What do you do with it/have with it, how do you cook it?

I have some, some salad, wraps, hummus etc

Maybe not during a heatwave but this recipe is lovely. I cheat and use jarred chargrilled peppers.

Fried with olive oil and Greek seasoning, tossed on a flatbread with mixed salad and tzatziki and some fries.Yum!

At the moment I love it BBQd then dressed with home made chimichiurri , green goddess dressing or just a blitz of garlic, herbs from the garden and a bit of olive oil, black pepper and lemon. It's also good with chilli, ras el handout, anything really! We have it on salads, in wraps, pittas, with veggie cous cous, bulgar wheat anything where you'd alternatively have a meat or fish protein.
DS calls it squeaky cheese

Whatever you do, soak the slices or cubes in plain boiling water for 5 mins before draining and patting dry and cooking. It makes the texture utterly gorgeous.

That’s how Brewhouse and Kitchen do it, with seared halloumi it’s so good.

Makes the outside crispy when cooked and the inside stays soft (rather than going hard/rubbery).

I slice it and cook it in a pan with oil, rosemary and honey. Takes 2 minutes

All these recipes sound incredible - I love halloumi.
I like it in a salad with green lentils, griddled courgettes, broad beans, red onion, pomegranate seeds, mint and a red wine vinegar dressing, then coat the halloumi in harissa, pan fry and add at the last minute.
it’s also really good grated, pan fried in a dry non stick pan and used as a garnish / topping for salad.

I saw some cheffy type on a cooking programme once grating it, either Turkish/Greek or something like that and using it like that. Never seen it done and I want to try it.

I’m veggie and don’t really like egg so I sometimes have it on occasion as a breakfast bap. Grilled halloumi with grilled vine tomatoes in a breakfast bap, bit of olive oil when you grill it and season it too. Think it was our local farm shop who had this as their veggie option for breakfast and I’ve loved it ever since.

Grill it in a pan, bbq or airfry. Slice it first but not too thin, not too thick; I’d say about .5cm thickness. It’s delicious!

Air fry. Spray a tiny bit of oil on if you like. I don't bother. Turn over half way through cooking.

Serve with what tho

I fry it with some jarred peppers and basil and put on top of a cold rice salad with lots of herbs and some pine nuts.

I cut into cubes, then soak in hot water for half an hour, then dry it, whack it in the oven sprinkled with a bit of oil and curry powder, then serve it with biriani (sp?) style rice and a glob of mango chutney. The soaking makes it less salty and less chewy. Although we still call it squeaky cheese. The kids love it! But I'm sure lots of people would frown at my choice of meal! Also grilled with avocado, bacon, mushrooms, egg, sourdough, grilled tomatoes!

It depends on the age of the halloumi.My dad was greek cypriot and we had vats of halloumi sent over from Cyprus in the 60s .

Most of the halloumi you buy in the shops is softer but as it ages it gets harder and you can grate it more like a softer parmisan,

Grilled until golden then stuffed into a Greek style flatbread with garlic Mayo, rocket and smoked ham (or Lountza if you can get it anywhere).
