What do you do with it/have with it, how do you cook it?

I have some, some salad, wraps, hummus etc

Air fry. Spray a tiny bit of oil on if you like. I don't bother. Turn over half way through cooking.

In a sandwich, wrap, with a salad. Or with slices of pear or mango as a starter.

It's nice with sweet chilli or garlic sauce.

I buy those long peppers and put haloumi and pine nuts in them. Drizzle them with lemon juice and olive oil. Then roast them (I think it was Rick stein originally).
we have it with couscous and nice sides, artichokes etc

grilled with roasted veg and cous cous or made into kebabs and grilled with cherry toms, peppers, chunks of courgette, aubergine. mushroom or whatever else you fancy and can stick on a skewer.

I love it BBQ'd with a squeeze of lime or this easy watermelon salad:

-watermelon cut into small cubes
-green beans cut a similar size
-Halloumi grilled or cooked in a fry pan till a little brown, then chopped into cubes
-Toasted pine nuts

It’s nice in a salad with grilled peaches. We also sometimes have halloumi burgers with roasted red peppers and sweet chilli jam.

Sliced, Dry fry in a frying plan high heat. Delicious when eaten immediately. I eat with salad and tzatziki.

Please excuse my spelling/ punctuation, I’ve been up all night with sick child and I have a banging headache! In a pot pie with veggies like chicken (not in this weather)
in thick slices as a burger Bbq with mushrooms.
A delicious creamy casserole with rice or mash. Stroganoff.
Sliced into thick strips, coated in seasoned flour and then airfried in hot honey served in a wrap with spinach, cherry toms and sweet pepper.
Pan fried and served in a flatbread with tzatziki or (garlic mayo if I can’t be arsed) with spinach, little gem, cherry tomatoes and cucumber and some skin on fries like a weird random version of gyros 😂 (it’s odd but even the non veggies in our house eat it)
Cut in sticks, crumb coated and air fried with a dip of choice is also good.
Dd1 loves it cut in sticks and wrapped in This isn’t bacon rashers too.

I saw some cheffy type on a cooking programme once grating it, either Turkish/Greek or something like that and using it like that. Never seen it done and I want to try it.

You just fry it in a dry saucepan until golden brown. It’s go quite watery first but keep going. Takes around 10-15 min,

I soak it in water for a couple of hours in the fridge before cooking as kids like it not being too salty my ds likes it with raspberry jam.

I eat it quite often as I'm veggie but my favourite recipe is cubed and fried halloumi, onion, garlic, chickpeas, a red pepper, chili and when that's all cooked I add passata or chopped tomatoes, salt, pepper, chives. I eat it with bulgur usually. Sometimes I add smoked paprika too.

Red pepper, red onion, tomatoes and courgettes roasted in a little olive oil with lemon juice and herbs for 25 minutes then add sliced halloumi on top and roast for another 10-15 minutes. Delicious with flatbread and tzatziki.

Soak in milk or hot water before roasting with peppers, onion, sweet potato and white potatoes. Put coriander on it

Ah yes, I also do grated carrots, grated halloumi, grated onion, a raw egg, breadcrumbs, crispy chili oil, seasoning and then I make carrot patties with it. It's delicious.
