Would anyone be up for a coeliac chat thread?

Umm...that's it, really! I was thinking a thread for people with coeliac or a coeliac sufferer in the household where we could share recipe ideas and any other questions might be helpful. I did briefly follow something like this on FB but found it a bit intense, as FB groups tend to be!

My DD (12) has coeliac, diagnosed last year. Still getting to grips with some food alternatives but we have quickly found specific favourites (all in different supermarkets, of course!)

So my first question is...any ideas to make GF couscous a bit more flavoursome?!?

Doves Farm GF flour makes fab cakes etc. I have a mild gluten intolerance, and have coeliac grinds, so use it for all my baking, and I've not noticed any difference.

I'm travelling for work at the moment, after nearly 3 years of working from home I'd forgotten what a pain it is to try and grab stuff to eat day to day.

Could you suggest shopping with them as soon as you get there and also cooking together so you can check everything and help them understand about cross contamination.

I had this in the summer, staying at in-laws for 3 nights. My BIL was very well intentioned but just kept saying he was on it, he knew what he was doing. Then we found him trying to marinade chicken in spices that had 'may contains' in tiny writing. They also served bread for everyone else with every dinner and I was paranoid about sitting too close to anyone with the breadcrumbs flying everywhere. It's a minefield. How do you get people to be suspicious of everything and check everything?. e.g. Who would suspect they have to check chickpeas for gluten?! I only trust people to cook for me if they show the right level of curiosity to want to learn and keep checking everything with me.

Has anyone been invited for a covid or flu vaccine this year? DD was last year (first winter since being diagnosed) but nothing this year. She gets a flu vaccine through school anyway but was wondering about covid...

@OllyBJolly we've only been for lunch at someone's house rather than to stay, but I usually insist on preparing DD's food and luckily they seem to prefer it that way. Maybe once you are with your hosts and explain all the faffing they'll need to do they'll be happy to let you take over...

@ChimChimeny I've just had my flu/covid jab, but I'm also T1 Diabetic so that could be the reason

I've often taken the Cook frozen ready meals , most can be cooked in microwave, if my hosts are unable/unwilling to properly consider cross contamination, or if they are having trouble sourcing or choosing a meal
