Tuesday is mince night in this house. We are having Tacos- spicy mince with lettuce, tomatoes and grated cheese.
We also do mince on toast

Stuffed corgettes (or marrow); or make/buy some suet pastry, mix some veg into the mince, roll out the pastry into a rectangle, spread the mince/veg mix on, roll it up and bake - sort of pastry meatloaf.

Cowboy mince, brown mince with onion (left over bacon, mushrooms, peppers, courgettes, garlic, herbs, whatever else you care to scrape out of the fridge optional) add tin of chopped toms and a tin of baked beans and simmer until gloopy.

Serve over jacket spuds or oven chips.

Yum

The Keema I make

Fry 2 large onions, chopped finely, in some olive oil. Add 4 cloves garlic and thumb ginger (I usually blend the garlic and ginger to a liquid and add to onion when they have been frying for 10 mins).

Chop up a jacket potato into dice and add this to the onions after 10 mins, then cook for another 10 mins (you have to cook onions long and slow, it really makes a difference to the curry).

Add spices - turmeric, cloves, cumin, ground coriander, ground cinammon and chilli powder or hot paprika to taste. Turn the heat up and add the mince and fry off for about 5 -1 0mins until browned.

Add tomatoes and some boilign water.

Then cook for about half an hour on low heat, putting some frozen peas in about 15 mins before ready to serve.

Meatloaf is nice. It feels like a solid meat rather than a slop. Cooked with lentils, some tomato puree, herbs or chilli, it feels a bit more special than mince.

I do my keema with canned chickpeas red peppers and mushrooms, v good (and yes we also add water, I know it sounds odd).
