what do you cook on Boxing day?

we're hosting Christmas at our house for the first time this year. I have ideas for what to cook for Christmas day itself, but I'm getting a bit stuck for Boxing day. When we're at the rest of the family's, Boxing day lunch is usually cold meats (leftovers from Christmas day), mash or bubble & squeak, and veggies/salads (including lots of pickled onions, red cabbage).

I would like to do something different, but don't know what. DH and I don't really eat all the pickles, so I'm not too keen on buying in lots of things that we won't eat (although we could give them to the family to take home afterwards). What does everyone else cook for Boxing day? I don't want it to be a massive meal on the same scale as the day before. It would have to be something that can be made on the day, as I really don't think there'll be much space left in the fridge.

It's so much nicer than the actual bird mrsrisotto ! A sprinkle of chopped parsley on top is nice too.

wobblywonderwoman · 13/11/2016 16:17

We have a roast dinner again (not the trimmings) as we treat it as a Sunday

Other days around christmas - duck and red cabbage

Salmon and baby potatoes

Both are lovely and easy

I don't even think about cooking until the day after BoxingDay

and then it's probably bubble and squeak and more leftovers.

I'm not going to be a huge help either I'm afraid.

This year we're round my MILs for Christmas Day and Boxing Day we're doing a thing at out for my parents. Since we won't have any leftover meat, we're going to cook a small joint of gammon (normally the orange infused one from Sainsbury's is lush). Then we always have cheese, crackers, I've made my own pickled onions and eggs and wil probably ask mum to bring some sausage rolls.

I've baked a Christmas cake so if anyone wants pudding, we can just have that.

We do a beef roast dinner, smaller than Christmas Day though.

roundtable · 19/11/2016 12:27

Nothing - going to the pub and having it cooked for me with my extended family.

Much less stress after Christmas Day cooking!

Usually leftover turkey, ham, sausages etc
Bubble and squeak
Potato and ham cakes (mix leftover mash and chopped ham - shape into burger shapes and fry until golden each side)

Christmas leftover pie - pastry case, add leftovers - chopped turkey, ham, stuffing, sausage etc small chunks of cheese (cheddar/stilton etc) a few blobs of cranberry sauce. Cover in a cheese sauce and bake in oven until golden brown

OohhThatsMe · 19/11/2016 13:02

I cook a big piece of salmon in foil, with lemon - easiest thing in the world, and make a Gratin Dauphinois to go with it. Then turkey sandwiches for supper.

AvengingGerbil · 19/11/2016 13:09

Bang Bang Turkey (Nigella). Boxing Day better than the one before!

GETTINGLIKEMYMOTHER · 23/11/2016 12:37

Nothing! Except perhaps for some baked potatoes.
Leftover turkey and gammon with salad or coleslaw (my own, made with red or white cabbage, onion, apple, celery and carrot and just enough mayo to moisten), baked pots, French bread, chutney, cranberry sauce, pickled onions, cheese, etc.
One of the best parts of Christmas to me is NO COOKING! for at least a day or two afterwards.
Will make a massive turkey stew out of the carcass and loads of veggies on about the 28th. Always a favourite in this house.

Cooking + Boxing Day do not go together in our house. We pick at leftovers and gorge on eat chocolate.

jennymac · 24/11/2016 16:48

We have Christmas dinner again. Much less stressful as the meat is already cooked and just needs reheated, we buy M&S mash and bung in some roast vegetables. Always tastes better on Boxing Day!

If you want to make that traditional Boxing Day meal extra special – Why you not try Tesco finest* Smoke at Home Ham, complete with an Alder wood smoking board. The deep woody flavour and succulent, tender texture of the ham is a real indulgence for all the senses. Serve with pickles and lashings of mustard.
If you’re hosting party with children as well, and want to keep them entertained- the best way to keep them busy is decorate Tesco Gingerbread House. The house comes complete with sweets and a separate gingerbread man and tree. Will definitely keep them busy for a while!

We have Christmas Day just the three of us so food wise that is our easy day with lots bought pre prepared etc.

Boxing Day we have family round and I cook. Today it is my parents, my brother, my sister and BIl and 3y nephew, plus PILs.So 10 plus a little one.

Today it is:

  • BBQ pulled pork - kitchen currently sells of BBQ smoke due to the liquid smoke I am trying out
  • pork crackling straws - all done and cooling
  • smoky sweet potato wedges -and some normal potato wedges - prepared them all, just to cook
  • coleslaw - all made and in the fridge
  • salad - to prepare later
  • range of bread and bread rolls - can smell the tomato loaf thats just finished baking, yum!
  • lots of cheeses
  • I also have various cold cooked meats/smoked salmon, crisps, nuts, nibble type things

Dessert will be a choice of chocolate log, mince pies, various bite size treat things, locally produced ice cream (ave a delicious Christmas pudding flavoured one amongst them) and some berries.

Washed down with various alcoholic and non-alcoholic choices.

Hulababy · 26/12/2016 14:44

ezia you sound like an advert for a certain supermarket!

WhoKn0wsWhereTheMistletoes · 26/12/2016 14:48

Buffet nibbles or something easy like chilli. Never leftovers from Christmas dinner, they are either given to guests to take home on the 25tg or frozen, none of us want them on Boxing Day.

GrumpyOldBag · 26/12/2016 16:21

How much is Tesco paying you to post that garbage, Edzia?

Not exactly in the Christmas spirit is it?

DollyPlastic · 26/12/2016 16:50

Lol Edzia, are you doing The Orchard?

Tesco is shit.
