What’s for dinner AND is it from a packet/box?

Be honest!

These threads usually attract replies from busy mums saying ‘aubergine orzo with lemon chicken’ and I think ‘from scratch, at 5pm, with 2 hungry kids??’

Please let me know!

Tonight was chicken kebab on flatbread with salad and yoghurt and mint sauce, all made from scratch following a recipe I saw on Facebook. First time I’ve tried flatbreads made from flour and Greek yoghurt and they were a huge success.

Home made lentil & bacon soup from my freezer stash and a baguette which was already part baked, just had to finish it off in the air fryer for 10 minutes. Followed by a couple of pieces of shop bought cherry cake.
I just couldn't be arsed with all the prepping & cooking for a big meal and this was ideal for us tonight, not much washing up either which is always a bonus.

It’s The Quick Roasting Tin by Rukmini Lyer. All stuff you just chuck in one tin and put in the oven. I don’t get to do as many of the recipes as I’d like because I have fussy family. I think I could happily eat a recipe from it every day if it was just my tastes to cater for.

Marry me chicken went down a treat at darts. Loads of people went back for seconds, some of the others in the pub had some and a couple of people took leftovers home so there wasn’t actually any left at the pub at the end of the night which is rare.

Bit late now, but last night we had Air fried salmon with a hot honey glaze, with new potatoes, sugar snap peas and sweetcorn, followed by mixed berries with Greek yoghurt topped with seeds. All from scratch, takes about 20 mins from start to on the table, and is our goto meal when we want to keep our weight in check (anout 3 times a week). Tonight it's DS birthday, so it's the local Indian restaurant, so we will probably have our salmon meal again tomorrow.

It made me laugh because I never cook and it was a pretty close match to what the op said was a bit time consuming. I don't mind cooking but my husband loves it, so I don't have lots of quick easy ideas in my head because I cook so rarely. So it's the first time I've cooked in ages and the first time I've ever used or eaten orzo. It didn't take long and was really nice.

@ThreePointOneFourOneFiveNine thanks. I keep meaning to buy one of her roasting tin books but I can never decide which. I’ll have a look at this one again. I have a £50 Waterstones gift card burning a hole in my pocket so maybe I should use it for this.

kind of a chilli but not authentic. Beef, mushrooms, peppers, red onions, tinned tomatoes and a packet of chilli seasoning went in the slow cooker this morning and it will be ready to eat with the meat spoon tender by dinner time.

Roast chicken today.
It was meant to be cooked on Sunday but we ended up eating out.
Finish wfh at 4.30 so will put the chicken in then head out to collect DC from afterschool.
I'll be back in time to make roasties and frozen veg.

Butternut squash and chickpea curry. With added spinach. I think we’ll have it with rice.

I do tend to cook homemade most of the time - I enjoy it. Sometimes we use a packet or two, I don’t get too exercised by it.

Tuesday was cous cous with roast veg and halloumi
Wednesday was smoked salmon and pea risotto
Thursday was bolognese (have made extra and frozen)
Tonight DH cooking, garlic salmon rice and veg
Tomorrow eating out
Sunday probably chicken thighs of some sort… maybe a Moroccan tagine

I don’t tend to use packets but I definitely use shortcuts - curry paste, frozen chopped onions, etc. We do have the odd Charlie Bigham lasagne, as I refuse to make lasagne.
