That's shit. I'm so sorry Dino. Have a wallow and a cry and rant about it.
When you're ready, this website is excellent www.gestationaldiabetes.co.uk it's very practical. The dietary advice given isn't what the NHS advises (not that this would matter for you in Australia) but it really works. I've followed it and my first appointment with the endocrinologist has her saying my blood test results were perfect, everything was under control and that if nothing changed I could still have midwife led care. I don't need to go back for a month which is great.
In particular read what she says about food pairing. So combining fat and carbs or sugar to keep things steady and prevent your blood sugar spiking. It's big highs and lows that cause you issues.
Here's an example of what I ate today, to make you feel better.
Breakfast - slice of frittata topped with bacon and cheese
Lunch - multi grain wrap with chicken, small amount of sweetcorn, mayonnaise and lettuce
Dinner - chicken, chorizo, tomato and butter bean stew
The only real difference to my life is having to snack three times a day which I find infantalising. Today my snacks were
1- two hobnobs with Philadelphia cheese
2 - peanuts and grapes
3 - two oatcakes, slice of cheddar, square of dark chocolate.
My blood sugars were 5.6 after breakfast, 5 after lunch, 6.2 after dinner.
