what to do with mince that is not spag bol, cottage pie or chilli?

Yes it is lovely with chickpeas as well, and also cauliflower florets.

You have to add water I think, otherwise it goes all dry and clumpy.

I do love curries, I used to make a great big variety of them but now just stick to about half a dozen old faithfuls. I should get the books out again and try something new, they are so enjoyable to make.

NettoSuperstar is another MNer who loves curry, she has posted some brilliant recipes as well.

I just eat it as it is, in a bowl with some lime pickle and some of those red Discovery mexican jalapenos from a jar (bit of a strange mix, but I really love them).

DD eats it with some rice or naan bread.

Fry cumin seeds (these add heat too),garlic, ginger, chilli and some sea salt and some fresh coriander if you have it. Add a diced onion fry lightly. Then add garam masala, paprika, dried ginger/ garlic/ chilli/ coriander/ turmeric. For 500g of meat about a teaspoon of each of the spices
Stir in well, add more chilli to taste.

If you?re adding potato add now diced (good way to bulk it out) and then fry the mince till brown, then add the peas, frozen always taste better. They will need at least 3 minutes. Then just before serving add a handful of chopped coriander.

Tastes better next day, the peas soak in all the spices Grin equally as good with beef or mince.
have it with rice, but a fav in our house is to stuff it in to pittas with sour cream or yogurt . Freezes great too

Sounds harder than it is once you have the spices its easy.

IF you do the above up to the point of adding the spud and the mince and add a tin of tomatoes, and then some chicken make a nice little curry too. Or all the veg thats hiding in the bottom of the fridge works too.

A different way to have the chilli / bol bit is to halve a large squash, scoop out some of the flesh / seeds and then roast it in the oven. Then fill in the space with the chilli / bolognese.
It's really nice!

I fry some mince and tomatoes, then put the mince in tortilla wraps, place them in a baking dish, then pour on a jar of pasta sauce, cover with grated cheese and bake for 1/2 hour.....delish and my DC love it :)

Think i'll be trying some of the other recipes on here too :)

getorf one thing DP is a spice wimp, is it very spicey?

I stuff peppers and courgettes with mince (a bit of garlic, onion any other herbs I have in the house). Pop them in the oven with some olive oil and roast them. Sometimes put cheese on top. They are much loved by my veggie-hating DCs.

OOh Gujerati potato wedges

In a big pan heat some oil, then shove some wedged potatoes in. Add liberal amounts of chilli powder, turmeric, mango powder, cumin and a load of salt and stir all over the spuds. Then put them on a baking tray until cooked.

When they are done fry some cashew nuts in a pan until brown and add to the potato (I don't always bother to do this though).

Yumtastic.

If you live near an ethnic area the spices are brilliant, and really good value (as is the meat, and the freshest onions, garlic and herbs).

It can be as hot as you want, the cumin seeds add heat as well as the chillis. start off with half tea spoon. its still really tasty when its mild. It how we started the DNs off on curries

3teen the cumin, coriander, cinammon, turmeric are fine, you could leave out the ground cloves altogether, and just be a bit sparing with the chilli powder/hot paprika. It won't be spicy then, just tasty.

You can always add some fresh chilli or jalapenos at the end.

I usually end up splitting it between two pans as dd doesn't like spice and I like it as an inferno.

3teenhell either rice, or just crusty bread, sometimes a baked potato.

I've also discovered DH eating the stuffed veg cold out of the fridge Hmm so I suspect it would work as a cold dish.

Thank you Getorf, I'm flattered you said that, as I'm still learning and really trust your curry recommendations.
We actually had curries last night, here and my friend who I don't see often as he lives in Aberdeen is coming to stay in two weeks, and on one of the nights I'm going to do a huge curry feast. Four or five dishes at least, plus rice and bread, all homemade.
