Would anyone be up for a coeliac chat thread?

Umm...that's it, really! I was thinking a thread for people with coeliac or a coeliac sufferer in the household where we could share recipe ideas and any other questions might be helpful. I did briefly follow something like this on FB but found it a bit intense, as FB groups tend to be!

My DD (12) has coeliac, diagnosed last year. Still getting to grips with some food alternatives but we have quickly found specific favourites (all in different supermarkets, of course!)

So my first question is...any ideas to make GF couscous a bit more flavoursome?!?

Me! I'm not diagnosed but I am pretty sure.

My ideas. Abel and Cole are good for tasty wheat alternatives.

I'd put balsamic glaze on the couscous.

Following for recipe ideas that aren’t gluten free pasta!
my ds’s girlfriend is coeliac and I’d really like to be able to cook a meal she can enjoy without resorting to a safe pasta dish.

@Phineyj I've never ordered from A&C, will check them out.

Risotto, roasts etc are good "naturally gf" dishes as long as you are careful with things like worcs sauce (which my dh sloshes into risotto for some reason) and gravy.

We have yet to find a bread which is acceptable to dd - that's the holy grail, v difficult to replicate the texture without gluten.

@Beautifulsunflowers"meat and 2 veg " type dishes (or with fish) are good as generally you don't have to find gf alternatives (bearing in mind some sauces/ gravy as mentioned above)

Me and my DD both have coeliac disease, DD was diagnosed when she was 4 which was good because she can't remember what normal gluteny foods taste like.
For sandwich bread we both like the schar long life white loaves, think its called wholesome white loaf in the UK. Otherwise GF bread is best when toasted, or fresh from the oven so half-baked breads are good as you can finish them off in the oven, or then make your own but that's not easy, but when making my own I add whey protein which helps a bit with texture as a replacement for the missing gluten protein.

Sweet potato wraps are a lifesaver.... Schar crispbreads are a quick option for snack attacks.

Mine like chocolate spread/marshmallow/ banana or marmite

I either have coeliac disease or non coeliac gluten allergy. I can’t even have marmite without a reaction anymore so liable to thump someone who suggests it’s an “intolerance” 🤣

I try to avoid ultra processed food so most gf substitutes are out. Gf bread is usually powdery shite

id probably flavour couscous with home made stock or, current favourite, teriyaki sauce (which is probably a upf)

My gluten free friend swears by M&S gluten free granary bread.

I like the Delphi range of hummus and related spreads.

Fortunately we are fully signed up members of the upf eaters club - tbh I couldn't cope with cutting out many more stuff than we already have to (we also have high levels of fussiness in the family).

Stock is a good shout re the couscous, thanks.

I use buckwheat as a substitution for wheat. Contrary to the name, it’s actually from a seed. I bake using like for like and things turn out fine - but I quite like a denser bread/biscuit/cake anyway.

Chickpea flour (gram flour) is also good for batters to make bhajis and fritters.

Please can I join? My daughter was recently declared as not having coeliac disease after a long time thinking that she probably did (blood tests then biopsy) but is still strictly gluten free anyway as it gives her pain all the same. So any food tips are gratefully received.

We also UPF all over the menu because of fussy eating and being 10.

I use a mix of roasted buckwheat and quinoa instead of GF couscous.
Wash the quinoa first as it can be randomly bitter, then throw half a cup of each into boiling water for 8 mins. Strain through a sieve.
Fry a finely copped onion in olive oil add some GF stock powder and stir the grains in.
Far more nutrition than maize based stuff.

Unfortunately she can remember what 'real' food tastes like but she's getting used to her new diet.

She like the schar 50/50 best of both rolls but only as a burger/chicken burger, and so far will eat any sliced white bread as a fish finger sandwich. She won't eat normal sandwiches though and doesnt like toast 🙄
For packed lunches i make her sausage rolls with the jus rol pastry and any deluxe type GF sausages. Costs me a fortune but school only provide baked potato for the GF option and she doesn't like them either!

If anyone has a Company Shop nearby and can join us highly recommend it, all bread is 40p per item and they often have GF stuff, we've had m&S, warburtons, schar, genius. We buy what we need and freeze it, because it's cheap I don't mind trying new things, and I have aGF colleague who eats anything so she gets anything opened DD doesn't like unopened goes to the food bank

One of the easiest and most successful swaps we've made is homemade GF pancakes, using Freee flour, eggs and milk to make the batter. They are easier to cook than regular ones as they don't go lumpy. I like mine with a squeeze of lime juice and a sprinkle of sugar.

Marks and Spencer s brown bread, the one with 6 slices for £2.90 is the best I've found. I ration it.

Can I join please? Finally diagnosed last year after two endoscopies and 20+ years' suspecting I couldn't tolerate wheat...

@LoveSandbanks - have you tried supermarket own brand yeast extract in place of marmite? Some of them are gluten free.

I would stir a bit of harissa paste into couscous and maybe add some chopped herbs?

I was sent some juvela(?) part baked "artisan" white rolls in their starter pack - they were amazing, but I cannot find them anywhere!!! (Not even their website?!) Agree with pps that part baked bread is best, I use the air fryer to bake just a couple of rolls at a time.

I feel your pain. DD will only eat white bread but likes the Morrisons white rolls...or at least likes them.better than others weve tried. She sometimes takes cheese and crackers as an alternative (rosemary flatbread crackers, can't remember who makes them now!)

Dd is coeliac, has been diagnosed for over 5 years now.

we don’t have cous cous so can’t help with that sorry. However you mentioned Worcestershire sauce….. Hendersons is gluten free. Being a Sheffield girl we always had Hendersons rather than worcester sauce anyway. It’s far superior.

Dd is also vegetarian just to make things more challenging. She seems to live off home made pizza (make bases from scratch), jacket potatoes, and gf pasta.

We can here but don’t bother any more to be honest. Dd can’t stand the bread. We tend to buy Promise bread which seems to be the best. Expensive of course as all gf stuff is.

In our area we get a list of different brands we can ask for - although I haven't got round to filling in the form yet!
