Would anyone be up for a coeliac chat thread?

Umm...that's it, really! I was thinking a thread for people with coeliac or a coeliac sufferer in the household where we could share recipe ideas and any other questions might be helpful. I did briefly follow something like this on FB but found it a bit intense, as FB groups tend to be!

My DD (12) has coeliac, diagnosed last year. Still getting to grips with some food alternatives but we have quickly found specific favourites (all in different supermarkets, of course!)

So my first question is...any ideas to make GF couscous a bit more flavoursome?!?

@ChimChimeny - have you been to All Mine Cakes by the Lake? I'm on the Notts/Derbyshire border so it's not super close by but not too far for the occasional trip. Just get paralysed with indecision as everything is gluten free

Not yet, but we're going next weekend and DD has asked to go for lunch on her birthday 😍
I follow their facebook page and we both drool over the cakes, DD isn't sure if she'll even have main, just go straight to dessert 😋

I either have coeliac disease or non coeliac gluten allergy. I can’t even have marmite without a reaction anymore so liable to thump someone who suggests it’s an “intolerance” 🤣

I try to avoid ultra processed food so most gf substitutes are out. Gf bread is usually powdery shite

id probably flavour couscous with home made stock or, current favourite, teriyaki sauce (which is probably a upf)

This has probably already been answered upthread but you can get GF marmite at Tesco (among others) it’s just ‘yeast spread’

GF/non confirmed but almost certainly coeliac here. Have a fully GF kitchen because I do 95% of the cooking and am very sensitive. The most annoying thing I find is eating out with others or trying to be polite when others insist on preparing food for you. Overall I’m pretty well adapted now after about 6 years.

I'm one of those coeliacs who can't tolerate oat's either. So be aware that it's wheat, rye, barley and oats that you should avoid. And also check anything with grains in eg spelt is a type of wheat,

Also the vegan protein seitan is 100% gluten

I just want to say thanks to everyone who has contributed to this thread. Just when you think you know everything, you find out that you don't- the PP who mentioned lentils prompted me to check our packet of (tesco's own) red lentils which it turns out are labelled as "may contain" gluten. Never occurred to me to check that, I'd just assumed pulses were fine!

It's a steep learning curve, that's for sure.

Seeing as Easter is on its way I thought I'd recommend KitKat Easter bunnies. They're just in the regular section so easy to miss.

I am not a coeliac but my husband is. If you end up in London ever, try Wicked fish in spitalfields market.They are 100% gluten free.

Do they have wafer in them? I've seen them mentioned on Facebook a couple of times but I wasn't sure if it is just chocolate

They taste like KitKats (as much as I can remember fifteen years on anyhow) so have some sort of wafer like substance in them, little bits throughout. Rice based looking at the ingredients

We're going for the first time this weekend, DD is beyond excited

don't want to take over Nottingham related eateries but Best of British chippy in long Eaton always has GF fish & chips, you just need to ask them to turn on the separate fryer

For those of you who like to cook try the loopy whisk.com for bread and rolls. I am nightshade and egg intolerant as well as coeliac so can’t use most GF flour options. She has her own flour mix which works well. Her bread, cakes and rolls are reliable and a thousand times better than shop offerings. Freeze well too. I’ve done several cakes and they’ve been amazing. Her basic sponge can be adapted for lemon drizzle, coffee and walnut etc.

For the nut free bar option for a packed lunch, if she tolerates gf oats, then a flapjack stuffed with dried fruit/chocolate chips/sunflower seeds might be an option, cheap too if you make a big tray bake.

Thanks. That loopywhisk site looks great. Excellent recipes and explanations. I really want to master bread using the psyllium husk. I don't want to have to add xanthum gum to everything. Have you bought psyllium husk? I'm looking at it online and not sure what a normal price is to pay.

I always think the the loopy whisk recipes sound great but have an overwhelming number of ingredients/complicated processes! Would be good to hear from people who have actually made them.

I’ve recently bought Laura Strange’s first book which sound great, but I haven’t made anything yet. She also uses psyllium husk, but was a bit overwhelmed by how many different sites sell it and wasn’t sure on the best one/a good price!

@HDready - I've always felt the same way about the loopywhisk recipes. I've saved a couple that I've seen on Instagram as they looked really straightforward until I read the ingredients list.

Just a word of warning. I am very sensitive so can’t have oats and some of the breads ie warbutons. I also can’t have phyllium husks. Just warning as it sounds like a lot of work to go through to potentially poison yourself, although I know I am more sensitive than most.

we had lunch at All Mine Cakes…. Today & it was delicious 😋
I had a smoked salmon open sandwich which was surprisingly filling, DH had a chip butty & DD had a sausage roll. She wasn’t keen unfortunately because the sausage was too big & meaty 🤦🏻‍♀️ I finished it off though 🤗
DD had churros for dessert & I had an Easter brookie, both of which were very nice. She wants to go back on her birthday so we’ll definitely go again!

It's my birthday this week and as a treat I have some pastries from Manna Dew coming. They're definitely special occasion priced so hope they live up to expectations. Has anyone tried them before?

You ever get glutened and don’t know how??? Been through everything I ate yesterday and nothing…yet last night I have all my usual gluten symptoms.

can only think it was a bit of cross contamination but bit of a mystery. My stony is so sore.
