lambs harts have to have all the white veiny bits cut so that they done shrink too much when cooked.
You also have to turn them inside out to clean them.

Stuff them with sgae and onion stuffing.

I could have made a cowboys rodeo saddle with the ones I cooked. I barely even cut it with a bread knife!!
My mum cooks them perfectly though.

Snort at the saddle and chorizo hash as a faux working class meal.It's like that apocryphaltale of Mandelson thinking mushy peas were guacamole.

No corned beef in Turkey but was remembering that hash is bloody good and I bet the kids would love it.

MI corned beef tins have rounded corners - and still have little keys. FAR superior to anyhting opened with a ring pull.

I thought it was called corned beef because it was originally imported corn-fed beef from the ranches of Argentina. Wonderful stuff in a sandwich with good hot mustard- and you can actually see the bits of proper meat, so not 'bits'.

moondog - yes, i pmsl when making it - as i long to make corned beef hash but just cant quite do it.

i ate tripe once and remember liking it...
i do have a father who eats all sorts of disgusting crap though

Turks love tripe soup.
They have special shops that sell it.Tis supposed to be a good hangover cure.

I couldn't do with black pudding.

My mother wrestled with a pig's head and an axe for a whole afternoon
('Split you bastard,just split!!')
because she wanted top make brawn.

Oh yuck, our local butcher sells pigs trotters, 20 for £1 what a bargain!

Does anyone else have grandparents who eat 'dripping' on toast and consider it a treat?

I'd go with a trotter (and in fact do)than some scary reformed ham,which iswhat most of the plastic packedstuff is.

Remember,monkfish was sold as catfood 20 years ago as noone would touch it.

my mother used to boil up pigs trotters and head and make brawn as well - I got to pick the meat off the bones for her...
