quick and easy slow cooker recipes?

i've had my slow cooker a year and only ever done chicken casserole n dumplings in it. i think its about time i tried something new.
ive got 3 dc (1 newborn) so recipes need to be quick n easy.
What do you cook in your slow cooker?

Gammon joint

Buy 1 large gammon joint an 400g of soft dark brown sugar

Put most of sugar in bottom of slow cooker
Add joint on top
Sprinkle on a little more soft brown sugar
Cook on low for 9 hours

Do not add any liquid the sugar and juices from the gammon make a liquid by themselves

Fab with mash and veg

Use left over gammon for cold sandwiches or a pasta bake the following day

Delicious and Easy Stroganoff

600g Stewing Steak
1 can Condensed Cream of Mushroom soup
200ml white wine
200g mushrooms, thickly sliced
2 medium onions, chopped
150g Garlic and Herb Cream Cheese (Boursin rounds are nice)
Garlic - couple of cloves, or to taste
Worcestershire sauce to taste - I use about 4tbsp

-To serve_

Pasta/noodles
Some sour cream to dollop on top.

Chuck all ingredients except cream cheese in slow cooker. I usually do it for an hour on high, then 4 or 5 hours on low.

An hour before serving, add the cream cheese and stir in.

It's gorgeous.

thanks. both sound fab. will try gammon sounds realy simple, just what i need. will also try strogonoff :)

open to pudding suggestions too. rice pud was easy and tasty :)

Pork shoulder joint, can of full fat coke, BBQ sauce (Paul newmans works a treat) on low for 8/9 hours - pork comes out all soft and shredded. It's delish!

Curry is basically stew/casserole but spicier

Chopped onions
Chunks of chicken
Spices (easy version is to get a jar of curry paste - not sauce but paste, which is just all the spices ground up with oil)
Tin tomatoes
Other veg if you like.

Ditto for Thai curry, but use Thai curry paste and coconut milk

Oooh I like the sound of the BBQ pork shoulder! What would you serve that with, I wonder? Mash and veggies or summat?

We have it with mash and veg or chips but it is very yummy with wedges or lattice potatoes mmmmmm

gopd job ive eaten or tummy would be rumbling. love curry so will try that. never used coke in cooking but will have a go.

Like the OP I've only been doing one recipe in my slow cooker for the past 7 years - chicken casserole.

What I need is to be able to switch on the cooker at 8am and serve it up at 4pm. If I did the stroganoff on low do you think it would be ok, or just turned to mush?!

Well I tried the pork shoulder thing today and OH MY BLOODY GOD!

I've never had pork like it. Impossible to "carve" - it fell to bits when I took it out and I just sort of poked it about with two forks and it collapsed into a heap of meltingly tender shreds. Hardly needed chewing. Absolutely gorgeous. We had it with cheesy mash and green beans. Thank you Redlac!

.... oh and I made a beautiful sweet gravy with the (plentiful) juices - just added a couple of teaspoons of gravy granules.

How much BBQ sauce for the pork please??

I just sort of glugged a good dollop over the top of the pork. About a third of a bottle I think, or maybe just over. That's just the sort of chef I am, you know? Slapdash and imprecise with quantities Creative.

I normally whack a full jar of Paul newmans sauce in but I do like it with lots of sauce

I just did the shoulder of pork in coke and BBQ sauce. Sweet Jesus it was fabulous thanks ladies

Right, am going to buy a pork shoulder joint at shop tomorrow :o

Cooked chicken cut in chunks
Pint of chicken stock
Tin sweetcorn
Bunch spring onions, chopped
'Sheet' of dried noodles, snapped into small pieces

Chuck the above in the slow cooker, cook on low for 7-8 hours or 4-5 on high

Honestly pottering, it was one of those that you can't stop eating even when you are so stuffed it hurts

I did cheesy mash and sugar snap peas. I thickened the sauce with cornflour when I put the spuds on.... Ummmmm

Sausages (browned)
Onions sliced
Tin of toms
Sliced red pepper
Sliced carrots
Garlic
Parsley
Knorr chicken stock liquid
Pepper

They all sound great. Redlac do you remove the fat from the pork or just bung it in as is.

I love chicken in my slow cooker as it so easy and you can even dump stuff in frozen. I'll post a few of my favourite recipes, blogs and websites :)

Garlic chicken I have done this with both frozen and thawed chicken quarters and also done it with different seasonings.

Be careful with chicken breasts as they can dry out. Frozen breasts mean you can cook them for a bit longer without them drying out. I either wrap them in foil or add 1-2 tablespoons of liquid - water, stock, wine, lemon juice - whatever really.

Here are a few nice and healthy skinless recipes :)

Seasoned rotisserie style chicken

Sticky drumsticks (I use quarters)

Spicy chicken stew

You could do all of the above from frozen to save time but you'd have to leave the skin on, unless you skinned them before you put them in the freezer iyswim.

In fact I nearly always do the rotisserie style one from frozen. I cook it on high for 3-4 hours or low for 6-8 hours but you can cook it for longer, I just don't need to as I'm not out the house that long.
