we're hosting Christmas at our house for the first time this year. I have ideas for what to cook for Christmas day itself, but I'm getting a bit stuck for Boxing day. When we're at the rest of the family's, Boxing day lunch is usually cold meats (leftovers from Christmas day), mash or bubble & squeak, and veggies/salads (including lots of pickled onions, red cabbage).
I would like to do something different, but don't know what. DH and I don't really eat all the pickles, so I'm not too keen on buying in lots of things that we won't eat (although we could give them to the family to take home afterwards). What does everyone else cook for Boxing day? I don't want it to be a massive meal on the same scale as the day before. It would have to be something that can be made on the day, as I really don't think there'll be much space left in the fridge.
