a block of halloumi for more than 24 hours without managing to scoff it all!

I like it best pan-fried simply, and then served with a salsa salad made with shredded spring onions, cucumber, avocado, sweetcorn, cherry tomatoes, apple, and celery dressed with coriander and lime juice (can add red chillies but my stomach doesn't like chilli).

dry fry halloumi, chuck on top of some raw baby spinach and eat with a squeeze of lime, a poached egg on top and lashings of mayonnaise.

I did a gorgeous salad last week which I've thought about every day since:

  • Bed of baby sinach
  • Streaky bacon crisped and snapped into little bits
  • Finely diced red peppers tossed for a few mins in a bacon-fatty pan
  • Big chunks of halloumi also browned in the bacony pan
  • Jumbo prawns in the same pan with a bit of garlic
  • Sliced kalmata olives
  • Sliced avocado

It was immense Smile

I'll eat halloumi pretty much any which way it comes but my favourite is in a sandwich: griddled halloumi with hummus, rocket and sweet chilli sauce on fresh chewy brown bread. Amazing. Or halloumi and butter bean stew from the 'food for friends' cook book.
