what do you cook on Boxing day?

we're hosting Christmas at our house for the first time this year. I have ideas for what to cook for Christmas day itself, but I'm getting a bit stuck for Boxing day. When we're at the rest of the family's, Boxing day lunch is usually cold meats (leftovers from Christmas day), mash or bubble & squeak, and veggies/salads (including lots of pickled onions, red cabbage).

I would like to do something different, but don't know what. DH and I don't really eat all the pickles, so I'm not too keen on buying in lots of things that we won't eat (although we could give them to the family to take home afterwards). What does everyone else cook for Boxing day? I don't want it to be a massive meal on the same scale as the day before. It would have to be something that can be made on the day, as I really don't think there'll be much space left in the fridge.

Boxing day is always gammon with salad, sausage rolls and cheese and potato pie followed by raspberry mousse and sherry trifle.

The mousse is a compromise as it should be loganberry but I'd be blowed if I can find tinned loganberries anymore.

I do the Good Food Christmas Pie. It can be made in advance and frozen and you can swap any bits that you don't like for stuff that you do.

hogshead - how interesting, why is loganberry traditional? If you have a garden, you could grow them, they are very easy and they freeze very well.

I have a buffet running all day for everyone to help themselves.
Cold cuts, salad, good bread, cheeses, pork pie, sausage rolls,mince pies, xmas cake.

Same again on the 27th.

On 28th I boil a large ham and have another sit down dinner.

We always have Ifits; if it's there we'll have it, if it's not we won't.

Usually bubble and squeak, cold meats, pickles, salad, cheeses, part-baked rolls and myriad other leftovers and nibbles. I enjoy it more than Christmas dinner.

taffetacat - technicially Grin loganberry isnt traditional but it is traditional in my family. It was my gran's contribution to boxing day every year and it was delicious so i always make one now :)

I do have a loganberry bush although this year it produced the grand total of 5 loganberrie which a loganberry mousse does not make!!

Depends. When hosting, I do a roast, maybe beef or pork. If not hosting, we just pick at leftovers. These days though, we go out on Boxing Day. All the family so no-one person has to feed everyone else. Then back to one of our homes to swap gifts, play games etc. Works well.

We alternate Christmas and Boxing day between aunts and sisters so have two full dinners each day. When i do boxing day, I tend to roast a gammon and make a cauliflower cheese, plus other typical sides.

We have ham (joint cooked Christmas eve) with baked potatoes and either salad or leeks in cheese sauce.

Lasagne. A huge slab of it in the dedicated lasagne dish. Plus a salad and the leftovers from Christmas Day. Pickles, too.

People drop in at different times from the sales or football or the traditional Boxing Day long walk. Those that arrive later put a portion in the microwave, so it's a casual way to feed everybody.

Nigella's ham in coca cola is our Boxing Day staple tea, along with bite sized sausage rolls (with Delia's quick flaky pastry) and mince pies. Turkey sandwiches for lunch probably!

We always have buffet nibbles.

So leftover turkey, cheeses, crackers, pickled eggs, dips and breadsticks, salad, usually accompanied with some spicy potato wedges.

Huge pile of crispy fried bubble and squeak, veggie sausages for me, meat sausages and leftover cold meat for the carnivores, fried eggs and baked beans for lunch.

Then cheese and biscuits and nibbles for tea/supper.

Turkey soup (the only reason to cook a turkey in the first place, amazing how such a flavourless bird has such tasty bones), home made crusty bread and any leftovers that people see fit to graze on. Some years might cook a gammon or a game pie to have cold.

For the soup? Saute a couple of diced onions and maybe a bit of garlic in a big pan. Add all the bones, skin, bits of jellied juice with diced carrot, celery, swede, potato, celeriac (any sort of root veg you have to hand really, green veg goes a bit weird if you simmer a long time but if you want to use it, chuck it in a few minutes before the end). Just cover with water, add salt, pepper, couple of bay leaves and a couple of handfuls of pearl barley or Scotch broth mix and simmer for a couple of hours. Allow to cool a bit and remove bones. If you didn't leave much meat on the bones you can dice up some cold turkey / ham, add to the soup and thoroughly reheat. It should be fairly chunky with a lovely golden broth, but you could blitz it if you like a smooth soup. I forgot, take out bay leaves too!
