is this it

IPreparation and cooking: Depending on size

Made in advance : Up to 48 hours

Freezing : Yes

Serves : Depends on size boiling ham

½ pt (300ml) cider vinegar
1 pt (600ml) dark beer
2 oranges, studded with 2 cloves
2 bay leaves
2 apples, cut in two
2 onions
2 carrots
2 sticks celery
2 sprigs thyme
1 cinnamon stick
few cloves

  1. Place ham in large saucepan and add enough water to cover. Add all the ingredients except the cloves to the pan and bring to the boil. Simmer gently for 15 minutes per lb.

  2. Allow ham to cool in cooking liquid. Cut off all the rind, score the fat in a diamond pattern and insert a clove in the cross point of each diamond.

Ham Glaze

225g (½ lb) soft brown sugar
50g (2oz) polenta
1 tablespoon dry mustard
1 tablespoon black pepper
3 tablespoon bourbon
(¾ pint) apple juice or cider
225g (½ lb) dried, stoned apricots
150 ml (¼ pint) maderia or marsala

  1. In a bowl mix together the brown sugar, cornmeal, mustard and pepper. Moisten the mixture with the bourbon. Spread the mixture over the ham.

  2. Place the ham in a baking tray and pour in the apple juice or cider. Bake in a hot oven for about 15 minutes per lb, basting frequently.

  3. Meanwhile combine the apricots and Maderia/Marsala, bring to the boil, cover and leave to infuse.

  4. 30 minutes before the end of cooking add the apricots to the roasting pan continue to bake and baste the ham.

  5. Serve, sliced with the apricots and pan juices or parsley sauce.
